Christmas NERD Frosting Fudge




We started making this fudge last year with our Peppermint Crunch Frosting Fudge and it's my favorite fudge to make and with SO MANY combinations, here is a sneak peak of all my fudge recipes. It's easy, it's simple, it's amazing and it's super duper delicious. What more could you ask for in a FUDGE ?!?! And if you or your kids LOVE NERDS, this fudge is out of this world.



Christmas NERD Frosting Fudge
recipe adapted by me , but found at Cookies & Cups

1 can of Vanilla Frosting (16 oz)
1 (12 oz) bag white chocolate chips, or 1 lb White Melting Chips
1 large box Christmas NERDS

Lay down wax paper in a 9×9 or 8×8 pan, depending on the thickness you desire for your fudge. Melt you chips in the microwave, as soon as they are melted, stir in your entire can of frosting. Once combined fold in your candy. Spread into prepared pan and chill for 30 minutes. When firm, cut into squares. Serve or store in an air tight container.

Pumpkin Spice Fudge

I hope you are enjoy these delicious Pumpkin recipes, it's that time of year.

Pumpkin Spice Fudge
recipe found over at Aunt Peg's Recipe Box

2 cups sugar
1 cup brown sugar, packed
3/4 cups butter
2/3 cup evaporated milk
1/2 cup pumpkin puree
1-1/2 tsp Pumpkin Pie Spice
1 (12 oz) pkg white chocolate chips (or white chocolate melting chips)
1 (7 oz) jar Marshmallow creme
1 cup chopped pecans 
1-1/2 tsp vanilla extract

Butter a 9 x 13 baking dish or line with parchment paper. Combine sugar, brown sugar, butter, evaporated milk, pumpkin puree and pumpkin pie spice in a heavy saucepan: cook over medium heat until the sugars dissolve, then continue cooking until the mixture begins to boil, stirring constantly. Boil until a candy thermometer reaches the the soft-ball stage (234 ~ 243 degrees).

Remove from heat, stir in the white chips until they are all melted and mixture is smooth. Add in the marshmallow creme, pecans and vanilla, mix well. Pour into prepared pan, and cool to room temperature. Cut into squares, store refrigerated in an air tight container.

Easiest Ever Fudge "Butterfinger Fudge"

I think this may be most favorite fudge of all! It's SO easy to make and taste delicious.


Easiest Ever Fudge
recipe found at Heritage Schoolhouse, original recipe from Eagle Brand

3 cups semi-sweet chocolate chips
1 can sweetened condensed milk
1 dash of salt
1-1/2 tsp vanilla
crushed candy (as much or as little as you want.... we used butterfinger)
Line an 8x8 pan with parchment paper. Combine chocolate chips, milk and salt in a small saucepan. Heat over low until chocolate melts, stirring constantly. Remove from heat and stir in vanilla. (If you are using candy, add about 1/4 to 1/2 cup into mixture and then save some to spread on top of fudge). Spread fudge into prepared pan. Allow fudge to cool in refrigerator for at least two hours. To cut, lift entire fudge out of pan and cut into small pieces. Keep refrigerated in an air tight container.

Funfetti Cake Batter Fudge


Doesn't the look of this fudge just make you SMILE! It's like a kid in a candy store. This fudge is good for any occasion and especially a birthday party or bridal / baby shower. You can change up the sprinkles to match your theme (like red and pink for Valentine's day) or leave them rainbow to make you SMILE! No where does it say FUDGE is only for Christmas! I hope you all make a batch of this fudge today... JUST BECAUSE!


Funfetti Cake Batter Fudge

3/4 cup sweetened condensed milk
1 12 oz. package white chocolate chips
3 tsp Vanilla Extract
1 tsp Almond Extract
Rainbow Sprinkles

Pour milk and white chocolate into a microwave-safe bowl. Heat for 2-3 minutes, or until white chocolate is almost completely melted. DO NOT OVERHEAT. Stir until completely blended, melted, and smooth.

Immediately add vanilla and almond and combine thoroughly. Wait a minute or two, so mixture is not too hot and then add a handful or so of rainbow sprinkles and fold in quickly, because they will melt (and if they are stirred for too long they’ll turn the fudge an ugly muddy color).

Transfer to an parchment lined 8×8 inch baking pan, add additional sprinkles to the top and press down lightly with an extra piece of parchment paper. Let set at room temperature or in the refrigerator. Once set, cut into cubes. Store leftovers in an airtight container in a cool place.

Chocolate Nutella Fudge with Sea Salt

I made so many fudge recipes over Christmas and for our monthly  CRAZY COOKING CHALLENGE - FUDGE, that it's going to take me forever to post them all! They were all so different, all so unique in their own sort of way and yet each one of them delicious too! I don't know if I could pick just ONE fudge recipe that is my go-to recipe. I really truly enjoyed the Frosting Fudge (and I've made it a few more times with different fillings), then there is the Butterfinger Fudge (YUM!), and I have yet to post a recipe for the Easiest Ever Fudge (it is SO easy and SO delicious). And now here is another recipe that we throughly enjoyed, Chocolate Nutella Fudge.



Chocolate Nutella Fudge with Sea Salt
found on Cookin' Canuck, using the basic fudge recipe by Giada De Laurentiis

Butter, for greasing pan (or use parchment paper)
1 (14 oz) can sweetened condensed milk
1 tsp vanilla extract
8 oz. high-quality bittersweet (60% cacao) chocolate chips
1 cup Nutella, room temperature
3 tbsp unsalted butter, room temperature, cut into 1/2-inch pieces
Sea salt, approximately 1/2 tsp

Grease the bottom and sides of an 8- by 8-inch baking pan with butter or line the pan with parchment paper, leaving a 2-inch overlap on the sides.

