Ole' Favorites - Dinner Recipes from 2010

Still On Vacation


I know this is where my kids, nieces and nephews will be, atleast most of them! We are on a trip of a life-time right now. My parents are treating the entire family to this wonderful vacation and we couldn't be more blessed to have this time with one another. (and hey if we starting fighting, there are 5 pools, each family can go to their own quarters) There are 18 of us, my parents and then my brother, his wife and their 3 kids. My sister, her husband and their 3 kids and myself, with my hubby and our 4 kids! I hope and pray that this will be a vacation that we all talk about for years to come! (and of course when I return I will show you my own photos of our wonderful adventures at Turks and Caicos)
I am sharing with you my favorite Dinner Recipes from 2010. These are some of our all time fav's and I wanted to make sure that if you are a new reader and/or were just looking for some new ideas to break out of your norm, then you check out these fabulous ideas.

Poor Man's Garlic Bread

My kids LOVE LOVE their grandma's garlic bread which I have now named "Poor Man's Garlic Bread". And what's funny is that they actually prefer this Garlic Bread over any store bought, fresh or frozen bread. I've tried them ALL and they keep wanting the "hamburger/hot dog garlic bread". I give up. I guess this will be the only garlic bread I serve (when my kids are home). It's SO easy, it's SO cheap and they LOVE IT!


Poor Man's Garlic Bread

hot dog buns or hamburger buns (use what you have left-over, and any french bread works too)
1/2 cup butter (or your favorite garlic bread spread)
1 tsp garlic salt or garlic powder (or both)
1 tsp Italian Seasoning
sprinkle of paprika

We like to melt the butter in the microwave, add in the seasonings and then turn the bread upside down and dip it into the butter mixture. Turn your oven on broil (low) and broil for about 2-3 minutes (or til your liking).

Hot Dog Buns work WONDERFUL too!

THIS WEEK'S CRAVINGS #35 Linky Party (Picnic Recipes) and Deviled Eggs w/Cauliflower

This recipe is takin' from one of my favorite cookbooks Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food. It has totally worked for my kids, especially my son, who doesn't like much of anything. I have been able to sneak pureed sweet potatoes in his Kraft Macaroni & Cheese, pureed cauliflower in his noodles & butter, cauliflower mashed potatoes and even his scrambled eggs (and he has no idea)!!! I now have many secrets from this cookbook that I use in everyday cooking, that I know will stay with me forever.

This Deviled Egg recipe is a perfect way to make this great snack for a Summer Picnic!
I know my girls LOVE it and it's a little bit healthier!

Deviled Eggs w/ Cauliflower

6 large eggs, boiled
3 tbsp mayonnaise
1/2 tsp mustard (we added)
1/4 cup cauliflower (or carrot puree)
1/8 tsp salt
dash of pepper and paprika for presentation

After eggs are boiled and cooled. Cut eggs in half lengthwise and remove the yolks. Put three of the yolks in a bowl and discard the rest (or save for another meal). Add the mayonnaise, mustard, vegetable puree (cauliflower), and salt. Mash together with a fork. Fill each egg half with the yolk mixture and sprinkle with pepper and paprika.

Hamburger Crescent Rolls

Crescent Rolls are good anytime, anyday and you can make almost anything with them! I have shared a few GREAT recipes that my kids LOVE with crescent rolls here on my blog in the past and I would LOVE to recap them for you now, PLUS we have a new Hamburger Crescent Roll recipe for you today!!





Now onto our newest creation with Crescent Rolls
Hamburger Crescents

Hamburger Crescent Rolls

1/4 cup of mayonnaise
1/4 cup ketchup
2 tbsp Relish
1/2 to 1 cup of graded cheese
1 to 2 lbs ground hamburger/turkey meat (already cooked)
1 to 2 pkg Pillsbury Crescent Rolls
Sprinkle of Paprika and/or Grandma's Salt

Hamburger meat needs to be pre-cooked. Then mix all the ingredients together. Put a spoonful of the mixture into each roll and roll them up. Sprinkle with a little paprika (and/or a bit of Grandma's Salt), bake at 350 for approx 12-16 minutes.

LOVE a Linky Party!!!

Just a little note to talk about my love and I am sure YOUR LOVE too.... it's called a Linky Party!

