Creamy Avocado Dip
I already have the BEST GUACAMOLE DIP ever posted on my blog. It took me years and years to get this recipe exactly how we like it! Since we think it's perfect, there really hasn't ever been or probably never will be another recipe to take it's place. Although, I DO want to try Pioneer Woman's Guacamole... someday! Until then, mine is the best, according to MY family.
But, today's theme is Mexican Appetizers, mainly avocados and salsa (and by the way I have an A-MA-ZING Homemade Salsa recipe) already posted on my blog too. Check that out here: Homemade Salsa.

It was a pajama-movie-kind-of-day and since I didn't have all the ingredients to make the BEST GUACAMOLE DIP or Pioneer Woman's Guacamole, I had to rummage through my recipe box and I create this new Creamy Avocado Dip and we LIKE IT!
I have to do a shout out to this AWESOME avocado tool my daughters got me for Christmas, all on their own
with no help or ideas from me. They purchsed it at William-Sonoma and it's one of the best tools ever!
Creamy Avocado Dip

1/4 cup white onion, dice
fresh or dried cilantro, as much or as little as you liked
2 tsp (approx.) finely diced jalapeno, as much or as little as you like
1 tsp minced garlic
1/4 tsp cumin
3 drops hot pepper sauce
3 to 4 avocados
1 tbsp salsa
fresh lemon, squeeze juice (1 to 2 tbsp)
1 pkg (8oz) Cream Cheese, room temperature
1 cup finely shredded cheddar cheese
1/4 tsp kosher salt

Grind white onion, cilantro, jalapeno, garlic, cumin and hot sauce in a molcajete until all ingredients are well grounded (or use a fork until mixer is paste like).

Cut 3 to 4 medium avocados in half. Cut into small squares inside skin and then squeeze out. Scoop the diced avocado into the molcajete. Gently fold the avocado into the paste and mush as finely as possible.

Add in salsa, fresh lemon and cream cheese. Mix, until well blended. Fold in shredded cheese and then add kosher salt to taste. Chill for several hours before serving.

  2. Tina that looks SO good. I have never thought of adding the cream cheese - we usually add sour cream but I adore cream cheese. I would rather use that. Totally trying this. Btw: I love your molcajete.
