Spinach Artichoke Grill Cheese

My daughter is a recipe (sandwich) connoisseur, I wouldn't be surprised someday if she opened up a sandwich shop in New York City (her second love), but for now let's get through the first year of college. She was not very pleased with her fast-food sandwich she got tonight after the Lindenwood University football game, I am sure she would love to have one of mommy's sandwiches right about now.

Since her twin sister loves spinach artichoke and she is always up for something new, I decided to create this sandwich before they left for Missouri from one of the CRAZY COOKING CHALLENGES

The NEW IMPROVED Crazy Cooking Challenge is just around the corner. Make sure you are all marking your calendars and are preparing your Apple Pie for the upcoming CRAZY COOKING CHALLENGE on October 7th.

Spinach Artichoke Grill Cheese
adapted (alot) by me, originally  from a recipe found at Recipes of a Cheapskate

pre-packaged Spinach Artichoke Dip
1/2 cup grated mozzarella cheese
1 tbsp olive oil or butter (for the pan to brown the grill cheese)
4 pieces bread

On each piece of bread, spread butter on one side. Heat a griddle pan to medium heat. Add 2 slices of bread to the grill, spread some cheese, the spinach-artichoke dip mixture, and some more cheese (approx 1/2 cup per sandwich). Top with the other slice of the bread. When the bottom is browned, flip the sandwich and cook until the other side is browned.

Chicken Parm Sandwich {What to Expect Book}

This was such a quick and easy sandwich to make with left-over Chicken Parmesan (some may even have this in your refrigerator right now) and for a busy mom this meal is just what you may need caring for those little ones. Just after my little niece came home from the hospital, I headed over to my sister-in-laws house to make her a quick lunch and to let her shower in peace while I watched the little ones, my niece is 2 months old and my nephew is almost 2 years old. I know this is a handful, with sleepless nights and long days. I was sent this book What to Expect the Second Year, and I thought she was the perfect person to give this too, my nephew Ace will be two in August and her little one will be right behind him.

Chicken Parm Sandwich
recipe created by me

left-over Chicken Parmesan or Mozzarella Chicken, thinly sliced
French Rolls (butter and sprinkle with garlic salt)

Butter and sprinkle rolls with garlic salt, then Broil for about 4 to 6 minutes. Heat the left over chicken Parmesan in the microwave and unless it has lots of cheese still left on it, you can cut a few extra slices of mozzarella cheese to top it off with. Add the thin slices of chicken to one side of the bread, top with some extra cheese and return to broil for about 4 more minutes, until cheese is melted. Remove from oven, put sandwich together and serve hot. This is GREAT meal for left-overs and it's quick and easy.

I know my sister-in-law loved her sandwich and I am sure when she gets a spare two minutes she will really enjoy this book from What to Expect.

CRAZY COOKING CHALLENGE #9 - Grill Cheese Sandwich
Grilled Mozzarella Sandwich

WOW! This is my 500th POST!!!

Before I start into the CRAZY COOKING CHALLENGE, I want to annouce that this here is my 500th POST. I LOVE grill cheese sandwiches and Kraft Macaroni & Cheese. I know, could it get any better. I had countless amounts of this combo growing up and my kids have had countless amounts of these also. But, I have to admit I have NEVER EVER made any other kind of Grill Cheese Sandwich. It's always been 2 slices of white bread (YUM) and 2 slices of Kraft American Cheese (from the package), this is the ONLY way I make it and this is the ONLY way I like it. If you try and put cheddar or any other kind it's just not the same. Then I had this challenge come up and I could not make just this ole' fashion Grill Cheese, so I went a searchin'.

I found this Grilled Mozzarella Sandich over at Sarah's Cucina Bella and since it originally came from Martha Stewart, I thought I must give it a try (and secretly I LOVE mozzarella cheese and have never in my wildest dreams thought of making a grill cheese from it). The recipe was simple, things you should all have at home, no fancy cheeses and YOU CUT OFF THE CRUST, any kid would love this. I know my little boy hates crust. This sandwich reminds me a little of a Monte Cristo Sandwich (which is one of our favorite's of all time), but with just all cheese inside. It did not diappoint me and my kids loved it too.

