Healthy Cobb Salad
adapted from Jillian Michaels People Magazine Recipe
1/4 cup yogurt
1 tbsp red wine vinegar
1/8 tsp ground black pepper
4 slices turkey bacon, diced
8 cups Romaine lettuce
1 grilled chicken breast
2 cups cherry tomatoes, halved
1 hard-boiled eggs, peeled & quartered
1 ripe avocado, peeled and thinly sliced
Whisk yogurt, vinegar and pepper until smooth. Cook turkey bacon until crisp; diced. Tear up lettuce and throw all remaining ingredients into a bowl, drizzle with dressing. Serve and Enjoy!
