THIS WEEK'S CRAVINGS #81 (EGG RECIPES) and Bacon, Potato & Egg Casserole

THIS WEEK'S CRAVINGS Linky Party #81

Bacon, Potato & Egg Casserole

I made this for my sister-in-laws brunch baby shower and then again this weekend.


Bacon, Potato & Egg Casserole
adapted by me, but found at The Kitchn which was adapted from a recipe from Not Your Mother's Casseroles cookbook

4 to 6 slices thick bacon, cooked and diced
1 onion, peeled and diced
1 yellow bell pepper, cleaned out and diced
1 tbsp minced garlic
1/3 cup sun-dried tomatoes, chopped
2 tsp salt, divided
8 large eggs
1 cup milk
1 tsp fresh-cracked black pepper
3 cups shredded cheddar cheese
1 bag (32 oz) frozen diced potatoes, unthawed

Heat the oven to 350. Lightly grease a 9x13 baking dish with cooking spray.

Pre-cut the bacon into small pieces and the add the bacon to a large skillet and turn the heat on to medium. Cook the bacon, stirring occasionally, until it is crisp. Add the onion, yellow bell pepper, garlic, sun-dried tomatoes, and 1 tsp of salt, and cook over medium heat until all the vegetables are soft — about 5 more minutes. Turn off the heat and let cool slightly.

In a separate bowl, beat the eggs thoroughly and whisk in the milk. Whisk in the remaining teaspoon of salt, and the black pepper. Stir in the cheese, frozen potatoes, and the bacon and vegetables from the skillet. (Don't worry; the frozen potatoes cook just fine!) Pour the whole mixture into the prepared baking dish. (At this point the casserole can be covered and refrigerated for up to 24 hours.)

When you are ready to bake the casserole, bake for 40 minutes, or until the eggs are firm and the top is slightly golden. A knife inserted in the center should come out clean.

Herb & Garlic Deviled Eggs

It's November, yea I know it started yesterday. Well, it's here now whether you like it or not. I LOVE it... Thanksgiving Holiday (lots of cooking & eating) and really I LOVE it because I can start decorating for Christmas (yep, I start the day-after Thanksgiving pulling out all the decorations from the attic) and I can start my holiday baking (this is the BEST part of November & December). I FINALLY have a reason to bake!

Usually I just skip right over Thanksgiving. I mean, we celebrate and all, but I move right on to Christmas celebrations as quick as possible. This year my son and I will be traveling to Oregon for Thanksgiving, I really thought I was okay with splitting up my family for Thanksgiving, but there are always seconds thoughts (yea, it's one of those days). With my 18 year old girls getting jobs and my husband working every day from now til the end of the year withOUT a day off. I didn't think it was fair for my little guy to spend his entire week-off of school at home, bored. So, he and I will be taking a train ride (this is a first for both of us) all the way to Oregon (24 hours, oh my, yes a little worried about that). I hope it's loads of fun and that he has the most amazing time with all his little cousins up there. You can bet I will be baking and cooking away with my mother-in-law and hopefully doing some of my holiday baking to bring home with me on the train. I WILL be bringing an extra suitcase just for my bake goods.

It's National Deviled Egg Day!
Yes, every day of the year is marked for some kind of delicious food & today it's Deviled Eggs.
Deviled Eggs are a great appetizer for Thanksgiving or Christmas.

Herb & Garlic Deviled Eggs
adapted from Kraft Food Magazine

6 hard boil eggs, cut in half lengthwise (the Pampered Chef fancy cutter - not sure the real name)
3 tbsp Kraft Sandwich Garlic & Herb Mayonnaise
1 tbsp mayonnaise (this was used to make it a little creamer)
sprinkle of Herb de Provence & Paprika

Mix yolks and garlic & herb mayonnaise and regular mayonnaise. Mash until creamy. Add this yolk mixture into a sandwich bag and snip the corner. This makes it easy to fill the eggs. Fill all the eggs (leaving none left over) and then sprinkle with spices.