Grilled Mozzarella Sandwich
recipe found at Sarah's Cucina Bella
originally from Martha Stewart

(makes 5 sandwiches)

5 to 10 slices fresh mozzarella (add 1 to 2 slices per sandwich)
10 slices White Bread (thick or thin), but CUT THE CRUST OFF!
2 large eggs
1/2 cup half and half or heavy cream
1/2 tsp dried basil, or 1 tsp fresh basil, torn into small pieces
1 tsp kosher salt
a dash of nutmeg
1/4 cup extra virgin olive oil
2 tbsp butter

In a medium skillet, heat half of the olive oil and half of the butter. Combine eggs, half and half (or cream), basil, kosher salt and nutmeg in a medium bowl. Beat together until well mixed. Keep the whisk handy, as you will want to remix later.

Place the one slice mozzarella between two slices of bread and dip into the egg mixture. Next place it in the skillet. Let each sandwich brown on both sides. Serve Hot.

Meatball Sandwich Casserole

Okay, WOW-WOW-WOW! When I come across a keeper recipe that's when I know I've found a good thing. We've already had this twice before I could even write the post. And if you are a fan here you know I RARELY make things twice. This recipe will for sure be going into my Volume 3 Family Scrapbook/Cookbook I am beginning to create. You can see pages and recipes from my Volume 1 and Volume 2 Cookbooks here.

Meatball Sandwich Casserole
idea found at Pearls, Handcuffs & HappyHour, original recipe from Pillsbury - January 2006

1 Baguette French Bread (cut into 18-24 slices)
Olive Oil
1 pkg Homemade Comfort Meatballs (or frozen), bite sized
1-1/2 cups spaghetti sauce
1 cup mozzarella cheese, shredded

Preheat oven to 350. Meanwhile, slice your bread. Brush each slice with olive oil on one side, just coat with pastry brush. Line the bottom and the side with the bread slices...oil side up...slightly overlapping the slices on the side. You won't need to grease your dish for this recipe. Use a deep casserole dish, I made the recipe in a smaller 8x8 pan - but depending how much you want to make you can use a 9x13 pan too.

Bake bread for about 10 minutes or until the edges are golden brown.  In a separate bowl, mix meatballs & spaghetti sauce to coat (this is a perfect recipe for left over spaghetti and meatballs too). Remove the bread from the oven and spoon the meatball mixture into the dish on top of the bread. Return to oven and bake for 25-30 minutes or until thoroughly heated through in the center.  Pull out at about 25 minutes and cover with the mozzarella cheese and baked it for another 5 minutes.

THIS WEEK'S CRAVINGS #76 (SANDWICHES) and BLT Grill Cheese

THIS WEEK'S CRAVINGS Linky Party #76
(SANDWICHES)
BLT Grill Cheese
One of my daughter's loves to eat, create and sample sandwiches, I think one day if she could just stay in the kitchen and create sandwiches all day, that would be her dream job. Her children are going to get AWESOME sandwiches everyday for lunch, because this is her speciality. But, off to college she goes in the fall and we'll see what God has in store for her. Major (so far) is Business, Marketing and a Minor in Dance. I don't see any college classes for "making sandwiches", she can just do that on the side in her dorm room!

Love finding old photos of my twins! This was on vacation and they are SHARING a sandwich,
I don't think that would ever happen now (they are 18 years old now too!)
We have found a few great sandwiches and featured them here and this one by far is our all-time favorite Grill Cheese with Bacon & Thousand Island Dressing, but since that sandwich is already posted we had to create a new one for today's post! And what better sandwich to recreate then the BLT, we decided to make a BLT into a Grill Cheese. DELICIOUS!

BLT Grill Cheese
created by Tina Hudgens

2-3 slices bacon, cooked
1/4 cup White Cheddar Cheese
2 tsp finely grated Parmigiano-Reggiano
1/8 tsp crushed red pepper flakes (or to taste)
2 slices thick Italian bread
2 slices ripe tomatoes
2 slices avocado
1 left of lettuce
1 tbsp butter
1 tbsp Pesto & 1 tbsp Mayonnaise (mix together)

Makes 1 Sandwich: Combine the cheeses and red pepper flakes in a small bowl. Butter one side of both pieces of bread. Lay one slice of the bread down in a heated skillet and spread the inside of the bread with the mayo/pesto mixture. Top it with the cheese, 2 slices of bacon and then 2 slices of tomatoes.