In a medium glass bowl melt bittersweet chocolate in a microwave bowl until compeltely melted. (usually takes about 1 minute) Add in sweetened condensed milk, vanilla, Nutella, and butter.

Scrape the mixture into the prepared pan, spread the top smooth with a spatula, and sprinkle with sea salt. Refrigerate until the fudge is firm, at least 2 hours.

Using the overhanging parchment paper, lift the fudge out. Peel off the parchment paper. Cut the fudge into 3/4-inch squares. Store in the refrigerator in an airtight container or wrapped well in plastic wrap and foil.

Who doesn't love all the sweets and the homemade fudge that people make around the holiday's. I know I do! My family's tradition is having Grandma's Hundred Dollar Fudge, and since that recipe is already posted here on my blog I had to search for a new recipe. I came across plenty... as you can see I made SIX, yes SIX different versions of FUDGE to find the Ultimate FUDGE recipe.

The reason I picked this fudge above all the rest, is because it's delicious, but also because it's SO easy! I used Andes Peppermint Crunch candies, but you can use ANY kind of candy from mints to chocolate. I will be trying a few more batches of this before the month is over. I am going to try Snickers and a few other candy ideas I have for this A-MAZ-ING recipe.

I will be posting ALL of these Fudge recipes on my blog (it may take me a few weeks to do so). I am picking my two favorite recipes for today. Our of all six recipes I made I only had one flop, it was a good baking day for me.

It was very interesting making all these fudge recipes. You can cook fudge, boil fudge, microwave fudge, you can whip it up with a mixer, you can mold it into a pan and let it sit. I was amazed at all the different methods for making fudge. And honestly I don't even know which is my favorite way?

But when I found this EASY-PEASY frosting fudge over at Cookies & Cups, I just knew I would like it. No boiling, No cooking, just microwave, mix and go! Now that I can handle!

Peppermint Crunch Frosting Fudge

2 cups of Candy (Andes Peppermint Crunch Thins) or the original recipe called for Peanut Butter Ritz Bits, try Snickers too (almost anything will work)

12 DAYS OF CHRISTMAS GOODIES (Day 7): Butterfinger Fudge

Butterfinger Fudge

This is my second favorite fudge recipe this holiday season. Later on today is actually my CRAZY COOKING CHALLENGE #4. Myself and 70+ other bloggers are searching for the Ultimate FUDGE recipe. I made SIX recipes, yes SIX to find the Ultimate recipe. This recipe came in second place. You'll have to come back later on today to see what recipe came in first.

Since we are in the middle of the 12 Days of Christmas Goodies, I thought it only appropriate to include fudge in this challenge. Christmas without fudge, is like not having Christmas at all.

Butterfinger Fudge
recipe found at Shugary Sweets

3 cup sugar
1-1/4 cup heavy cream
1 tbsp corn syrup
2 tbsp butter
1 tbsp vanilla extract
8 snack sized Butterfinger bars, crushed

Bring sugar, heavy cream, corn syrup and butter to a boil in a heavy saucepan, stirring constantly. Once boiling, do not stir. Using a candy thermometer, bring mixture to soft ball stage, 238 degrees (about 10 minutes). Remove from heat, add vanilla to pan, do not stir, and allow mixture to cool to 120 degrees (about 45 minutes).

Pour mixture into a mixing bowl and beat until it is no longer glossy (about 3-5 minutes). Pour into a parchment paper lined 11x7 pan. Immediately press crushed candy bars onto top of fudge. Press firmly!

Allow fudge to set in refrigerator, covered, for about 2 hours. Cut into bite size pieces and enjoy cold!

National Fudge Day... Grandma's Hundred Dollar Fudge

According to SOMEONE... it's National Fudge Day!

I just LOVE LOVE all the different food days... it let's you stop for a minute a think and reminisce about a special food every day of the year, the memories just coming following back! I keep the American Food & Drink Days posted at my desk and love to just glance over and read what we are celebrating today! And well, today is FUDGE!

I really don't make fudge that often and there are only two fudge recipes I ever do make. One is for White Chocolate Cheesecake Fudge (just thinking about it, I go to my happy place, plus an extra 10 lbs comes on just thinking about it), and the other fudge is my mother-in-law's famous Hundred Dollar Fudge recipe. I've already shared it here already, so just click on over, make a batch or two yourself and you'll know why all the brothers, sisters, grandkids and great-grandkids patiently wait for their box of fudge to arrive each and ever Christmas! (this is why last Christmas I learned to make it myself and the results were perfect) We hope you give it a try and love it just as much as we do. (and don't wait til Christmas to make it)

12 DAYS OF CHRISTMAS GOODIES: Grandma's Hundred Dollar Fudge

Day 9 of 12 Days of Christmas Goodies



Grandma's Hundred Dollar Fudge
from Grandma Hudgens (she was given this recipe by a friend's aunt and the aunt had won $100 dollars with this fudge recipe therefore the name became the Hundred Dollar Fudge)

4 cups Sugar
1/2 cup butter
1 can (12 oz) Evaporated Milk

Bring all of the above to a boil (but you must consistenly stir the entire time). Once it comes to a boil; turn down the heat after it boils and continue heating and stirring on low for 11 minutes.

2 pkg of Milk Chocolate Chips (12 oz each package)
1 jar marshmallow cream
1 tsp vanilla

Add in both packages of Chocolate Chips, marshmallow cream and vanilla. Beat the mixture (with a hand mixer). When finished add in the nuts (if desired). Grandma adds in 1 lb of chopped pecans.

Pour into a butter 9x13 pan, once it cools down (over night) cut into squares and store in refrigerator.