This recipe is takin' from one of my favorite cookbooks Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food. It has totally worked for my kids, especially my son, who doesn't like much of anything. I have been able to sneak pureed sweet potatoes in his Kraft Macaroni & Cheese, pureed cauliflower in his noodles & butter, cauliflower mashed potatoes and even his scrambled eggs (and he has no idea)!!! I now have many secrets from this cookbook that I use in everyday cooking, that I know will stay with me forever.

This Deviled Egg recipe is a perfect way to make this great snack for a Summer Picnic!
I know my girls LOVE it and it's a little bit healthier!

Deviled Eggs w/ Cauliflower

6 large eggs, boiled
3 tbsp mayonnaise
1/2 tsp mustard (we added)
1/4 cup cauliflower (or carrot puree)
1/8 tsp salt
dash of pepper and paprika for presentation

After eggs are boiled and cooled. Cut eggs in half lengthwise and remove the yolks. Put three of the yolks in a bowl and discard the rest (or save for another meal). Add the mayonnaise, mustard, vegetable puree (cauliflower), and salt. Mash together with a fork. Fill each egg half with the yolk mixture and sprinkle with pepper and paprika.

Egg & Sausage Casserole

My family LOVES it! First time I've made an "egg-type" casserole and they went nuts! It was approval from all (and they fought of the left-overs). My husband leaves for work at an awful early morning hour and when the girls woke up they were so bummed that there was only 1 piece left (and try splitting one piece of anything with a set of twins)! One got it and the other one got NONE! This recipe is so easy to make, we all declared that this is a MUST for our next camping trip (motorhome style camping, you need an oven to cook it)!

We love Jimmy Dean sausage, but the girls want to try a few other types of meat (Canadian bacon, regular bacon and ham are the next meats we plan to try in this delicious casserole)!


Egg & Sausage Casserole
adapted from Bob Evans recipe (seen in advertisements)

1 lb Jimmy Dean Sausage roll
2 cups shredded cheese (mixed yellow & white)
1 can Pillsbury Crescent Rolls
4 eggs, beaten
3/4 cup milk
1/4 tsp salt
1/8 tsp pepper

Preheat oven to 425. Crumble and cook sausage in medium skillet until browned. Drain. Line bottom of 9x13 baking dish with crescent roll dough, firmly pressing perforations to seal. Sprinkle with sausage and cheese. Combine remaining ingredients in medium bowl until blended; pour over sausage. Bake for 15 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot.

Not another Deviled Egg recipe? Yep, but this one is oohh so different and very unique. I have to admit (I do NOT eat these, not today, not in the past and there is no plan in the future either!) I HATE Hard Boil Eggs, I HATE Over-Easy Eggs and I HATE Egg Salad! But, my family LOVES them all! I don't know how that happened, but it just did. So, let me just say I make a lot of egg recipes, I just don't eat a lot of egg recipes. I do like eggs but only 2 ways; scrambled or over hard!

When I saw this recipe over at Sparkle Pants Girl, I just knew that my husband and kids would LOVE these, and I was soooo right! I really don't think they will ever let me make another Deviled Egg recipe besides this new one. They said the bacon and the cheese inside was just out of this world. My one daughter Kayley was like "MOM. wow these are so good. Can I have another one, and another and can't I just have one more?" and she did NOT want to share them with her dad. She told him "no, these aren't that good, you don't need to try them". Well, he did try them and then guess what. He asked if he boiled a few more eggs, could I make some more. (and yes, I did)!

Can I just tell you, I only came across the recipe like 4 days ago and I've already had to make 2 batches, okay now 3 times (made it again last night for Egg Salad Sandwiches). I would say that makes this is a winner recipe! What have you made lately with EGGS? I am excited to see all the Egg Dishes linked-up this week. I need a new Egg Casserole for Church on Easter Sunday we are having a Breakfast Potluck and I am gonna be lookin' here for a scrumptious recipe!


Here it is the easiest Deviled Egg recipe in town and it's so delicious too (according to my family)!! And they are really good judges, believe me they judge ALL my food! This will for sure be on my Easter menu this year. What is your very special, one of a kind, out of this world EGG recipe? LINK IT UP!