Cook butter side down in the pan and cook on the first side until the bread is golden brown and toasted.  Flip the sandwiches using a spatula and continue to cook on the other side until the bread is golden brown. You can use the spatula to compress the sandwich as it cooks on the second side.

Pepper Jack Grill Cheese with Apples

This years apple picking was a bit of a disappointment. We arrived for our weekend long camping trip ready to pick some apples and to our surprise there was an early freeze and no more apples to pick. BUMMER! We still enjoyed our weekend and we actually did end up finding a small apple farm that had one kind of apples to pick; Winesap Apples. I did purchase alot of apples even though I didn't get to pick them all myself and I have lots of recipes coming up with fresh apples in them! This sandwich was like nothing I have ever had before and I do already have a favorite Grill Cheese sandwich, so to try a new one was hard, but I really wanted to try it with the apples and it did not disappoint. I think I will be making this one just as often.

Pepper Jack Grill Cheese with Apples
originally found on Jana Laurene

Sour Dough Bread
Few Slices of Pepper Jack Cheese
Avocado
Bacon
and Fresh Apple Silces, yes apples makes this sandwich AMAZING!

Butter the outside of your bread, layer your sandwich and grill in a skillet until cheese is melted.

Tailgate Sandwiches

Another new sandwich! But I can not decide which is my favorite; the new Tailgate Sandwich or the original Hot Sub Sandwich, therefore I am posting both. The first time I heard about this kind of sandwich is when it was picked as a TOP PICK for THIS WEEK'S CRAVINGS and it now has become a household name, we call them Hot Sub Sandwiches, click here for the original recipe. But, lucky me. I love searching out new recipes and I found this twist on this same sandwich and I couldn't resist trying it out.

The two biggest differences are the Hawaiian Sweet Rolls and the Cream Cheese.

Tailgate Sandwiches
from Taste of Home Magazine, Caryn Ross

12 Hawaiian Sweet Rolls, split
1 lb shaved ham
12 slices white cheese, mozzarella
1 tub Cream Cheese
1/2 cup butter, melted
1/4 cup grated Parmesan Cheese
1 tbsp Worcestershire sauce
1-1/2 tsp dried mince onion

Arrange bottoms of rolls in a greased 9x13 baking dish. Layer with cheese and then ham. Spread the top of each roll with a thin layer of cream cheese. Place cheese side down.

In a small bowl, combine the butter, Parmesan cheese, Worcestershire sauce and onion. Pour over sandwiches. Let stand for at least 20 minutes.

Cover and Bake at 350 for 20 minutes or until cheese is melted. Serve warm.

THIS WEEK'S CRAVINGS #49 (SANDWICH) and Bagel Avocado Open-Faced Sandwich

THIS WEEK'S CRAVINGS Linky Party #49
The Theme is: Sandwiches
(Please share with us your favorite sandwich!)

This is an all-time favorite of my girls. They LOVE LOVE this sandwich that one of my friends shared with them at the river a few years ago. It's so simple, so easy and yet so delicious! We forget about it and haven't had it in a while and when made it for them today so I could photograph it and blog about it they said once again "this is the best sandwich ever".

Bagel Avocado Open-Faced Sandwich
from a long-time friend Lisa

1 bagel (toast or not)
cream cheese
turkey or ham
1 avocado

Toast your bagel, if you wish. Spread with cream cheese, layer with ham or turkey and top with slices of avocado. And yep. that's it! ENJOY!

Grilled Cheese with Bacon & Thousand Island Dressing

I cook a lot while on vacation in my motorhome. I think I just view this as my time to cook, relax and enjoy my family even more then I do at home. There is less stress and very little to do, so cooking is more enjoyable.

I call myself the "Lunch Lady", I disappear into my tiny little motorhome kitchen and about an hour later I emerge with a new and trilling lunch item each and every day. We had brought a few extra friends this time, so I had a total of 8 or 9 people to make lunches for each day. (But, I wouldn't have it any other way)

This new sandwich was OUT OF THIS WORLD, I can not even begin to describe to you how wonderful it was. I know this will be a NEW all time favorite at my house. The melted cheese, the crisp bacon and the tang of the Thousand Island, oh my! If you love all of those things and have never thought in a million years to put them all together, then I encourage you to try it TODAY! You probably have most of this stuff in the house, right now!

