Cinnamon-Swirl Pancakes

Okay really, I didn't know pancakes could taste so good. These are out-of-this-world DELICIOUS! I know don't I say that about everything. But, really I wouldn't be posting it on my blog if I didn't like it. There are plenty of recipes that never get blogged. I am not a huge pancake eater, if they are there then okay, but I don't go out of my way to eat them. These pancakes are different. These pancakes ROCK!!!

You just swirl on that little bit of cinnamon-goodness and WOW a whole new pancake.

Cinnamon-Swirl Pancakes

Batter for one batch of pancakes (we used a box mix - so easy)
1/2 cup butter, softened
1 cup brown sugar
2 Tbsp cinnamon

In a large microwave safe bowl, combine the butter, brown sugar and cinnamon until smooth.  Microwave on high for 10 second increments until it is soft and can be squeezed through a pastry bag or a ziploc bag with the corner cut off (yep, that's what I did).

Pour pancake batter onto hot griddle.  Pipe cinnamon mixture onto batter in a swirl shape.  When pancakes are lightly browned, flip and cook until done.

Okay, and I totally forgot to add the frosting. But here it is and it really does not need it! We topped with syrup and that was good enough!

Cream Cheese Icing
2 cups powdered sugar
2 ounces cream cheese
1 tsp vanilla
4 Tbsp milk

Using the hand mixer, mix until smooth and pour the icing into another pastry bag or Ziploc bag. Squeeze it over the cooked pancakes in a criss-cross design
