It's Potato Lover Month!I LOVE LOVE a hot baked potato with just butter and sour cream. But then I came across this recipe and WOW, WOW, WOW! Talk about taking that plain ole' Baked Potato to new heights. This scrumptious Super Stuffed Potato is a MUST try! This is such an easy, simple meal on a cozy night.
Super Stuffed Potatoes
from Kraft Food & Family Magazine
4 small baking potatoes
1 lb ground beef & ground turkey
4 oz Velveeta Cheese, cut into cubes
1 small tomato, chopped
2 green onions
1/2 cup Sour Cream
Prick potatoes in several places with a fork (cook as desired, microwave or oven). Meanwhile brown meat in large skillet, drain. Add cheese, tomatoes and onions; cook until cheese is melted and mixture is well blended. Split potatoes open and top with meat mixtures and a dollop of sour cream. ENJOY!
