When I was preparing the Six-Layer Dip for THIS WEEK'S CRAVINGS (Memorial Day BBQ); I knew I had another great recipe for a BBQ, it's my Saucy Hawaiian Franks. I can not believe that I haven't made these in so long... when I thought of a Memorial Day BBQ I knew these had to be included. (and it gave me a great excuse to make them for dinner, so I could photograph them for my blog) Since we had this for a dinner tonight, instead of just an appetizer for a BBQ, I made some white rice and added a handful of pre-cooked frozen meatballs into the recipe. WOW! It was just as delicious and my entire family LOVED it (even my little guy who likes NOTHING)!
Saucy Hawaiian Franks
from Tina Hudgens
1 jar (12 oz) Peach/Pineapple/Apricot Preserves (any which one or a combo of one or the other)
1 jar favorite BBQ Sauce
2 lbs favorite sausage links
1 to 2 cans pineapple chunks (or crushed pineapple) in juice; drain but reserve juice
1 tbsp corn starch
Heat BBQ sauce and preserves in sauce pan. Cut sausages into bite size pieces and add to pan; bring to a boil and add in pineapple. In a small bowl mix 3 tbsp of pineapple juice and 1 tbsp corn starch, then add to pan and continue to heat for 2-3 minutes. Transfer to a slow cooker (on low or warm) and/or serve immediately.

Who doesn't love chips and dips? This is an all-time favorite for any gathering, and a Memorial Day BBQ is no different. I made this delicious dip only once before but had forgotten how good it was. A few weekends ago while we were camping I made the standard 7-layer dip with refried beans (and to be honest, I just don't like it... I can not stand cold beans, so it's totally yuck to me). When I was thinking what recipe I could share with all of you today, I remembered this one and decided to make it, photograph it and of course eat it too!
Six-Layer Dip
Kraft Food & Family
Layer 1: 1 ripe avocado mixed with 1 pkg Cream Cheese (8oz), softened
Layer 2: 1 cup sour cream mixed with 2 tbsp taco seasoning (or a little less if it's too strong)
Layer 3: Mix 3 tbsp salsa with 1 ripe avocado chopped
Layer 4: 3/4 cup shredded Cheddar Cheese
Layer 5: 1 small tomato, chopped
Layer 6: 2 green onions, sliced
Layer each layer one by one in a glass pie pan. Refrigerate until ready to serve.

Chocolate Graham Cracker Snacks (Natchez Cookies)
This is a snack that even adults will love to indulge in. They are so light and fluffy and taste so good! I made this recipe many many years ago when I was a kid (I actually have the handwritten recipe below). I had actually forgotten about it until one day I was at Apples Bed & Breakfast a few years ago and she made what she calls Natchez Cookies. I remembered the taste instantly. (Apples Bed & Breakfast uses Saltine Crackers rather then Graham Crackers but either one is delicious)
When I was making my first scrapbook/cookbook my mom gave me this folder of family recipes, and this is where I found this piece of paper with my writing on it. A hand written recipe by yours truly "Tina Yvonne Messick" (my signature is bigger then the entire recipe, too funny). PRICELESS!
Chocolate Graham Cracker Snacks
recipe from unknown source, written by me as a 10 year old child (with a few changes)
Graham Crackers (break into 4th's)
1/2 cup butter
1 cup brown sugar
1/2 to 1 cup walnuts (or pecans)
1 tsp vanilla (Apples Bed & Breakfast uses this so, I added it in)
1 bag of Chocolate Chips (I think the mini chocolate chips would be better)
Separate Graham Crackers onto a cookie sheet, fill up the entire sheet leaving no space in between. Melt 1/2 lb butter on stove top and then add in 1 cup brown sugar; spread mixture over crackers. Heat Oven to 400 and Bake for 5 to 7 minutes. Remove from oven and spread chocolate chips, walnuts on top and wait until chocolate melts. Cool & Serve.

