Homemade Family Pizzas

I am super thrilled about the Blogger iPhone app (I know I am behind the times)! I am sure it's been out way longer then I care to admit but I am just thrilled that I have it now and believe me this will increase my blog posts tremendously.

I take all my photos on my iPhone and I do use iCloud but sitting down on a computer and getting all that stuff from one place to the next is just too much work (okay, not really) but it seems like it just never gets done.

Here we go with my first iPhone post.

Tonight we made family pizzas, we haven't done this in a long time. There really isn't a recipe, only a few tips.

We had Spaghetti last night, which is why homemade pizzas were on the menu for tonight. We like to use left-over spaghetti sauce for pizza sauce. It's great because it already has some ground-up hamburger meat in the sauce (I gotta get in the protein whenever I can, my son thinks he is eating cheese pizza, but I know he is getting a little something extra), we just add in a small can of tomato paste into the left-over spaghetti sauce to thicken it up, use that as the pizza sauce and presto instant pizza sauce.

One of my daughters and my niece created their pizza masterpieces first.  My son and husband wanted nothing to do with making them, so I made theirs for them, but they sure enjoyed eating them.  Everyone agreed they were delicious.

Pizza Bites

It's been a few months now, with several plane trips back and forth from California to Missouri, but my daughters are away at college and having the time of their life. I will admit facebook and txt'ing make it a whole lot easier. And God knew what he was doing when he blessed me with twins, because I have one twin who calls me almost everyday (thank GOODNESS) and I have another twin who I hardly hear from at all. Good thing her sister keeps me up to date on all the happenings around there. I think I've talk to them almost every single day in some way shape or form, txt, email, or facebook. It sure makes being 1837 miles away so much easier.

Here they are enjoying their very first ride down the slopes. These California girls are learning all about their first winter, not just the fun on the slopes, but the 25 degree days, tornado warnings, and finding their car covered in snow in the mornings. Let the FUN begin, they are experiencing their first ever White Winter.

Before my daughters left I was trying to make all the things they wanted and one of them had found this on Pinterest and begged for me to make it, it was one of those things I keep putting off, but I did finally make it for her before she left and she loved it.

Pizza Bites
adapted by me, recipe found at The Gunny Sack
original recipe from Pillsbury - Appetizers Dec 2005

2 - 3 cans Pillsbury Buttermilk Biscuits (10 biscuits per can)
approx 56 pepperoni slices (or use sausage, pineapple or just cheese for my little guy)
1 small block of cheese (Colby Jack works great), cut into small squares
1 egg, beaten
1/4 cup Parmesan Cheese
Italian seasoning
Garlic powder
Your favorite Homemade Pizza Sauce (works great with left-over spaghetti sauce too)

First flatten out all biscuits. You can use a small rolling pin or even just your hand. Layer on a small tsp of sauce, a pepperoni (or sausage, pineapple or whatever filling you like), add in a chuck of cheese and then fold. You will fold like a square (gather the bottom, then both sides, then the top), you will end up with a round'ish-square'ish bundle.

Have a 9x13 glass baking dish ready with non-stick spray and then line up the pizza bites into rows in your baking dish. Brush the rolls with the beaten egg and then sprinkle with Parmesan Cheese, Italian Seasoning and Garlic Powder. Bake at 425 degrees for 18-22 minutes. When dough is done and cheese is melted they are ready to go.

You can reserve some pizza sauce to serve as dipping sauce, or since sauce is already inside they are ready to go. My kids dip them in ranch. Pizza and Ranch they just go together.

Fire Roasted Sausage Pizza {Hodgson Mill} & {GIVEAWAY}

VOTING HAS BEGUN (my pizza is on page 3), Please click HERE to come vote for this delicious PIZZA!

Today, I am here to share with you a "Build a Better Pizza" Facebook Recipe Contest for Hodgson Mill. I am so excited to have gotten the opportunity to create a HEALTHIER pizza crust. The crust was made with 50% Hodgson Mill Whole Wheat Flour and I can tell you that with out a doubt this pizza was delicious in every way. You couldn't even tell it was whole wheat. I don't know why we don't make pizza crust like this every time? Please read below how you can VOTE for me... and enter in the $25 prize package from Hodgson.

