Fat & Fluffy Snickerdoodles

My son wanted to make cookies, all by himself (he is only 12 years old). He got out my little cute 500 Cookies cookbook and picked Snickerdoodles. One of his favorites. Well, to his surprised, the first batched burnt and the second batch came out flat. I would say "flat as pancakes", but pancakes were thicker then these cookies, they were more like as flat as crepes. Seriously the flattest things I have ever seen.  A few days later I came across How Sweet It Is and found her Fat Fluffy Snickerdoddles. WA-LAH Perfect, these were sure to be the right cookies for his craving. I came home that night and made them for him, he did NOT want to try again on his own.

Fat & Fluffy Snickerdoodles

1/2 cup butter, at room temperature
1 cup sugar
1 egg
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1/4 tsp salt
1/2 tsp baking powder
1 1/2 tsp cinnamon
2 tbsp milk
1/4 cup sugar + 1 tbsp cinnamon for dipping

Preheat oven to 375. Cream butter and sugar with an electric mixer until smooth. Add egg and vanilla, mixing well until combine, about 2 minutes. Stir in flour, baking powder, salt, and 1 1/2 teaspoons cinnamon. Mix until dough comes together. Add in milk. If dough is still crumbly, add milk 1 tablespoon at a time until it comes together. Refrigerate for 30 minutes.
 
In a bowl combine remaining sugar and cinnamon. Remove dough from fridge and roll into big 1 1/2 inch balls. Dip in cinnamon sugar mixture and place on baking sheet. Lightly press down on dough to flatten it. Bake at 375 for 10-12 minutes.

THIS WEEK'S CRAVINGS #44 (BBQ/GRILL ITEMS) and Honey-Glazed BBQ Chicken

Honey-Glazed BBQ Chicken
originally from Pillsbury, adapted by me

1/4 cup Honey
2 tbsp soy sauce
1 tbsp garlic, minced or 1/4 tsp garlic powder
4 boneless chicken breast or 8 boneless chicken thighs
2 tbsp olive oil
1/4 tsp salt
1/4 tsp coarse ground black pepper

In small bowl combine honey, soy sauce and garlic, blend well with a wire whisk. Set aside. In a large Ziploc add chicken, oil and a sprinkle salt and pepper; coat all sides of the chicken. Then add in half of the honey mixture and let chicken soak, overnight or freeze until ready to cook. (I always prepare my marinades and freeze my meat so it's ready to go when I defrost it).

Then when it's time to cook, heat up the grill and your ready to go. Place chicken on grill on medium heat, cook covered, until done. Brunch with the remaining honey mixture during the last 2 minutes of cooking time.

Mozzarella Pasta

Cutting out magazine clippings is an understatement around my house and well my kids just follow along. So, now when my daughter reads Seventeen Magazine and sees a recipe, she cuts it out and it magically appears on my kitchen counter. I think this means I am suppose to make it. Well, that's how this recipe appeared. A healthy kind of pasta dish for teenagers? I guess? I had all the stuff in house and this is what landed itself on our table for dinner.


Mozzarella Pasta
found in Seventeen Magazine, adapted to our taste

1-2/3 cups uncooked pasta (bowtie or penne)
3 tbsp olive oil
1 pint grape tomatoes, halved
1tsp minced garlic
1/2 cup skim mozzarella, cubed
1-1/2 cups bagged baby spinach
1/2 tsp pepper
1/2 tsp crushed red pepper

Cook pasta according to package instructions. Ladel out 1/2 cup of the boiled water and set aside, then strain pasta. In a medium skillet, warm the oil. Add tomatoes and garlic, and saute over medium heat soft (about 15 minutes). Add the cheese, spinach, and pasta water. Remove from heat. Toss with the pasta, then cover with a lid until the cheese melts.

Raspberry & Nutella Pizza: Secret Recipe Club

This month is my second month in the Secret Recipe Club and my second post for today! As stated in my first post today Cucumber Salad, I am now a Co-Host for SRC Group B and this morning someone was left-out, abandon and forgotten by the original blogger who was given her blog. And well, we don't want anyone left-out. I needed to eat some lunch and decided that I could make a quick lunch from a breakfast recipe on her blog, it turned out to be more like a dessert, but it was delicious either way! And well, today this WAS my lunch! (cleaning out my son's room for the end of summer cleaning... busy, busy!) The blogger that was left-out was My Emu is Emo.

Secret Recipe Club

If you've never heard of Secret Recipe Club then you are in for a treat. It works like this, all of us below that you see linked up were assigned a blog at the beginning of the month, we read, get to know and then bake/cook from that blog (but, it's a SECRET), we know someone is looking at our blog, but we don't know who until reveal day, TODAY! If you'd like more information on joining the SRC, then hop on over to our Secret Recipe Club Blog and check it out! And this recipe is from a blog I adopted TODAY, made the recipe TODAY and blogged about it TODAY. So, I didn't get to know this blogger as well as some of the others, but I can't wait to look over her blog in the next few days.