Yes, as a new blogger (still less then a year old) the first and foremost thing I got involved with is Linky Parties! And I am still loving them today!!! They have helped me meet other bloggers very quickly, helped me form all kinds of casual friendships around the globe and shown me SO many more recipes and bloggers that otherwise I may have never found.

Chicken Baked Potato

What a delicious way to be on a diet. A perfectly delicious baked potato (sorry added a little too much sour cream; which is not on the diet menu); but didn't want my potato dry. (bad habits are hard to give up)

Chicken Baked Potato
from Tina Hudgens (via ideas from the Jillian Michaels Self Diet Article)

1 medium russet potato
4 oz chopped chicken breast
1 cup spinach
1 tomato, chopped
2 slices, red onion
fresh pepper
scoop of sour cream (if you wish to be bad)

Bake 1 medium russet potato at 450 until tender, 45 to 60 minutes; cut in half. Cook 4 oz chopped boneless skinless chicken breast in a pan coasted with cooking spray for 10 minutes. Add in 1 cup spinach, 1 whole tomato, chopped and a few slices of red onion. Cook until vegetables are tender. Top the potato with chicken mixture and fresh pepper.

THIS WEEK'S CRAVINGS Linky Party #34 (30 Minute Meals) and Hot Sub Sandwiches

THIS WEEK'S CRAVINGS Linky Party #34

(What quick recipe can you share for an under 30 minute meal?)

We are so excited to be into Summer Time now (12 days to be exact). We've already gone to Universal Studios, attended a few graduation parties, went shopping for bathing suits and summer clothes (for our uncoming vacation), went to Disneyland and hosted a few pool parties in our back yard. The most recent was this past weekend and this is what we served. These new found delicious, so quick and so easy Hot Sub Sandwiches, which can be made in under 30 minutes.

I featured these just a few weeks ago as my favorite pick on my first THIS WEEK'S CRAVINGS TOP PICKS. I found them through one of the link-ups. I am SO happy people like Modern Wivelyhood stop by and link up recipes each and every week, because it's a great chance for all of us to find new recipes. I know this recipe is a new family favorite, I am happy to confess we've made these 4 times already.


Hot Sub Sandwiches
original recipe from Modern Wivelyhood, adapted by Tina Hudgens

1 pkg French Rolls (use the half size)
1/2 cup mayonnaise (use for spreading)
1 pkg (or 1 lb each of deli meat) Turkey, Ham, Roast Beef (or all three)
1/2 lb favorite cheese (I've used cheddar, mozzarella & swiss)

Preheat oven to 350, this makes approximately 2 (9x13 pans). Cut french rolls in half and spread a thin layer of mayonnaise on each side, load it with meat and cheeses of your choice. The ingredient list is just an estimate, you can load it up as much as you'd like. We like 3 slices of meat and 2 slices of cheese.

Hot Sub SPECIAL SAUCE
1 stick salted butter melted
1-1/2 tbsp poppy seed salad dressing
1 tsp honey mustard
1 tbsp minced onion
1 tsp Worcestershire Sauce

Mix together and pour over sandwiches. Let sauce sit on top of sandwhiches a few minutes to set in. Cover 9x13 pan with foil and put in the oven for 15-17 minutes. They come out perfect ever single time!

National Fudge Day... Grandma's Hundred Dollar Fudge

According to SOMEONE... it's National Fudge Day!

I just LOVE LOVE all the different food days... it let's you stop for a minute a think and reminisce about a special food every day of the year, the memories just coming following back! I keep the American Food & Drink Days posted at my desk and love to just glance over and read what we are celebrating today! And well, today is FUDGE!

I really don't make fudge that often and there are only two fudge recipes I ever do make. One is for White Chocolate Cheesecake Fudge (just thinking about it, I go to my happy place, plus an extra 10 lbs comes on just thinking about it), and the other fudge is my mother-in-law's famous Hundred Dollar Fudge recipe. I've already shared it here already, so just click on over, make a batch or two yourself and you'll know why all the brothers, sisters, grandkids and great-grandkids patiently wait for their box of fudge to arrive each and ever Christmas! (this is why last Christmas I learned to make it myself and the results were perfect) We hope you give it a try and love it just as much as we do. (and don't wait til Christmas to make it)

Steak and Spaghetti Squash

We are trying to continue the Jillian Michaels diet this week. It's it bathingsuit season and I am SO not ready. Our family vacation is now just 1-1/2 weeks away. We can't wait, relaxing by the pool all day long..... sounds like Heaven to me!!! (and just a little secret, when I am on vacation at the all inclusive Beaches Resort, I am gonna eat whatever I want.....yahoooooo!!!)