We started with the homemade crust and besides the little bit of time needed for rising, the recipe is a cinch to make (I even cleaned out the attic and made the homemade pizza at the same time, just multi-tasking at it's finest). I also included a Homemade Fire Roasted Pizza Sauce, which I was able to sneak in some meat into for my picky son who is a "cheese only pizza" kind'of guy, (score, and extra point for mom). We then topped it off with my favorite Sausage and Black Olives for my half and my sons half was topped with plain ole' cheese (and he loved it too and had no idea I snuck in some protein in the sauce UNDER the cheese).

VOTING JUST STARTED: Come vote for me!  Please head on over to the Facebook Fan Page for Hodgson and VOTE FOR MY PIZZA! Anyone who votes will be automatically entered to win a $25 prize package of your very own. GOOD LUCK and THANK YOU in advance for your vote.

The more votes I receive from all of you (MY AWESOME READERS), the better chance I have of winning this VERY COOL contest! (Voting ends at 5pm CST on October 30, 2012)

Now, let's get on with this delicious recipe. We started with the easy whole wheat crust...

Fire Roasted Sausage Pizza
created by me, Tina Hudgens

garlic butter pizza crust
1-1/8 cups warm water
1 pkg (8.75 gram) Hodgson Mill Active Dry Yeast
1 tbsp Honey
1-1/2 tbsp olive oil
1-1/2 cups Hodgson Mill Whole Wheat Flour
1 cup Hodgson Mill Organic Naturally White All Purpose Flour
1 tsp Kosher Salt
1 tsp garlic powder
1/2 tsp of each Basil, Oregano and Italian Seasoning

5 tbsp butter
1 tsp minced garlic
1/4 tsp red pepper flakes

2 tbsp Parmesan cheese

In a large bowl combine warm water, package of yeast, honey and olive oil. Whisk and then let it sit until a foamy top forms. Set your timer for 10 minutes, and wait. When you see the foam, add in the flour, kosher salt, garlic powder and the three spices, stirring with a wooden spoon, then kneading with your hands until dough is formed and not sticky (you can add in an extra 1/4 cup flour if needed). Take a tbsp of olive oil and rub into a clean bowl and stick your kneaded dough into this rolling it around a few times. Cover with a towel and place in a warm place to raise for 1-1/2 hours. (this is when you get to go clean out the attic, like I did)

As soon as you start your timer on the dough rising, it's best to place your COLD pizza stone into a COLD oven. Yes, place it in a cold oven, then turn on the oven to 500 degrees and let it sit in there until you are ready to cook your pizza.

(NOTE: begin making your pizza sauce now, if you haven't already so that it can simmer on the stove for 45 minutes along with your rising of your crust - I love to multi-task!)

Once your dough is ready, lay out flour on a flat surface and begin kneading some more. It's best if you have a pizza board to place this on, because it's almost impossible to move it to the hot pizza stone in the oven without one. Using a rolling pin or your hands form your desired crust, we like it traditional round. Once you have your desired shape, place a towel over crust and let rise in a warm place for 10 additional minutes. (This dough could easily make two smaller thinner crust pizzas just by dividing the dough in half. We choose to make one super duper thick pizza crust and I can tell you we LOVE LOVE LOVED the thick crust.)

Now it's ready for the garlic butter sauce. Melt 5 tbsp butter and mix the 1 tsp or minced garlic into the melted butter. Apply to the pizza dough, once complete sprinkle on the red pepper flakes and the Parmesan cheese before spreading on the pizza sauce.

