12 DAYS OF CHRISTMAS GOODIES (Day 12): White Chocolate Candy Cane Pudding Cookies

Day 12 of 12 Days of Christmas Goodies
White Chocolate Candy Cane Pudding Cookies

I found this amazing flavor of Instant Pudding "Candy Cane", I bought them a few months ago and I had no idea what I was going to do with them. I searched for something? anything? with Candy Cane Pudding in it. Nothing came up! Nothing at all! I finally came across a few cake recipes with pudding in the mix and decided maybe that would be the answer, but it never came to be. And then I saw these cookies! Cookies with pudding and cake mix. I knew I just had to try it. (I am not so good at making up my own recipes, but I gave it a shot) WOW AMAZING TERRIFIC.... these cookies are out-of-this-world DELICIOUS! I actually ran back to the store today to see if they had anymore Candy Cane Pudding (and they did)! I picked up 6 more boxes! I WILL be making just a few more batches of these for several parties, gatherings and to make sure I have a fresh batch for Christmas Day.

White Chocolate Candy Cane Pudding Cookies
adapted from this great original recipe found over at Chef in Training

1/2 tsp salt
1 tsp baking soda
3/4 cup butter
3/4 cups brown sugar
1/4 cup sugar

1/4 to 1/2 cup crushed candy canes, on top of cookies

Preheat oven to 350. Stir together flour, salt and baking soda and set aside. In a large bowl, cream butter and sugars together. Add in pudding package and cake mix and beat until well blended. Add eggs and vanilla and mix until smooth. Add flour mixture slowly until well incorporated. Add in the entire bag of white chocolate chips and mix. Scoop out 1" balls onto a greased baking sheet. 13. Just made these and they are SO good. I could NOT find the candy cane pudding (& I'm too stubborn to pay the Amazon price) ANYWHERE. I looked in 7 different groceries/Walmarts/etc. in my town! I ended up using instant vanilla pudding and then with the vanilla extract I added 3/4 tsp of peppermint extract. I had to sprinkle a little red/green colored sugar, too, for some extra embellishment. :) Thanks for a fab recipe! Definitely a good choice to add to my holiday cookie gift trays!

I found a HUGE display of it my K-Mart... this was after going to 9 different stores myself and also refusing to pay the EBAY or Amazon price. Good Luck. I can't wait to go home and make these tonight. My only question is What is the qty. that this recipe makes???
