Roasted Tomato and Tomatillos Soup
Homemade tomato soup. This was a first for us and cooking with a tomatillo's was also a first. The jury is still out as to whether or not we like the taste of a tomatillo, but if you do then this soup is for you. One of my daughters absolutely loved it. She also liked the kick and spiciness of this recipe. So, give it a try we hope you like it too.
We are back from Minnesota with not one, but TWO First Place Titles for my girls dance team and their two teams took 2nd and 3rd in the National Grand Championships for their entire bracket of all Senior teams. It was a great weekend in Minnesota, they laughed, they played, they worked hard and they danced their hearts out. Plus a bonus was the wonderful time with their roomies.
Roasted Tomatoes and Tomatillos Soup
adapted by me, Tina Hudgens; idea found at The Terrace Housewife36 Roma Tomatoes & 20 - 30 Tomatillos
Mrs. Dash & Fresh Pepper
2 cups chicken or turkey broth
2 tbsp tomato paste
1 tsp garlic powder
1/4 tsp crushed red pepper (optional)
Cut tomatoes and tomatillos in half and lay on a baking sheet. Sprinkle with Mrs. Dash and fresh pepper. Roast in a 450 degree oven for an hour. Once they have slightly cooled off throw all of them into the food processor and blend. Then add in broth, tomato paste, garlic powder and crushed red pepper (if you wish). Puree' until well blended. In a medium sauce pan or a dutch oven add all the ingredients and cook for at least one hour.

I've often browsed the recipes here but this is the first time I really paid attention to what this linky is about. Thanks for hosting. The soup looks really yummy!
ReplyDeleteI'm glad you gave it a try; tomatillos are definetly an interesting veggie-but we're hooked because we'll be growing them again this summer.