Homemade Lasagna
Lasagna, one of those ALL time comfort meals. I know it's a family favorite around our house and I am sure many of your homes too. My little guy who eats NOTHING, loves Lasagna. He won't eat any ole' Lasagna, it has to be homemade and it has to be this recipe (believe me I've tried to change it up a bit and he can totally tell). This recipe is a repeat, but I just wanted to show all of you how easy it is to make Homemade Lasagna, the last post was for Crockpot Lasagna, and this post is how to make it in a pan, the deepest, tallest pan you can find. The bigger the better!
And when we make Lasagna, we really make Lasagna. I never ever make one pan. Lasagna is a perfect freezer meal (freeze before it's cooked). It's not unusual for me to make at least 4 or 5 pans at a time. This Lasagna meal is perfect for parties, get-together, baby showers and much more. I can't even tell you how many times I've served this at an event, too many to count. And like I said having a few in the freezer is a life-saver at times. This past weekend when I was away on my moms weekend. I took a small 8x8 pan of frozen Lasagna out of the freezer and my husband and my little guy ate it all weekend long. All my hubby had to do on Friday night is throw it into the oven for 1 hour and then bam a homecooked meal (and I wasn't even there)! Perfect! Then on Saturday when my hubby was at work, twins were watchin' the little guy, he just heats him self up a piece for breakfast, lunch or dinner (or whenever he feels like it). Then mommy doesn't worry while she is away.... Now let's get to makin' the Homemade Lasagna.
Homemade Lasagna
from Mom
2 Boxes of Lasagna Noodles
G'ma's Homemade Spaghetti Sauce (see below or your favorite sauce homemade or from a jar)
Lots & Lots of Cheese (yellow & white)
Parmesan Cheese
Noodles need to be cooked first (yes, I've tried without cooking them and it never turns out the same). Then just layer... NOODLES - SAUCE - CHEESE (sprinkle a little Italian Seasoning & Sprinkle a little Parmesan inbetween layers), then repeat NOODLES - SAUCE - CHEESE. Continue to repeat in the biggest, tallest, deepest dish you can find, the more layers the better. For the cheese use as little or as much as you want for each layer.
Preheat over to 350 and cover with foil. Cook at 350 for about 45 minutes to 1 hour, depending on oven. (Last 15 minutes take the foil off)
G'ma's Simple Spaghetti Sauce
from my MOM (G'ma)
4 cans of Tomato Sauce
1 can Tomato Paste
1-2 lbs of Hamburger Meat
1-2 tbsp Italian Seasoning
1-2 tsp Onion Salt, Onion Powder and/or Garlic Salt
Cook hamburger meat on stove-top with a little bit of the seasoning until done. Add in the 4 cans of tomato sauce and 1 can of tomato paste with add'l amounts of seasoning (she just throws some in, never measures and it is never the same) simmer/cook until steamin' hot!

I am away on a 5-day girls only scrapbooking event in our local mountains and it's beautiful! We are relaxing, laughing and having the best of times. I knew Summer Salads was scheduled for today and so I purchased all the stuff to make this delicious salad up here in Big Bear. All of the ladies were eating their salads on the patio and it was a perfect day, I made my salad and enjoyed a nice lunch with friends. (Plus this salad is perfect for my diet.... gotta loose 15 lbs for my upcoming vacation.... got 5 weeks until we leave)

This salad was shared to me by a few scrapbook friends many many years ago. I have loved it ever since, I often forget about it but every time I make it I love it just as I did the very first time.

plate full of spinach lettuce
1/4 cup of raspberries (fresh is best, frozen does not work)
2 tbsp pine nuts
1 whole avocado, diced
sprinkle of mozzarella cheese
drizzle of Raspberry Vinaigrette & drizzle of Ranch Dressing (strange but delicious)
The recipe is really easy and very simple, just put all the ingredients together and then devour. YUM!