Fire Roasted Pizza Sauce
created by me, Tina Hudgens

1 tbsp olive oil
1 tsp minced garlic
1/2 cup crushed tomatoes (we used Tomatoes and Green Chilies combined)
1 cup Fire Roasted Tomato Sauce
1/2 tbsp sugar
1/2 tbsp honey
1/4 tsp of each Oregano, Basil, Garlic Powder, Kosher Salt, Pepper and Italian Seasoning
1 whole bay leaf
1 cup cooked sausage, crumbled very fine (to sneak past the little boy)

1 small can tomato paste (use to your liking & thickness)

Throw all of the above ingredients (except tomato paste) into a sauce pan and cook until it boils. Lower to simmer and cook for 45 minutes on simmer. Once your crust is ready to go, then take your pizza sauce and mix with the desired about of tomato paste to your liking (I used the whole can for all of my sauce, I don't like running sauce). The sauce recipes make enough for about 2 to 3 pizza crusts depending on how little or how much sauce you like.

FREEZER TIP: When I make this sauce, I like that it makes extra and I can freeze for another pizza day. Here is what I do, take a wide mouth cup and fold over a ziploc bag (this saves you from a mess), then take 1 cup of sauce and pour into the baggie, then it's ready to freeze into individual servings. (I love having extra homemade pizza sauce on hand).

And now this wonderful delicious pizza is complete, ready to go into the oven. Change the oven degrees to 350 and then place the pizza on the hot pizza stone in the oven. Cook for about 25 - 30 minutes and you will have delicious pipping hot pizza, that you made from scratch. ENJOY!

Flour Tortilla (BBQ Sauce - Chicken Pizza)

Making a quick pizza from a flour tortilla and the left-over shredded chicken I have from making a whole chicken in the crock pot... life couldn't be better.

This can be made for lunch, dinner or just an after-school snack. Which talking about after-school, my kids only have 7 days left of school! I am doing the happy dance. My little boy will be moving on up to 8th grade and my girls will be graduating High School! WHOOT!! WHOOT!!

Flour Tortilla (BBQ Sauce - Chicken Pizza)
created by Tina Hudgens

2 flour tortillas
1/4 cup BBQ Sauce
1 cup shredded chicken
1/2 cup shredded cheese (whatever kind you wish)

Heat oven to 400. Spread BBQ sauce on the tortilla and then layer with toppings (feel free to add extra toppings if you wish). Cook for about 10 minutes and then slice & serve.

Apple Pizza

This was one of those OH MY! desserts, a MUST keep recipe and one that will forsure make it into my next family cookbook/scrapbook. I started the recipe with a little help from another recipe and then I wanted to incorporate the awesome product I received from Ducan Hines and Comstock Fruit Fillings and the recipe just came to me, just like that (as I was baking/making it). I served it too all my girlfriends and they loved it too.

Apple Pizza
original idea came from a Pampered Chef recipe; all ideas below are mine

1 pkg refrigerated sugar cookie dough
1 pkg cream cheese, softened
1/2 cup packed brown sugar
1/4 cup peanut butter (we use chunky, cuz it's what we like)
1/2 tsp vanilla
1 can apple pie filling

for crumb topping
1/4 cup flour
1/4 cup sugar
2 tbsp butter
1/2 cup peanuts, chopped

Vanilla Glaze Topping, made by Ducan Hines

Preheat oven to 350. Shape cookie dough into a ball and then roll out into a circle on a pizza pan. Bake 16-18 minutes of until light golden brown. Remove from oven and cool for 10 minutes.

Combine cream cheese, brown sugar, peanut butter and vanilla in a small bowl. Spread mixture over pizza. Open can of Comstock Wilderness Apple Pie filling and spread ontop of the peanut butter mixture and then top with the crumb topping. To make the crumb topping mix flour, sugar, butter and peanuts with a fork until crumbly. Sprinkle this on top and then return to oven and bake until apples are bubbly about 15 minutes.

Cool for a few minutes before adding the vanilla glaze topping. Cut into wedges & Serve warm!

