Caramel Nilla Wafers {THIS WEEK'S CRAVINGS Linky Party #105}


It's our weekly LINKY PARTY {THIS WEEK'S CRAVINGS}, where we'd love to see what you've been cooking this week. YOU are invited to come link up your favorite recipes. We've opened up our linky party to anyone who wants to link up. NO RULES, NO REQUIREMENTS, JUST LINK! I am sharing with you today a very cool little candy treat, Caramel Nilla Wafers. I actually made this treat last year for the first time and never got the chance to share it with you. But, it's here now and just in time for you to make for Halloween or pin this recipe for Thanksgiving. It's perfect for BOTH!

My son is 13 years old now, my twins are away at college and I am afraid this mommy may just be seeing the last trick-or-treater in my house this year. He is still on the fence if he will trick-or-treat or not, so the jury is still out.  Here is one of my favorite pictures of my twins, their BFF's and my adopted kids (the triplets) and the LITTLE BOY from a few years back, my girls were always troopers and dressed up every year from when they were born until Senior Year of High School, my son not so much.

Caramel Nilla Wafers
recipe found in Kraft Foods Magazine (Holiday 2011)

18 Nilla Wafers
8 (or more) Kraft caramels (or other melted caramel that will harden)
melting chocolate (white or milk)
almonds, pecans or Hershey Kisses

Place nilla wafers, bottom-side up on a baking sheet. Microwave caramels until melted (about 1 minute, stirring every 30 seconds). Let caramel stand about 1 minute, then spoon about 1 tsp of melted caramel onto each wafer; top with pecan, almond or Kisses. Melt about 1/4 cup of white chocolate (or milk) and drizzle over wafers.

It's that time again, time for me to jet off from California to my second home in St. Charles, Missouri to see my twins'zz at college. Holding up to my promise of visiting them once a month (not sure who is more excited me or my mother)? G'ma is going with me this time and it's been almost 3 months since she has seen them. The girls just roll their eyes about me visitng once a month, but I promised myself I was never gonna sit around and WISH I was there or CRY myself to sleep at night because I missed them so much, I would just hop on a plane and go. And I am, and I LOVE it! I am both happy and very lucky that I have the opportunity to do this. It's alot of hard work to make this happen, but it's important to me and I will do it for as long as possible. SO, here's to trip #2 for this Freshman School year for my girls.

Peanut Butter Cupcakes {THIS WEEK'S CRAVINGS LINKY PARTY #102}

This is a SIMPLE and easy Peanut Butter Cupcake, that doesn't even require a recipe (well almost). I love making cupcakes, they aren't fancy and I am still working on my frosting skills, but I do love making them, store bought cupcakes are non-existent in my home, NEVER EVER EVER will I buy those again (that hasn't always been the case), but since my blog began in 2010, I've haven't bought another store cupcake, and I hope to keep it that way. 


Peanut Butter Cupcakes
no recipe needed



Make a batch of your favoite homemade or from a box chocolate cupcakes.
Add in about 3/4 of a bag of Peanut Butter M&M's before baking.

Bake as directed and then frost and added 3 colorful M&M's to the top for decoration. Our favorite buttercream frosting works great with these cupcakes.

Buttercream Frosting
from Your Homebased Mom

3 sticks butter, softened
2 lbs. powdered sugar (approx. 7 cups)
1 tsp pure vanilla extract
whipping cream or 1/2 and 1/2 – enough to thin frosting to desired consistency

Beat butter in mixer on medium high for 2-3 minutes or until pale and creamy. Reduce speed to medium and add sugar, 1/2 cup at a time. Beat well after each addition increasing speed to high after all sugar is added. Add vanilla and food coloring if desired. Beat until buttercream is smooth. Can be refrigerated for several days if covered. If refrigerating, bring to room temperature before using and beat on low until smooth.

White Chocolate Snickerdoodle Cookies {THIS WEEK'S CRAVINGS LINKY PARTY #101}

Cookies are hardly ever store bought around here (maybe with the exception of Oreo's for the little boy). I am always finding new cookie recipes to make (I freeze whatever is not eaten the first day) and therefore we have fresh homemade cookies almost year-round. This was another one of those recipes, found online and couldn't resist.