Almond Danish Swirls
A few years ago we were visiting my mother-in-law in Oregon and my niece and her family were there too. She made these for breakfast one morning and we couldn't stop eating them. They were so delicious. Plate full, after plate full, she kept serving them and we kept eating them. (If I remember correctly we even went to the store and had her make a second batch before we headed back to California) This is just one of those special breakfast treats that every sweet tooth will love. They are best served right from the oven (I don't like them much when they get cold, but they are really that good that I'll eat them anyways).
So, for Mother's Day this year we decided to go to lunch and an Angel game with my entire family. My mom, dad, brother, sister and all of their respected families. We had the whole gang together. We ate at TGIFriday's and then headed to the game. But, in my attempt to stay on the Dave Ramsey budget, spend little to nothing and pay off debt like crazy, I decided to bake these delicious Almond Danish Swirls and give a little bag to my mother, my sister and my sister-in-law. It was just a little treat to say, I love you!

Almond Danish Swirls
shared to me by my niece Shawna (but I believe this is a Paula Dean recipe)
6 oz cream cheese, softened
1 tsp almond extract
1/2 cup sugar
1/2 cup slivered almonds, chopped finely
2 cans crescent dinner rolls
1 egg white
1 tsp water
glaze:
1/2 cup sugar
4 tsp milk
1/2 tsp almond extract
In a small bowl, beat cream cheese, almond extract, and sugar until fluffy. Fold half of the almonds into the cream cheese mixture. Separate dough into rectangles and firmly press the perforation to seal. Press or roll each piece of dough and spread with about 2 tbsp of cream cheese mixture. Start at the short end, roll each rectangle tightly into a cylinder.
Place on a plate, cover with plastic wrap and chill until firm, about 30 minutes or overnight. (I like to prepare the night before and then it's a piece of cake to pop them in the oven in the morning for breakfast).
When ready, preheat oven to 350, remove from refrigerator and cut each roll into several slices (about 4 to 6 slices from each roll). Place on an ungreased baking sheet. In a small bowl, combine the egg white and 1 tsp water, brush over the swirls. Sprinkle with the remaining almonds. Bake for 18 to 20 minutes, until lightly brown.
While the swirls are baking, combine the glaze ingredients in a small bowl. Cool swirls for 3 minutes on wire racks then drizzle the glaze over the warm swirls and serve.

Just returned from a wonderful camping trip that I shared with my son and my parents. My girls and hubby stayed home to work, school and do other important things like shop for a prom dress. But, my son and I had a wonderful time. We saw the Kern River, walked around the historical town and hiked through the Trail of 100 Giants. We had an amazing time... and now it's Monday and back to the grind. How many school days are left? Only 17 school days for my kids!!! And yes, I am counting down.
Did you know May is National Hamburger Month?
We use hamburger meat in everything. This is definitely a staple in our home and I will be sharing just a few of my favorite recipes below at the linky party. This recipe that I choose to feature today comes from my very first scrapbook/cookbook where I gathered recipes from all of my family members and put them all together in one scrapbook. This recipe is from my cousin's wife, Jessica.
Ranch Doritos Taco Salad
recipe from Jessica Kutscher, adapted and name made up by ME!
1 lb ground hamburger meat cooked with Taco Seasoning
1/2 cup corn
1 - 2 tomatoes, diced
1 - 2 avocados
1/2 cup shredded cheese
1 head of lettuce (use spinach lettuce or a mixer of whatever you like)
Ranch Doritos Chips
1/4 to 1/2 cup Thousand Island Dressing (this is the secret)
The recipe is simple, the ingredients are easy. Add a few more, or take away a few if you don't like them. But the secret ingredient is the Thousand Island Dressing (even people that don't like Thousand Island LOVE this recipe) and the Ranch Doritos... make this salad taste like no other Taco Salad you've ever had before. It's DELICIOUS!!!