Turkey, Cranberry & Brie Pizza

I have been waiting almost a year to make this pizza. I found it over at Delightful Country Cookin' in January of this year. I knew this would be the perfect after Thanksgiving Left-Over meal. She found this pizza over in New Zealand. Kristin says "This is a pizza unlike any you'll have ever tasted before (unless, of course, you live in New Zealand)." This is so true, and a pizza I know I will probably make ever year with my Thanksgiving left-overs.

I changed it up a bit and wanted to use left-over turkey instead of chicken (like she did). I am sure either way it is delicious. I only think of cranberry sauce at Thanksgiving time, I guess that's why I waited until now to make this pizza and with the scrumptious homemade cranberry sauce I made last week and with the left-over Turkey (that I am sure that all of you still have hanging around) you only need to add a little brie and mozzarella and wham, insist Turkey, Cranberry & Brie Pizza. I knew this would be a delicious, and it was. I am so glad I saved this recipe all year.

Turkey, Cranberry & Brie Pizza
adapted from original recipe found at Delightful Country Cookin'

Favorite Pizza Crust (store bought or homemade)
1/2 cup of Cranberry Sauce (we used homemade)
1 to 2 cups of Turkey, shredded
2 to 4 oz of Brie Cheese, diced
1 cup Mozzarella Cheese, shredded
1 tbsp Rosemary

First prepare your pizza crust according to directions. Spread cranberry sauce all over the crust. Shred your left-over turkey and sprinkle on top of the cranberry sauce. Take the diced up the brie and spread evenly and then top that with some mozzarella cheese. Lightly sprinkle  rosemary over the top of the cheese and bake according to your pizza crust's instructions. Simple & Delicious!

Raspberry & Nutella Pizza: Secret Recipe Club

Secret Recipe Club: Extra Post
Raspberry & Nutella Pizza

This month is my second month in the Secret Recipe Club and my second post for today! As stated in my first post today Cucumber Salad, I am now a Co-Host for SRC Group B and this morning someone was left-out, abandon and forgotten by the original blogger who was given her blog. And well, we don't want anyone left-out. I needed to eat some lunch and decided that I could make a quick lunch from a breakfast recipe on her blog, it turned out to be more like a dessert, but it was delicious either way! And well, today this WAS my lunch! (cleaning out my son's room for the end of summer cleaning... busy, busy!) The blogger that was left-out was My Emu is Emo.

Secret Recipe Club

If you've never heard of Secret Recipe Club then you are in for a treat. It works like this, all of us below that you see linked up were assigned a blog at the beginning of the month, we read, get to know and then bake/cook from that blog (but, it's a SECRET), we know someone is looking at our blog, but we don't know who until reveal day, TODAY! If you'd like more information on joining the SRC, then hop on over to our Secret Recipe Club Blog and check it out! And this recipe is from a blog I adopted TODAY, made the recipe TODAY and blogged about it TODAY. So, I didn't get to know this blogger as well as some of the others, but I can't wait to look over her blog in the next few days.

I am making her Nutella Pizza, but I also want to try her Cheddar Raspberry Biscuit Loaf, and since I went Raspberry picking this past weekend I will be trying that recipe very soon. I did not have time to make the fresh pizza dough for the Nutella Pizza, so I used a store bought pizza dough.

Raspberry & Nutella Pizza
adapted from My Emu is Emo

Pizza Dough, homemade or store bought
Nutella
Cinnamon & Sugar
Sprinkle of your Favorite Nuts (I used pecans)
Coconut (on original recipe, but I left out, cuz I don't like coconut)

Bake pizza dough as directed. Sprinkle on a mixture of cinnamon and sugar before adding a thin layer of Nutella. Sprinkle with nuts, coconut (if you wish) and then top it off with fresh raspberries! (and well since mine turned into a dessert instead of lunch I added some white chocolate to finish it off) It's Beautiful and It was Delicious!!!

Thank You My Emu is Emo for letting me hop around your blog today, and I looking forward to checking it out some more! The Secret Recipe Club is so sorry your post was not up this morning as it should have been!