White Chocolate Snickerdoodle Cookies

1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking soda
1-1/4 cups flour
1/2 cup white chocolate chips
Plus: 1 tbsp cinnamon & 1/4 c white sugar, mixed in a small bowl for dipping/rolling the dough (to retain a true “sugar cookie” rather than snickerdoodle, omit the cinnamon and just roll in sugar)
Preheat oven to 350. Cream together in a mixer the softened butter and sugars until very smooth and fluffy. Add the egg and vanilla extract and beat until well combined. Stir in the cinnamon, baking soda, and flour and mix until just combined. Do not overmix.
Stir in the white chocolate chips and place the whole mixing bowl into the freezer for about 10 minutes so that it chills a bit. You can also chill the dough for an hour or longer in the refrigerator.
While the dough is chilling, prepare the cinnamon sugar mixture for rolling.
After approximately 10 minutes, remove the chilled dough from the freezer and form 1 inch balls. I use a cookie scoop and it's awesome for any kind of cookie dough. Roll the balls through the cinnamon sugar mixture and place on prepared cookie sheet (sprayed with cooking spray).

Bake for 8 to 10 minutes or until just barely set. Allow the cookies to cool, well, on the cookie sheets before attempting to remove them.

Caramel Apple Dip - IMPROVED {THIS WEEK'S CRAVINGS LINKY PARTY #100}

I have always loved my apple dip that originally came from a Pampered Chef cookbook long long ago, but lately my friend has been making this great apple dip and so I thought I'd give it a try. It's actually almost exactly like mine, see original recipe here, but even better.



Caramel Apple Dip

8 oz package cream cheese
3/4 cup packed brown sugar
1 tsp vanilla extract
1 cup chopped pecans (or use your favorite kind of nuts)
Caramel Ice Cream Topping
Heath Bar Crunch Topping (found in the baking isle)
Apple Slices (soak in Pineapple Juice)

In a small mixing bowl combine cream cheese, sugar, and vanilla beat until smooth. Add in pecans and beat until combined. Transfer to a serving bowl and then cover the top with Heath Crunch Bar and drizzle with lots of caramel on top.

Core and cut apples slices into wedges and then soak in pineapple juice. You can remove apples and serve on a platter with the dip and the apples will not go brown.
Perfect dip for my fresh picked apples from Oak Glen, it's apple picking season and I LOVE IT!

Peanut Butter Pretzel Bars {THIS WEEK'S CRAVINGS LINKY PARTY #99}

Here is a new dessert that is high on my step-sons list of new desserts he likes. This was another treat I took to Vegas with us. Yes, he is one lucky guy that his step-mama loves him so much.

Peanut Butter Pretzel Bars
adapted by me, recipe found at Very Best Baking

2 cups chunky peanut butter, divided
3/4 cup butter, softened
2 cups powdered sugar, divided
4 cups pretzels (broken and roughly chopped), divided
2 cups chocolate chip cookies

Prepare a 9x13 baking dish with foil leaving an overhang on two sides. Lightly spray foil with nonstick cooking spray.

Beat 1-1/4 cups of peanut butter and butter in large mixer bowl until creamy. Gradually beat in 1 cup powdered sugar, until mixed. Stir in remaining 1 cup powdered sugar, 3 cups pretzel pieces and 1/2 cups chocolate chips. Press evenly into prepared baking pan. Smooth the top with spatula.

Microwave the remaining 1-1/2 cups morsels and 3/4 cups peanut butter in a medium microwave-safe bowl for 40 seconds, stir and repeat until melted, but do not burn. Spread chocolate layer evenly over powdered sugar mixture. Sprinkle with the remaining pretzel pieces, pressing down lightly. Refrigerate for at least 3 hours or until firm. Lift from pan; peel off foil. Cut into pieces. Store in covered container in refrigerator or freeze until ready to eat.