Tyson BBQ Chicken Pizza with Homemade BBQ Sauce
My kids LOVE pizza! What kid doesn't? Homemade Pizza is even better. We have been enjoying making homemade pizza's for some time now. We are always coming up with new creations and today's post is our latest. My twin daughters love Shaved Asparagus Pizza, we make it quite often, and BBQ'ing Pizza is another one of our latest craves. But my 12 year old son, is Cheese-Only! When I was asked to do a review for Food Buzz with Tyson Grilled & Ready Chicken, I was thrilled to create a brand new pizza recipe.
We often use ready made pizza crust, just as we did this time. One of my daughters is gluten-free (not by choice) and I buy her gluten-free crust, and then regular crust for the rest of the family. This recipe is so simple and the taste was out-of-this world. I have to be honest I have never purchased the Tyson Grilled & Ready Chicken, but I was so impressed with the taste. I've made 3 more items with this chicken since and it will be a permanent staple in our house from now on (just bought my second bag this week).
We wanted to set out to create a BBQ Sauce Style Pizza and we succeeded beyond our wildest dreams. Even as we were creating this pizza my daughters were wondering if this was really going to taste like the BBQ pizza's they order from most restaurants, and it did! We were all so happy with the results. THANK YOU Tyson Chicken & the Food Buzz Tastemaker program for showing us this new product.
We started with an ole' family recipe of Homemade BBQ sauce to dip all the chicken strips in before making the actual pizza's. First we covered the pizza crust in olive oil and garlic, topped it with homemade Pizza Sauce, cheese and the Tyson Grilled & Ready Chicken Strips covered in the Homemade BBQ Sauce. The BBQ Sauce Pizza was absolutely delicious. A new family-favorite.
Chicken Pizza with Homemade BBQ Sauce
from Tina Hudgens
4-6 individual Pizza Crusts (use your own favorite crust)
1/4 cup of olive oil
1 tbsp minced garlic
Homemade Pizza Sauce (see recipe below or use your favorite jar of pizza sauce)
1/4 cup shredded pizza cheese (for each individual pizza)
1 tsp of parsley (per individual pizza crust)
Homemade BBQ Sauce (see recipe below)
4-6 strips of Tyson Grilled & Ready Chicken (per individual pizza crust)
Homemade Pizza Sauce
1 (6oz) can of tomato paste
1/2 cup olive oil
1/4 cup water
1 tbsp minced garlic
1/4 tsp Oregano
1/4 tsp Basil
1/2 tsp sea salt
In a small bowl add tomato paste then add in olive oil a little at a time mixing completely. Add water next a little at a time mixing completely in between each pour. Add in the remaining ingredients and mix well. This is your homemade pizza sauce that will be spread on the pizza crusts.
Homemade BBQ Sauce
1 cup ketchup
1 tbsp Worcestershire Sauce
1 tbsp vinegar
1 tbsp brown sugar
Whisk all together and mix with chicken strips. This homemade BBQ Sauce will be used for the chicken and to drizzle on the pizza after the entire pizza is put together.
PIZZA directions:
Heat oven to 350. Mix together 1/4 cup olive oil and 1 tbsp minced garlic; brush onto both sides of your favorite pizza crust. Take the pizza crust and spread on one side the Homemade Pizza Sauce (see above for recipe). Add about 1/4 cup of your favorite pizza cheese (more or less to your liking). Place the Tyson Grilled & Ready chicken strips, that have already been covered in the homemade BBQ Sauce onto the pizza on top of the cheese; sprinkle with a little parsley and drizzle the remaining Homemade BBQ Sauce on top of the pizza. Bake for 15-20 minutes (or what is recommend for your pizza crust) and serve hot! This is a one-of-a-kind Chicken Pizza with Homemade BBQ Sauce.

