Cheeseburger Casserole (GLUTEN-FREE)

This one is a WINNER! We scored with this recipe (thank you, thank you The Gluten-Free Homemaker). It was so amazing and it's GLUTEN-FREE and my daughter was thrilled, it reminded her of all those delicious flavors (it was just like eating a cheeseburger)! We even tried the cheese in the recipe and it didn't bother her. But, I just found out that package shredded cheese (which is all I ever buy) contains gluten, so when I am thinking she may have some problems with dairy too in addition to gluten, I may be wrong. For this recipe I graded my own cheese and it didn't bother her one bit. I am hoping the waiting game will be over soon and we will know exactly what she is diagnosed with (celiac, allergy, intolerance, or whatever), we are starting our appointments with a GI doctor this week. Wish us luck, we just want to know so we can fix our diet and move on.

Cheeseburger Casserole
original recipe from The Gluten-Free Homemaker

1 lb hamburger meat & 1 lb turkey meat
1 medium onion (we use a little less)
1 cup shredded Cheddar Cheese
1/2 cup ketchup
1/4 cup mayonnaise
1 lb bag of diced hashbrowns

In a skillet saute onions and hamburger/turkey meat. Once meat is cooked; combine all ingredients, except the hashbrowns. Spread into a 8x8 baking dish. Layer the top with the hashbrowns covering the whole surface. Bake at 375 for 30 minutes.

  2. Anything with cheese and potatoes gets a thumbs-up from me! I make a similar dish with rice instead of hashbrowns, but I think my family will love your version! Thanks for sharing.

  3. love the fact that this recipe is gluten free I have a daughter who is on a glutten free diet and always has trouble finding tasty recipes I think she will love this one

  5. I've never had cheeseburger casserole before either! I imagine that my husband would love this - I think if I were to make it, I would add some frozen peas and beans. Yum!