Beef Stroganoff {THIS WEEK'S CRAVINGS Linky Party #97}

I have been trying to duplicate an ole' recipe from my father-in-law for Beef  Stroganoff, so far I haven't been able to duplicate it, but I am having fun trying. (It just means we get to try lots of stroganoff's trying to duplicate his awesome recipe.) He passed many years ago and I've asked around so many times and no one knows how to make it, I only wish I would have written it down. This is a reminder to all you out there, blogging, recipe cards or whatever, WRITE DOWN FAMILY RECIPES. Okay, that's all. I will move on now.


Pictures are not too great on this recipe (I apologize). But this super quick and easy crock-pot recipe is a great meal. It's very easy to make and it's almost a match to the taste I am trying to duplicate. I would totally recommend making this, and now that fall is coming up, moms are busy, after-school sports and so many things happening I know using my crock-pot is an amazing life-saver for us.



Another quick and easy meal just in time for Back to School dinner blues and fall is just around the corner perfect time to be planning some crock-pot meals.

Beef Stroganoff {crock-pot}
adapted from a recipe found at The Crockstar, originally found at allrecipes

2 pounds cubed stew meat
2 cans Condensed Golden Mushroom Soup
1 large onion, diced
4 tbsp of Worcestershire
1/2 cup water
8 oz of cream cheese
1 tsp Garlic Salt
couple dashes Paprika or Crushed Red Pepper for a kick


In the slow cooker stir in all the ingredients together, except the meat and the Cream Cheese. Once all ingredients is in the crock pot add the meat and mix together. Save the cream cheese until later.

Cook on low for 8 hours. Just before serving, cut up the cream cheese into cubes and add to the crockpot to melt. Wait until cream cheese is melted and stir to combine. Serve over egg noodles.

Banana Crunch Muffins {TWC Linky Party #96 - Everything BANANAS}

It's a BANANA kind of day! Today is the weekly LINKY PARTY (yes I am a few hours late, but better late then never). I just returned from a 16-day road trip yesterday (dropping my girls off at college 1837 miles away) and my son started 8th grade TODAY! Needless to say, I've been BUSY!  But, please come share with us your favorite BANANA recipes. We recently made these banana muffins and they were wonderful. I still have a few left in the freezer that are calling my name. What have you made lately with BANANAS, we'd love for you to share a few recipes with us?

This is one of my "adpoted" sons, making banana muffins with us. I will have alot of visits from all my adpoted kids while my twins are away at college, so don't be surprised if you see lots of different kids faces around here.

Banana Crunch Muffins

3 cups flour
2 cups sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 pound unsalted butter, melted and cooled
2 eggs
3/4 cups whole milk
2 tsp vanilla
1 cup mashed banana (2 bananas)
1 cup medium-diced ripe banana (1 banana)
1 cup chopped nuts
1 cup granola
1 cup sweetened coconut

Preheat oven to 350 degrees.

Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla and mashed bananas and add them to the flour and butter mixture. Scrape the bowl and blend well. Don’t over mix.

Fold the diced bananas, nuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each to the top. Top each muffin with some chopped nuts or dried banana chips, if desired. Bake for 25-30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly and serve.

Pineapple-Lemonade Punch {TWC Linky Party #95 - LEMONADE Anything}

Today we are sharing LEMONADE recipes, from drinks to desserts and anything inbetween.

I am still on the road, getting ready to leave my girls in about 3 days for their first year at college and mommies first year with out them, (but don't worry I am already making my first plane ticket back in less then 30 days for their birthday and dance performance).



WOW, talk about some simple but delicious punch, perfect for a graduation party, baby shower, backyard bbq or just hangin' by the pool.

Pineapple-Lemonade Punch

1 quart Lemonade (Crystal Light or Country Time work great)
4 to 6 fresh Lemons
1 liter Sprite (Sun Spot)
1 large can Pineapple Juice
Ice

Mix all ingredients together in a large punch bowl and serve. This punch with dissappear befor eyour eyes. It's so refreshing.