I am making her Nutella Pizza, but I also want to try her Cheddar Raspberry Biscuit Loaf, and since I went Raspberry picking this past weekend I will be trying that recipe very soon. I did not have time to make the fresh pizza dough for the Nutella Pizza, so I used a store bought pizza dough.


Raspberry & Nutella Pizza
adapted from My Emu is Emo

Pizza Dough, homemade or store bought
Nutella
Cinnamon & Sugar
Sprinkle of your Favorite Nuts (I used pecans)
Coconut (on original recipe, but I left out, cuz I don't like coconut)

Bake pizza dough as directed. Sprinkle on a mixture of cinnamon and sugar before adding a thin layer of Nutella. Sprinkle with nuts, coconut (if you wish) and then top it off with fresh raspberries! (and well since mine turned into a dessert instead of lunch I added some white chocolate to finish it off) It's Beautiful and It was Delicious!!!

My Secret Recipe Blog this month is: Lady Behind The Curtain
This blog is just not about cooking/baking, it's also about parties! And I LOVE hosting a party! I found a few recipes I'd love to make, but since my house is "dieting" this week, I decided to pick a light recipe and her Cucumber Salad was just perfect. I didn't want to eat the cucumbers alone, so I made a nice Garden Salad, that was just right! I think I will be enjoying another one of these today for lunch. (I love left-overs!)


Cucumber Garden Salad
found and adapted from Lady Behind the Curtain

4 cucumbers
2 tsp salt
1/2 cup apple cider vinegar
1/4 cup Splenda (I used real sugar)
2 tbsp chopped fresh dill (I used 1/2 tbsp dried dill)
1/4 tsp pepper

Cut cucumbers into thin slices. Toss with 2 teaspoons of salt. Marinate at room temperature for 1 hour. Drain liquid from cucumbers and add remaining ingredients. Stir, cover and refrigerate 3 hours before serving.

To make a Garden Salad: I added lettuce, tomato, avocado and my favorite dressing: Poppyseed.

Peaches on the Grill

Peaches, Sliced in Wedges
Cinnamon or Nutmeg
Skewers

Peaches get a deep, caramel-like flavor when cooked on the grill. Just ripe-fruit works best, sprinkle with a little cinnamon or nutmeg. Place fruit on a skewer, then place on the BBQ for a minute to sear, turn over and finish cooking on the back side.

Margarita Dip
from Kraft Foods Magazine

1 pkg (8oz) Cream Cheese, softened
1/4 cup frozen limeade concentrate, thawed
2 tbsp orange juice
1/2 cup Cool Whip, thawed

Beat cream cheese, limeade and orange juice in medium bowl with electric mixer until well blended. Gently stir whipped topping, cover. Refrigerate for at least 1 hour. Serve with Grilled Fruit, other fruits or Nilla Wafers.

White Chocolate Mousse & Strawberry Shortcake Skewers

I am going berry picking today and I am so excited. My last year's raspberries and blackberries lasted me almost a year (in the freezer, of course). But fresh frozen berries are still so much better then store-bought frozen berries. Check out my post from last year, including many photos of berry and apple picking! This year I am going twice. Once today with a great friend because we want some berries, and then I will be going camping in October and doing lots of apple picking with family and friends, but by then the berries will be all gone. Does anyone know can you freeze apples? I've never tried it and I'd love to hear your thoughts.

Here are TWO great recipes.... the Strawberry Shortcake Skewers are so simple and so fabulous. Great to have at any party or get together. And this White Chocolate Mousse from Your Homebased Mom is unbelievable. Yes, my girls and I sat down and ate the whole bowl (at least we paired it with some healthy fruit and we didn't eat it all in one sitting, but we probably could have). I can't wait to try this mousse with crepes.


Strawberry Shortcake Skewers
Frozen Pound cake, cut into squares
Favorite Fruit, Strawberries and Blueberries work great

Cut pound cake into squares and slide onto a skewer with your favorite fruit. It's simple, it's easy and everyone loves it.

White Chocolate Mousse
from Your Homebased Mom, found originally on Evil Shenanigans

1 cup milk (whole milk would be the best)
1/3 cup sugar
2 tbsp cornstarch
1 egg yolk
1 tsp vanilla
1 tbsp butter
3 oz. white chocolate, finely chopped
1/2 tsp gelatin
1 tbsp cold water
1 cup whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla

Combine milk, cornstarch, sugar and egg yolk into a medium sauce pan.  Whisk together well.  Over medium heat, cook until it thickens and comes to a simmer.  Whisk constantly.  It will take about 10 minutes.

Then remove from heat and add in vanilla, butter and white chocolate.  Mix until everything is melted (make sure white chocolate melts completely.  Pour into a bowl and cover with plastic wrap and chill for four hours or overnight.