Grilled Cheese with Bacon & Thousand Island Dressing
adapted to our taste from Food Network Magazine, April 2011
Greg Morris, owner of Oaks Gourmet in Los Angeles

8 strips thick cut maple-glazed bacon
2 tbsp butter8 slices sourdough bread
8 slices of your favorite cheese (original recipe cotswold cheese or cheddar)
4 tbsp Thousand Island Dressing

Cook the bacon in a large skillet over medium heat until crisp, remove and drain. Wipe out skillet.
Heat the butter in the skillet over medium heat, spread butter on the outside of all 8 slices, lay 4 slices butter side down in skillet. Layer with cheese and bacon. Spread thousand island on inside of the additional 4 slices of bread, then lay thousand island side down on top of the bacon & cheese (butter side should be facing up).

Cook until the cheese is melted and the bread is golden brown on both sides; 3 to 4 minutes on each side. Repeat until all 4 sandwiches are made, unless you have a huge skillet like I do and can make all 4 sandwiches at once.

Here are the moms on the camping trip, this is what we do ALL DAY long,
so stopping and cooking for my family is a no problem at all, I LOVE MAKING new things!!!

THIS WEEK'S CRAVINGS Linky Party #34 (30 Minute Meals) and Hot Sub Sandwiches

THIS WEEK'S CRAVINGS Linky Party #34
The Theme is: 30 minute meals
(What quick recipe can you share for an under 30 minute meal?)

We are so excited to be into Summer Time now (12 days to be exact). We've already gone to Universal Studios, attended a few graduation parties, went shopping for bathing suits and summer clothes (for our uncoming vacation), went to Disneyland and hosted a few pool parties in our back yard. The most recent was this past weekend and this is what we served. These new found delicious, so quick and so easy Hot Sub Sandwiches, which can be made in under 30 minutes.

I featured these just a few weeks ago as my favorite pick on my first THIS WEEK'S CRAVINGS TOP PICKS. I found them through one of the link-ups. I am SO happy people like Modern Wivelyhood stop by and link up recipes each and every week, because it's a great chance for all of us to find new recipes. I know this recipe is a new family favorite, I am happy to confess we've made these 4 times already.

Hot Sub Sandwiches
original recipe from Modern Wivelyhood, adapted by Tina Hudgens

1 pkg French Rolls (use the half size)
1/2 cup mayonnaise (use for spreading)
1 pkg (or 1 lb each of deli meat) Turkey, Ham, Roast Beef (or all three)
1/2 lb favorite cheese (I've used cheddar, mozzarella & swiss)

Preheat oven to 350, this makes approximately 2 (9x13 pans). Cut french rolls in half and spread a thin layer of mayonnaise on each side, load it with meat and cheeses of your choice. The ingredient list is just an estimate, you can load it up as much as you'd like. We like 3 slices of meat and 2 slices of cheese.

Hot Sub SPECIAL SAUCE
1 stick salted butter melted
1-1/2 tbsp poppy seed salad dressing
1 tsp honey mustard
1 tbsp minced onion
1 tsp Worcestershire Sauce

Mix together and pour over sandwiches. Let sauce sit on top of sandwhiches a few minutes to set in. Cover 9x13 pan with foil and put in the oven for 15-17 minutes. They come out perfect ever single time!

Bennigan's Monte Cristo Sandwich

This is now the PERFECT Monte Cristo Sandwich, my search is over (please disregard the previous recipe posted on MOMS CRAZY COOKING, because this one takes the prize!). A few weekends ago I was cooking, baking and helping my sister-in-law make some homemade baby food. We were talking about recipes and we got on the subject of a Monte Cristo Sandwich, we searched the Internet and came up with the exact restaurant that we remembered having these at; Bennigan's. This too is my dad's ultimate favorite sandwich of all time. (I sure hope my mom reads this and makes it for him; my mom doesn't like to cook all that much)

Well, we ran to the store in the middle of our cooking extravaganza and bought what we needed to make this awesome sandwich. Not only did I agree this was a keeper recipe, so did my brother (who is pickier than all of my kids put together), my sister-in-law loved it and all the little boys we had running around the house that day (I think it was at least 3 or 4) loved it too. Now, my quest will be to try and make this gluten-free for my daughter. (no easy task, but I will try)