Bacon & Cheese Deviled Eggs (or Egg Salad Sandwiches)
original recipe from Sparkle Pants Girl

6 hard boiled eggs
1/3 cup of mayonnaise (or maybe a little more if needed)
1-1/2 tsp mustard
3 or 4 strips bacon, finely chopped
¼ cup cheddar cheese, finely shredded
a few sprinkles of green onions, finely chopped
paprika
freshly ground pepper

Hard Boil Eggs first, and let cool. Cut eggs in half lengthwise. Mix together egg yolks, mayonnaise, mustard, cheese, bacon and green onion into a bowl. We use a potato masher and mash the ingredients together to get the right consistency. If you need too add a little more mayonnaise, go for it. Sprinkle the eggs with a little paprika and freshly ground pepper and you got yourself a tasty appetizer!

My girls saved the leftover yolk mix and made an egg salad sandwich and said "this is how we should always make our egg salad with bacon and a little bit of cheese". I think I will go boil some more eggs for Egg Salad Sandwiches this week, using this NEW recipe.

Bird's Nest - Eggs & Potatoes (GLUTEN-FREE)

Today, is the day! One of my twin daughters has to officially start eating Gluten-Free (at least for now), until we have a for sure diagnosis (celiac or just an intolerance to gluten). But, starting today we will be going down an unknown path of GLUTEN-FREE. This recipe was so very simple and yet we were so happy to find out that it was all GLUTEN-FREE.

Bird's Nest (Eggs & Potatoes)

1 to 2 eggs
1 cup of frozen hashbrown potatoes
1 - 2 tsp of Grandma's Salt

Spray skillet with non-stick spray and heat. Add in frozen hashbrowns and begin to brown. Once they are completely cooked, spread them all out to the outer sides of the pan leaving a round circle in the middle of the pan. Crack egg, add to the pan; sprinkle with Grandma's Salt (or other seasoning) and begin cooking. For an over-easy egg let cook completely on one side and flip for just a second; then serve.

Scrambled Eggs with (hidden) Cauliflower (GLUTEN & DAIRY FREE)

Simple breakfast recipe, that adds in an extra veggie to my kids meals so that I can rest assured they are getting in enough veggies for the day. I purchased a wonderful cookbook (Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food) a while ago, when I was having a really hard time getting my son to eat anything that was remotely good for him. This cookbook saved my life at the time and left me with a few tricks up my sleeve that I still continue to this day. This is one of my favorites, adding in puree cauliflower to scrambled eggs, I also add cauliflower to mashed potatoes and sweet potatoes to Kraft Macaroni & Cheese.


Scrambled Eggs w/Puree Cauliflower

4 eggs
1/4 cup puree cauliflower (I store these little cups you see in the photo in my freezer, microwave them for 40 seconds and have them on had at all times)

Add 4 eggs in a bowl, add in your puree cauliflower, whisk and scramble them up on the stove top. They can NOT taste the cauliflower at all, and if you think they can, add in a little graded cheese and your good to go!


I am excited to do my first review for CSN Stores. Check out the cool Le Creuset line. I received one of these for Christmas from my husband and I have yet to use it, but I am excited about finding a recipe to cook in my new pan!

Deviled Eggs (GLUTEN-FREE)

This is the second deviled egg recipe I will be sharing here on MOMS CRAZY COOKING, click here to see the first deviled egg recipe (which is equally good, but contains ranch dressing which has Gluten, which is not good for my daughter). Thus, came the search for another pleasant-tasting deviled egg recipe. And here it is, I made our first batch and I can tell you they didn't last long.
 

Deviled Eggs (GLUTEN-FREE)
found over at Gluten-Free Homemaker

Cut 6 hardboiled eggs in half lengthwise.  Scoop the egg yolks into a small bowl. 

Add to the egg yolks:
1 tsp vinegar
1 tsp mustard 
2-1/2 tbsp mayonnaise
1/4 tsp salt

Beat well until the yolks are smooth.  You can spoon some of the yolk into each white, I use my trusting little melon scooper. If desired, sprinkle with paprika just before serving.

SPIKE REVIEW AND GIVEAWAY: Mushroom Egg Salad

Since then we have been experimenting and trying new recipes (watch for more to come) and adding SPIKE Magic Seasoning where we see fit! (Not only do I cook, I have 17 year old twin daughters who love to get in the kitchen too). Just yesterday my daughter was making simple scrambled eggs and she added the SPIKE Magic Herb Seasoning and she loved it.