In a small cup or bowl combine the gelatin with the water.  Let it stand for about 10 minutes.  Then pop into the microwave for about 10 seconds to melt the gelatin.  Cool to room temperature.

Then combine cream, powdered sugar and vanilla.  Whip until thick.  Add in gelatin and mix until medium peaks are formed.  Fold the whipped cream into the white chocolate mixture in 3 parts.  Cover and chill for at least an hour or overnight.

Cream Cheese-Spinach Salad

A quick, easy and very refreshing salad for those hot summer days! I had forgotten about this salad until last week when I was reading my Volume 2 cookbook trying to figure out what recipes I had NOT posted here on my blog yet. And this was one of them, I went straight home for lunch whipped up this salad in a few minutes, and at the first bite I remembered how scrumptious it was.


Cream Cheese-Spinach Salad
from Tina Hudgens

Spinach Lettuce
Pecan Pieces, crushed
cut up chunks of Cream Cheese
Fresh Turkey Bacon Pieces (or whatever kind of meat, used shredded chicken this time)
Tomato

Mix together with your favorite dressing. I use Ranch and Vinaigrette mixed, I LOVE IT! But today I used Raspberry Vinaigrette and Poppyseed. (I never use just one dressing, I don't know why)!

Bean Roll Up: Secret Recipe Club

Yesterday, I was asked to adopted this blogger: Conner's Cooking who was left out on Monday from the Secret Recipe Club: Group A. I really didn't have any big dinner plans, so I clicked on to her blog to see what I could find. I actually found three recipes right away that I really wanted to try. I knew I had some leftover beans in the refrigerator (I usually save and then end up throwing away because nobody eats them left-over), so I decided that the Bean Roll Up recipe was just perfect.

The Secret Recipe Club is an awesome group of bloggers and I was happy to help out so that no blogger is left-out. And I understand from Amanda at Secret Recipe Club, there were a few other volunteers that wanted to help out, so below is the linky from all of us who decided to hop on over to Conner's Cooking and make a few things tonight! Refried Bean Roll Ups
Found over at Conner's Cooking, which she found originally at Betty Crocker 

1 can (16 ounces) refried beans (when used a bean & cheese dip that was left-over)
1/2 cup salsa
1/2 teaspoon chili powder
1 package flour tortillas for burritos
1 cup shredded lettuce
1/2 cup shredded monterey jack cheese (we eliminated the cheese, because there was already melted cheese in our left-over beans)
avocado & tomato (diced for those who wanted to add them in)

Mix beans, salsa and chili powder in 1 quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm. Spoon about 1/4 cup of the bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Fold over sides and ends of tortillas. Serve with additional salsa if desired.

One of my 17-year old twins is still having a ton of problems with her stomach! We have another series of doctor appointments coming up, as they ruled out Celiac but they still do not know what's wrong with her. All we do know is that when she eats Gluten-Free and mostly Dairy-Free, it almost fixes itself, weird, I know. I have been sharing recipes on here every so often that are Gluten-Free and Dairy-Free, check them out if you are in need of things like this.

I came across this amazing cookbook, that I just LOVE LOVE; Cooking for Isaiah by Silvana Nardone. It is fun delicious ideas with all Gluten-Free and Dairy-Free meals. The author is Editor in Chief of Everyday with Rachel Ray and Isaiah is her son. She also has a great blog; Silvanas Kitchen. If you are looking for GLUTEN-FREE and/or DAIRY-FREE, I encourage you to check her out. All of her stuff looks amazing!

Sweet Potatoes are a new food for my family, as I never ever liked them growing up (sorry mom, but out of the can just doesn't cut it), they are so gross. Then I discovered fresh sweet potatoes, absolutely scrumptious. And my girls love them too! Now, we just look for different ways to prepare them. We already know we do NOT like them mashed, I don't know why, we just don't. Here are a few of our favorite Sweet Potato recipes.... Magic Sweet Potato Muffins, Sweet Potatoes & Apples, and now we have a new favorite Pineapple Sweet Potatoes.


Pineapple Sweet Potato Bake
(Gluten-Free & Dairy-Free)
adapted from Cooking for Isaiah Cookbook (many changes were made)

4 to 6 Sweet Potatoes, peeled and sliced
1/2 cup light brown sugar
2 tbsp olive oil
1 tsp salt
1 (20 oz can) crushed pineapple, drained
1 bag marshmallows

Preheat the oven to 350, Grease a 9x13 baking pan. Cut sweet potatoes in 1" slices and lay on the bottom of the pan. Mix together brown sugar, olive oil and salt. Spread the pineapples over top the sweet potatoes. Bake stirring once, until sweet potatoes are fully cooked, about 45 minutes. Top the sweet potatoes with as many or as few marshmallows as you wish, press lightly and then bake until toasted, about 5 minutes.

(Any left over sweet potatoes are great to blend up and use to make our delicious Magic Sweet Potato Muffins or the Banana Sweet Potato Muffins)