Family Meal Planning 5-8-11
Sorry, no meal plan for last week. We were away in Florida for the 2001 Dance Worlds (kinda'of like the Olympics of the Cheerleading and Dance world). I am very proud to say that my daughters (Ashlyn & Kayley's) team took home the BRONZE and this is something to be very proud of. Their Senior Pom Team took 3rd place in the WORLD in the Senior Pom Dance category, WOW!!! The company that my girls dance for Pace Elite, they took home 3 GOLDS, 1 SILVER and 1 BRONZE and we only brought 5 teams. Which means, YEP, all 5 teams took home a medal. It was a VERY exciting time for everyone! This is my girls second year attending the Dance Worlds competition (last year their team took home a SILVER, 2nd place). The video for this year will not hit You Tube for quite some time, but I'd love to share with all of you last year's Senior Pom Video (click to view). All of these girls are AMAZING and this is an unbelievable experience for them. They meet dancers from all over the World, the exchange t-shirts and watch each other dance their hearts out! Even with the language gap, they still are able to communicate through dance. It's awesome, amazing and a wonderful thing.
My daughters will be Seniors next year, we will be praying diligently that God will guide them into making the right decision about Pace and about college for next year.
Dance is their LIFE.. they sleep...eat... breathe.... DANCE! With practice at least 3 days a week 3 to 4 hours a day, you can imagine they MUST love it with all their heart! And this routine will end their 9th year at Pace Elite. We arrived home from Florida Dance Worlds late Monday night, the year-end Pace banquet was Wednesday night and try-outs for the next year was Saturday. There is NO break.... 365 days a year DANCE... DANCE... DANCE... and I am so happy they LOVE IT!!! Congrats again Ashlyn, Kayley and all of the girls at Pace Elite. YOU GUYS ROCK!!!
Now for my menu for this week... we will be using up freezer food and NO trips to the grocery store this week. Which is a mighty good thing since my $150 dollar grocery budget was used for Mother's Day for a restaurant treat for my family! (good thing we stock pile and have plenty of food in the house) It's another short week and it's time to have a little one-on-one time with my son and we will be camping this weekend. YAHOOOOO Kern River here we come!!!

My daughter Kayley LOVES making dessert, the other twin Ashlyn LOVES making meals. They have been wanting to make everything in the cookbook they bought me for Christmas The Princess and the Frog: Tiana's Cookbook: Recipes for Kids (Disney Princess: the Princess and the Frog) (Hardcover). This is our second recipe we've liked and still plan on making many more.
This is a reverse cobbler, instead of the filling on the bottom you put it on top and then as it bakes the topping puffs up and over the bubbling fruit! It was delicious! We served it with whip cream, but vanilla ice cream would have been so much better. I just LOVE that my daughters are enjoying cooking and baking so much! They are actually in the process of creating their own blog. I am so excited for them and of course, I will be sharing it with all of you as soon as it's up and running!
Pineapple Berry Cobbler
1/2 cup butter
3 cups sliced strawberries (original recipe was peaches)
1/2 can of pineapple chunks (add by my creative daughter)
1 cup raspberries
1 cup sugar
1 cup flour
2 tsp baking powder
pinch of salt
1 cup milk
1 tsp vanilla
Whipped Cream or Vanilla Ice Cream for topping
Heat the oven to 350. Use a pat of the butter to grease a cast-iron skillet (or a casserole dish). Set the skillet aside. Melt the remaining butter in a saucepan over low heat. Remove the pan from the stove and set it aside.
Combine the fruit in a medium bowl and sprinkle 1 tbsp of the sugar over them. Gently stir the fruit and then set it aside.
In a separate bowl, whisk together the flour, baking powder, and salt. Add the remaining sugar, the milk, and the vanilla extract. Stir until the mixture is evenly blended.
Pour the melted butter into the batter and stir quickly but gently to mix it in. Immediately pour the batter into the skillet. Add the fruit with it's juices, spooning it evenly into the pan and lightly pressing it partway into the batter with spatula.
Bake the cobbler until the top is golden brown, about 1 hour. Serve warm with ice cream or whipped cream.