Tyson BBQ Chicken Pizza with Homemade BBQ Sauce

My kids LOVE pizza! What kid doesn't? Homemade Pizza is even better. We have been enjoying making homemade pizza's for some time now. We are always coming up with new creations and today's post is our latest. My twin daughters love Shaved Asparagus Pizza, we make it quite often, and BBQ'ing Pizza is another one of our latest craves. But my 12 year old son, is Cheese-Only! When I was asked to do a review for Food Buzz with Tyson Grilled & Ready Chicken, I was thrilled to create a brand new pizza recipe.

We often use ready made pizza crust, just as we did this time. One of my daughters is gluten-free (not by choice) and I buy her gluten-free crust, and then regular crust for the rest of the family. This recipe is so simple and the taste was out-of-this world. I have to be honest I have never purchased the Tyson Grilled & Ready Chicken, but I was so impressed with the taste. I've made 3 more items with this chicken since and it will be a permanent staple in our house from now on (just bought my second bag this week).

We wanted to set out to create a BBQ Sauce Style Pizza and we succeeded beyond our wildest dreams. Even as we were creating this pizza my daughters were wondering if this was really going to taste like the BBQ pizza's they order from most restaurants, and it did! We were all so happy with the results. THANK YOU Tyson Chicken & the Food Buzz Tastemaker program for showing us this new product.

We started with an ole' family recipe of Homemade BBQ sauce to dip all the chicken strips in before making the actual pizza's. First we covered the pizza crust in olive oil and garlic, topped it with homemade Pizza Sauce, cheese and the Tyson Grilled & Ready Chicken Strips covered in the Homemade BBQ Sauce. The BBQ Sauce Pizza was absolutely delicious. A new family-favorite.

Chicken Pizza with Homemade BBQ Sauce
from Tina Hudgens

4-6 individual Pizza Crusts (use your own favorite crust)
1/4 cup of olive oil
1 tbsp minced garlic
Homemade Pizza Sauce (see recipe below or use your favorite jar of pizza sauce)
1/4 cup shredded pizza cheese (for each individual pizza)
1 tsp of parsley (per individual pizza crust)
Homemade BBQ Sauce (see recipe below)
4-6 strips of Tyson Grilled & Ready Chicken (per individual pizza crust)

Homemade Pizza Sauce
1 (6oz) can of tomato paste
1/2 cup olive oil
1/4 cup water
1 tbsp minced garlic
1/4 tsp Oregano
1/4 tsp Basil
1/2 tsp sea salt

In a small bowl add tomato paste then add in olive oil a little at a time mixing completely. Add water next a little at a time mixing completely in between each pour. Add in the remaining ingredients and mix well. This is your homemade pizza sauce that will be spread on the pizza crusts.

Homemade BBQ Sauce
1 cup ketchup
1 tbsp Worcestershire Sauce
1 tbsp vinegar
1 tbsp brown sugar

Whisk all together and mix with chicken strips. This homemade BBQ Sauce will be used for the chicken and to drizzle on the pizza after the entire pizza is put together.

PIZZA directions:
Heat oven to 350. Mix together 1/4 cup olive oil and 1 tbsp minced garlic; brush onto both sides of your favorite pizza crust. Take the pizza crust and spread on one side the Homemade Pizza Sauce (see above for recipe). Add about 1/4 cup of your favorite pizza cheese (more or less to your liking). Place the Tyson Grilled & Ready chicken strips, that have already been covered in the homemade BBQ Sauce onto the pizza on top of the cheese; sprinkle with a little parsley and drizzle the remaining Homemade BBQ Sauce on top of the pizza. Bake for 15-20 minutes (or what is recommend for your pizza crust) and serve hot! This is a one-of-a-kind Chicken Pizza with Homemade BBQ Sauce.

