Fresh Mozzarella BLT with Pesto

I didn't forget about you FOOD BLOGGERS too... here is an amazing recipe for thee most delicious BLT sandwich ever! We enjoyed this recipe TWICE this past weekend while we were camping. (I guess I wont be having this for the next 7 weeks during SHRINKVIVOR) But I am sure I can come up with a HEALTHY version. I will skip the bread/roll (no problem), I can wrap the whole thing in lettuce and I will use Turkey Bacon. YUM! I can taste it already. But for those of you who want the REAL thing. Here is this amazing recipe.

This sandwich still looks AMAZING to me and it tastes just as good as it looks!
Fresh Mozzarella BLT with Pesto

1 (4") baguette (we used a sourdough french roll)
2 slices bacon
1-1/2 tsp pesto
1-1/2 tsp mayonnaise
romaine lettuce
2 slices tomato
slices of avocado (we added this in)
1 thick slice fresh mozzarella cheese (and yes, fresh does make a difference)
and a little sprinkle of pepper (and we took out the salt, NOT needed)

(this only makes 1 sandwich so double or triple depending on how many you need)

Cook the bacon to desired doneness, Slice the bread open and get ready to assemble. Combine the pesto and mayonnaise and smear on the bread. Top with lettuce, tomato, bacon, mozzarella and avocado. Season with pepper and Serve!

IT'S DELICIOUS....
We will NEVER EVER MAKE A BLT any other way!
This sandwich ROCKS!!!