We do however just LOVE LOVE this Jillian Michaels cookbook and will be sharing a lot more recipes from here. And since we are going to try and eat more healthy this summer, I am sure there will be plenty of recipes to talk about.



Steak and Spaghetti Squash
from Jillian Michaels Self Magazine

1 spaghetti squash
1/2 cup red onion, chopped
1 tsp olive oil
1 chopped garlic clove
2 cups tomato, chopped
2 tbsp basil, chopped
3 oz flank steak

Cut 1 spaghetti squash in half; discard the seeds and pulp. Place on a baking sheet rind side up; bake at 375 for 45 minutes. Run a fork down the squash from top to bottom to seperate strands. Saute 1/2 cup chopped red onion in 1 tsp olive oil with 1 chopped garlic clove until soft, 5 minutes. Add 2 cups chopped tomato; cook until a sauce thickens. Pour sauce over 3 cups spaghetti squash; top with 2 tbsp chopped basil. Seve with 3 oz flank steak, broiled for 7 minutes, turn once.

THIS WEEK'S CRAVINGS #33 Linky Party (DAD'S Favorite Meal) and Flourless Peanut Butter Cookies

My husband's favorite meal? Well, I know what it is and I've tried to duplicate it with NO success at all, so I gave up trying a few years ago. His all time favorite meal is: Fried Chicken. Not any Fried Chicken, it can only be Kentucky Fried Chicken or his mama's Fried Chicken. (someday I hope to duplicate his mama's Fried Chicken, but so far no way)

So, today I decided because it was National Peanut Butter Cookie Day yesterday, that I would make a batch of Flourless Peanut Butter Cookies! And these were a HUGE success! YEAH ME!!!

Flourless Peanut Butter Cookies (Gluten-Free)
from unknown Gluten-Free Cookbook

1 cup packed light brown sugar
1 cup smooth peanut butter (we used chunky)
1 egg, lightly beaten
1/2 cup semisweet chocolate chips (we used mini)

Preheat oven to 350. Beat brown sugar, peanut butter and egg in medium bowl with electric mixer until blended and smooth. (unless you are using chunky peanut butter, then just blend until blended, there will still be chunks in it) Add in mini chocolate chips and stir.

Shape dough into round balls; place 2 inches apart on ungreased cookie sheets. Flatten slightly with fork. Bake 10 to 12 minutes or until set. Transfer to wire rack; cool completely.

Steak Stir-Fry from Jillian Michales Diet

Just 3 weeks until we leave on our Ultimate Family Vacation...to a Beaches Resort! What does this have to do with food? EVERYTHING!!! Since I will be walking around 24/7 in a bathing suit it's time to drop 10-15 lbs. I sure hope I can do it in just a few short weeks! I found a great Jillian Michaels diet in Self magazine, so I thought this would be a great time to give it a try. Week 1 is done and my girls and I all lost 2 lbs each (just like they said we would). This week I am going to up my exercise level and hope for another 2 lbs.

I also purchased her cookbook The Master Your Metabolism Cookbookthis week and it's full of more menu ideas and even another weekly menu plan, like the one I originally found in Self. This was great news that we wouldn't have to be eating the same things over and over again. Here is one of the first dinners we prepared, takes a little getting use to eating all those vegetables, instead of a nice thick serving of mashed potatoes. But, it's only for 4 weeks, I think I can handle it.



Steak Stir-Fry
from Jillian Michaels Self Magazine Diet (January 2011)

4 oz flank steak
olive oil; for cooking
2 cups red cabbage, chopped
1/2 cup carrots, chopped
1 tbsp sesame seeds
1 tbsp low-sodium soy sauce
1 tsp sesame oil

Cook 4 oz flank steak strips in 1 tsp olive oil for 3 to 4 minutes; transfer to a plate. Saute 2 cups chopped red cabbage and 1/2 cup chopped carrots in 1 tsp olive oil until tender, about 10 minutes. Add vegetables to plate with steak; top with 1 tbsp sesame seeds, 1 tbsp low-sodium soy sauce, 1 tsp sesame oil. Serve with 1 orange. (only 400 calories; and this is considered a dinner entree)