Brie and Cranberry Pizza

What a delicious cheesy breakfast to wake up to. Last weekend I made this for myself and one of my daughters (the other twin was very jealous, because she is now on a gluten-free and dairy-free diet and yes I felt like a horrible mother... but I am just trying to use up the food we do have in the house, with some recipes I already had planned). We did enjoy this recipe very much and I do hope that I will be able to make it again soon.(maybe there is a way I can make it safe for her.. I am sure going to try) And of course I will be trying all kinds of other dariy-free and gluten-free recipes in the weeks to come (yes, I will be posting them too!) On Friday, I spent the better part of 8 hours looking at gluten-free/dairy-free blogs and printed out over 60 recipes that I know my entire family would love. The next step is to just get in the kitchen and give it a go! Wish me luck! And I hope some of you can re-make and enjoy this delicious breakfast!

Brie Cranberry Pizza
from Pillsbury

1 can Pillsbury Crescent Dinner Rolls
1 (8oz) pkg Brie cheese, rind removed, cut into 1/2" cubes
3/4 cup canned whole berry cranberry sauce
1/2 cup chopped pecans

Heat oven to 425°F. Lightly oil 12-inch pizza pan or 13x9-inch pan with olive oil. Unroll dough; separate into triangles. Place triangles in oiled pan with tips toward center (it's kinda hard to make it a complete circle, but do your best). Press out dough with hands. Bake at 425°F. for 5 to 8 minutes or until light golden brown.

Remove crust from oven. Place cranberry sauce in small bowl; stir to break up pieces. Spoon cranberry sauce by teaspoonfuls evenly over crust. Sprinkle cheese and sprinkle with pecans. Return to oven; bake an additional 6 to 10 minutes or until cheese is melted and crust is golden brown. Cool 5 minutes. Cut into wedges or squares and Serve.

THIS WEEK'S CRAVINGS #11 and Cheesy Hamburger Calzone

THIS WEEK'S CRAVINGS Linky Party #11
Pizza - Pizza - Pizza

The second week of January is National Pizza Week. Who says so? The American Food Calendar, that's who! I just think it's amazing to have National Food Days, kind'of fun and just a little crazy, but cool none-the-less! It's a weird time of the year for PIZZA, I would think summer time would be more appropriate, not the cold days of winter. But, pizza is good any time of year.

I made this really awesome BBQ Pizza last year and you MUST check it out if you are a PIZZA Lover! It is now our ALL-TIME favorite way to make pizza at home. Since, I had already blogged about our FAVORITE way to have pizza, I had to try something new for today's post, a PIZZA theme.

We started with this Pizza Sauce Recipe that we came across accidentally, but that we now use for ALL pizza's made at our home. And looked through piles of recipe books before we picked this simple, easy and just plain ole' delicious Calzone Pizza.

Cheesy Hamburger Calzone
adapted from Pillsbury Classic Cookbooks Crescents Biscuits & More (March 2004)

Favorite Pizza Sauce (or from a jar)
1/2 lb hamburger meat (or you can use sausage, pepperoni or your favorite topping)
1/3 cup chopped onion
1/4 cup chopped red bell pepper
1 can Pillsbury Grand refrigerated biscuits
1/2 cup shredded cheese

Heat oven to 375. In skillet, cook meat, onion and bell pepper over medium heat 10 minutes, stirring frequently, until meat is no longer pink; drain. Separate dough. On ungreased large cookie sheet, press each biscuit into round disk. (my only complaint is that they are very small calzones, but would be great for lunch size pizza's) Top half of each biscuits with sauce, meat mixture and cheese to within 1/2 inch of edge. Fold dough over filling; press edges firmly with fork to seal. Bake 12 to 15 minutes or until golden brown. Serve warm calzones.

THIS WEEK'S CRAVINGS #10 and Shaved Asparagus Pizza

THIS WEEK'S CRAVINGS Blog Party #10
GET HEALTHY Recipes

It's that time of year! Time to check yourself and see if you are HAPPY with those few extra pounds you put on last year or are you ready to get a fresh start and finally get them off! I can tell you I am SO ready to shed these extra pounds. I am not starting off this year on a GO-GET'EM-ATTITUDE. I have an entire house to clean (top to bottom, from my 19 family members staying over for a week, and YES we had a blast); I STILL have not taken down Christmas (I think this is the longest in history for my house); and I am SO SICK (I don't even want to get out of bed) and lastly I am over my head at work from taking the last 2 weeks off for my family cruise (which was alot of fun too!) and the 2nd week was full of Disneyland, Universal Studios and Family Galore! I just need ONE more week and then I will start the new year! (By next weekend I hope to be in a much better place)!!!