This first recipe we created was just another one of our every day Egg Salad recipes, one of my daughter just LOVES to make. As soon as we run out, she is in the kitchen whipping up another batch. We decided to revamp it a little and add in some SPIKE! And I can tell you that it gave it that WOW-POP of flavor to make it just a little bit extra special. I know adding SPIKE to this recipe will be a permanent change.



Mushroom Egg Salad with SPIKE

5 Hard Boiled Eggs
2 tsp Minced Garlic
2 tbsp chopped Onions
1/2 cup Mushrooms, diced
1-1/2 tbsp Sour Cream
1-1/2 tbsp Mayonnaise
1/2 tsp Mustard
2 tsp of SPIKE Magic 5 Herb Seasoning

First hard boil large eggs, and cool. Meanwhile saute' onions, garlic and mushrooms in a small sauce pan for 5-7 minutes until cooked to your liking. Once eggs are cooled; peel, dice and mash slightly (my girls like chunky egg salad). Mix the eggs, mushroom mixture and all of the remaining ingredients. Refrigerator and Serve on your favorite bread! DELICIOUS!

Nest Egg and HOLIDAY HOTTIES "Healthy Recipes for the Holidays"

We are starting another diet/healthy eating in our home, yes around the Holiday's! It's usually just me and the girls and the boys just tag along and eat whatever they want. But since I am in charge of cooking, I get to cook whatever I want. So, we will be trying to be a little bit healthy for the next few months. I joined a great group a few months ago Sisterhood of the Shrinking Jeans and they have just begun another challenge Holiday Hoedown. It's a wonderful place for motivation, meeting new people and lots and lots of ideas and encouragement along the way with challenges to keep you on your toes. Read here about the past challenge called Shrinkvivor and this time my team is called Holiday Hotties.

Don't worry though, I still have LOTS of treats to share with you! I will be baking and giving away tons of candy & cookies to family and friends (just like always). So, there will be plenty of recipes shared here healthy, non-healthy and lots and lots of treats too. I will also be doing a 12 days of Christmas Goodies Blog Hop Party, so make sure you watch for that starting December 11, 2010.

Onto today's healthy breakfast, that my twins just love. It's fun, easy and delicious.
Nest Egg
1 egg
1 piece of bread

Heat a skillet and spray with Pam. Cut a circle out of a piece of bread and lay in the pan; crack the egg into the middle of the toast, sprinkle with Seasoning Salt (while cooking not after) and cook. If you like over-easy cook more on one side then the other, if you want the yolk cooked through, cook a little longer on each side.

Avocado & Spinach Omelet

My girls love for me to make them breakfast everyday before school, if I just throw together a bowl of cereal or something simple. I see their sad faces and since my twins just turned 17 years old, I am cherishing every moment as I know these mornings are numbered and before I know it they will be off to college, then off to live without their mommy and I will wish that they were back at home. So, each day I wake up I really try to be creative and innovative in making them something healthy and special. They've had this 2 more times since I originally made it, we just vary the vegetables a little depending on what we have on hand. Enjoy this delicious colorful omelet and kiss those little kidlets before they grow-up! :-)
Spinach & Avocado Omelet
2 eggs
Handful of Fresh Spinach Leaves
1 Avocado
1-2 tbsp favorite cheese (we use whatever we have on hand)

(variations: this morning we used spinach and broccoli, be creative and enjoy)

Add a little olive oil in pan and then add in the Spinach Leaves cook for 3-5 minutes until done; remove from pan. Beat eggs with salt & pepper (we use Grandma's Homemade salt recipe), place eggs into the same skillet over medium heat; swirl with spatula, then let bottom set but not brown. Flip once and the add in spinach leaves, avocado and 1-2 tbsp of cheese, fold and let cheese melt. Serve & Enjoy!

Lemony Egg Salad

Just a good ole' Egg Salad receipe. (We've been making this for so long, I have no idea where we found it or which magazine to give credit to; if someone knows where this recipe came from please let me know and I will give credit).
