Grilled Chicken Caesar Salad Sandwich

A great sandwich my daughter and I enjoyed this weekend. It was a sunny afternoon in Southern California and still perfect weather for BBQ'ing, we are not pros at the BBQ but we gave it a try and it worked out perfectly.


Grilled Chicken Caesar Salad Sandwich
recipe adapted from Food & Family Grilled Chicken Caesar Salad

1/2 cup of your favorite Caesar Salad Dressing
4 pieces of boneless skinless chicken breast; cut into bite size pieces
1 Tbsp minced garlic
1 Tbsp olive oil
3 cups torn romaine lettuce
3 Tbsp fresh grated Parmesan Cheese
4 French Rolls

In the refrigerator marinate chicken pieces in 2 Tbsp of the Caesar dressing for at least 30 minutes or longer. Heat grill to medium heat and grill chicken until completely cooked. (we have this great metal grill pan for grilling small pieces of chicken on the BBQ; see above photo) Mix together the olive oil and minced garlic; brush onto the french rolls and then place them onto the grill for a few minutes.  Right before you are ready to make the sandwich; mix together the remaining dressing with the romaine lettuce. To assemble; place the chicken, lettuce and the grated cheese onto the french roll and serve! (we also added a thin spread of mayonnaise to the bun)

  4. Mmmm...sounds absolutely delicious! What brand of Caesar dressing do you like? I'm definitely interested in finding a good store-bought one!