Here is a FAVORITE recipe of my twin daughters. They LOVE LOVE to make this pizza anytime day or night! If we have the stuff handy, then for sure this recipe is on the top of the list. It's quick, easy and very healthy!

Shaved Asparagus Pizza
Favorite Pizza Dough
1/2 pound Asparagus
1-2 tomatoes, thinly sliced
1/4 cup grated Parmesan Cheese
1/2 pound Mozzarella Cheese, shredded or sliced
2 tsp olive oil
1/2 tsp Sea Salt
Black Pepper
1 Scallion, thinly sliced

Preheat your oven to 500, and use a pizza stone if you have one. Prepare asparagus, use a vegetable peeler creating long shavings of asparagus. Toss peelings with olive oil, salt and pepper.  Roll or stretch dough or used premade. Sprinkle dough with both cheeses; pile on the asparagus and scallion Bake for approx 10 minutes.

BBQ Pizza

BBQ Pizza (at the birthday party). Here is another recipe from my girls birthday party! (I made so MUCH food it's taken me two weeks to get you all the recipes). This was our FIRST attempt at BBQ Pizza's and it won't be our last. It was a lot of fun and they turned out FABULOUS!!!

For this first attempt we purchased pre-made pizza dough at a local market called Fresh n' Easy. We let the dough get to room temperature and then split the dough in fourths (this way we'd have small dough for more individual sized pizza's). But actually even splitting them in fourths (they could have been shared by two people).

We made a homemade pizza sauce, but store bought could be used too. I also set out Pesto and Alfredo sauce to make a specialty pizza. We cooked up the toppings that need to be cooked ahead of time and had them all set out for the girls to create their own master piece pizza.

I had five recipes that I had cut out (yes, really five) plus the help of my good friend who had made them once before. I read all the recipes and came up with a combination of all of them together. I will be making these again soon and doing some more experimenting along the way (maybe even trying homemade dough next time). And, of course I will post all about it!

BBQ PIZZA

1. Leave dough on the counter to bring to room temperature.Toss dough with your hands until you have it at the desired size and thickness. (this is best done with dough that is not fresh out of the refrigerator. ) They don't exact come out perfectly round, but none the less they are fun fun fun!
2. Sprinkle a cookie sheet with olive oil and a little bit of spices (basil, red pepper or whatever you wish). Brush and/or Dip each pizza dough in the olive oil mixture. You will need to keep adding more after each dough depending on how many you make. (Do not add too much olive oil because they are too hard to BBQ)
3. Heat the BBQ to medium heat or lower. It may need to be turned down so that the crust does not burn while cooking. The trick here is to cook ONE side of the dough completely and then turn the dough over and cook only for a minute or two, just so that the dough is no longer sticky. (Reason being, is that after you add the topping's on the COMPLETELY done side, the UN-DONE side will be the side you lay back down on the BBQ to finish cooking and to melt the cheese)
4. Once pizza doughs are finished the assembly line can begin. (The doughs can be BBQ'd hours before a party, which will save you alot of time after your guests arrive). We layed everything out in the kitchen and gave each person a pizza dough on a cookie sheet and let them create their very own pizza masterpiece. (Remembering they need to load up the COMPLETELY DONE side of the dough, so that when they take it back to the BBQ the NOT-SO-DONE side will then be layed onto the BBQ to finish cooking.) Once they were ready they walked their pizza out to the BBQ CHEF (which in this case was me... and I am NOT the usual BBQ'er). We placed all the pizza's on the BBQ the dough finishes cooking and the toppings are hot and the cheese melts. Out comes a "PERFECT BBQ PIZZA"
