Almond Sugar Cookies

1 cup butter, softened
3/4 cup sugar
1 teaspoon almond extract

In a large bowl, cream butter and sugar until light and fluffy. Beat in almond extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Roll into 1-in. balls (or roll out and cut with a sugar cookie cutter with scallop edge).

Bake at 400° for 7-9 minutes or until edges are lightly browned. Cool for 1 minute before removing to wire racks.

Sugar Cookie Icing

4 cups confectioners' sugar (powdered sugar)
1/2 cup butter shortening
5 tbsp milk
1 tsp vanilla

Beat all together until fluffy. Add food coloring if desired. To decorate add ontop a little edible grass and jelly beans.

  1. those cookies look delicious and pretty too. We are just not good bakers. Our bake goods don't normally come out the way we hope. :-)

  2. Almond cookies are one of my family's favorites!
I'll have to try with the icing next time - thank you!

Thank you for hosting this party, and wishing you a wonderful evening

  3. Happy Monday Tina!
Your cookies are beautiful! Sugar cookies are one recipe that I haven't converted to gluten free yet. Hopefully I will get them made this next holiday season. I have too many muffin recipe ideas to play with now before it gets too hot to bake here in AZ.
Today I shared my new recipe for Coffee Muffins. I split the recipe and made half with chocolate chips and the other half with raisins. It's great both ways!
Thanks for hosting! Have a Happy Easter!

  4. I tried replying to your email about my Crazy Cooking Challenge post being up but it got bounced back again.

  5. Thanks for hosting! I linked up my Super Simple Easter Centerpiece. Have a Happy Easter.