Bennigan's Monte Cristo Sandwich
from CopyKat Recipes

9 Slices Wheat Bread (we used white and you need to use the thin sliced , not thick bread)
3 Slices Turkey
3 Slices Ham
3 Slices American Cheese
3 Slices Swiss Cheese

Batter
1 Egg
1 to 1 1/4 cup Water
1/2 tsp Salt
1 tsp Sugar
1 1/2 cup Flour
1 tbsp Baking Powder
Vegetable Oil (for deep frying)

Place turkey and Swiss cheese on one slice of bread and ham and American cheese on another slice of bread. Place third slice in-between and secure the triple decker sandwich in the corners with tooth picks.
Place egg in mixing bowl, add water and beat together. Add salt, sugar, flour, and baking powder. Beat batter until smooth.

Dip sandwich in batter and carefully cover all the sides and surface. Carefully place in hot oil (pan needs to be high enough so that the oil will cover the sandwich half-way up) and fry until golden on each side. When sandwich has turned a warm gold color remove from hot oil and place on paper towel. Let cool for a few minutes before removing the tooth picks. And before serving slice into fourths and sprinkle with powder sugar.

Serve with raspberry preserves.

PB & J Spirals

This is a perfect afternoon weekend snack with the kids! Arrived in my mail a few weeks ago was the Taste of Home GRAND PRIZE Winners Cookbook, I really thought "I do NOT need another cookbook". But, I was so wrong, this cookbook looks amazing. My daughter looked through cover to cover and she came across this recipe and said "Let's make it right now!", and of course we did! She is my PB&J girl! Eating this hot right out of the oven is the only way to go!

PB&J Spirals
Taste of Home Grand Prize Winners Cookbook 2010

1 tube refrigerated crescent rolls
8 tsp creamy peanut butter (we used chunky, it's the only kind we like)
8 tsp grape jelly (or whatever your favorite kind may be, mine is Marionberry from Oregon)
1/4 cup unsalted peanuts
2 tbsp confectioner's sugar

Optional: We did some with bananas, peanut butter and honey. (these were equally good)

Unroll the dough and separate into triangles. Spread 1 tsp of peanut butter and 1 tsp jelly on the wide side of triangle; sprinkle with peanuts. Roll them up in crescent shape and place on a baking sheet. Bake at 375 for 11 -13 minutes or until lightly browned. Dust with confectioner's sugar. Serve Warm.

SPIKE REVIEW AND GIVEAWAY: Mushroom Egg Salad

My first GIVEAWAY starts today

from SPIKE Magic Seasoning!

I am hosting my first ever MOMS CRAZY COOKING Giveaway with Spike Magic Seasoning!
The Spike family of seasonings are all natural, made without preservatives or additives,
and have Zero calories per serving.

I was contacted to review SPIKE Magic Seasoning and to be honest, I had never heard or seen it before. I of course said yes, because as a cook, I LOVE to try new things. I received my package full of seasonings and created my first recipe that week (see below). Since then we have been experimenting and trying new recipes (watch for more to come) and adding SPIKE Magic Seasoning where we see fit! (Not only do I cook, I have 17 year old twin daughters who love to get in the kitchen too). Just yesterday my daughter was making simple scrambled eggs and she added the SPIKE Magic Herb Seasoning and she loved it.

This first recipe we created was just another one of our every day Egg Salad recipes, one of my daughter just LOVES to make. As soon as we run out, she is in the kitchen whipping up another batch. We decided to revamp it a little and add in some SPIKE! And I can tell you that it gave it that WOW-POP of flavor to make it just a little bit extra special. I know adding SPIKE to this recipe will be a permanent change.

Mushroom Egg Salad with SPIKE

5 Hard Boiled Eggs
2 tsp Minced Garlic
2 tbsp chopped Onions
1/2 cup Mushrooms, diced
1-1/2 tbsp Sour Cream
1-1/2 tbsp Mayonnaise
1/2 tsp Mustard
2 tsp of SPIKE Magic 5 Herb Seasoning

First hard boil large eggs, and cool. Meanwhile saute' onions, garlic and mushrooms in a small sauce pan for 5-7 minutes until cooked to your liking. Once eggs are cooled; peel, dice and mash slightly (my girls like chunky egg salad). Mix the eggs, mushroom mixture and all of the remaining ingredients. Refrigerator and Serve on your favorite bread! DELICIOUS!
