Chocolate Chip Cupcakes

My 19 year old step-son came to live with us in California all the way from Texas. He visits often and loves my cooking; so it's nice to have him here full-time. One of his favorite desserts last summer while he was here were these Chocolate Chip Cupcakes. I made them for the first time and I think he enjoyed them for Breakfast, Lunch and Dinner (teenage boys, what are ya gonna do?!?!) This past weekend we celebrated his 19th birthday and yes I made his favorite cupcake AGAIN. (what a great step-mom I am)

Chocolate Chip Cupcakes

1 package yellow cake mix
1 package instant vanilla pudding mix
1 cup water
1/2 cup canola oil
4 eggs

Chocolate Chip Frosting

1 cup (6 oz) miniature semisweet chocolate chips
1 can (16 oz) vanilla frosting

Additional miniature semisweet chocolate chips, optional In a large bowl, combine the cake and pudding mixes, water, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in chocolate chips. Fill paper-lined muffin cups two-thirds full. Bake at 375° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks to cool completely. Frost cupcakes. Sprinkle with additional chips if desired. 

Makes about 24 cupcakes.
