Ranch Chicken Enchiladas {TWC #85 Linky Party - MAN'ly Meals}

After a long weekend of graduation celebrations we are back in business (haha) for a day at least. Tomorrow I leave for Missouri for a two day trip and Friday I am headed for a QUIET weekend with my husband at Pebble Beach Golf Course (this is one of my husband's dreams).


Ranch Chicken Enchiladas
recipe found at Do You Smell That !!?

4 to 6 boneless chicken breast (fresh or frozen)
1 packet of dry ranch dressing
1 packet taco seasoning
1 can chicken broth
1 large packet of corn tortillas
1 to 2 cups of grated cheese
bottled ranch dressing

Put everything in the crock-pot and put on low for 3 to 4 hours. After it's all cooked, shred chicken and then you can serve in tacos or make these amazing enchiladas.

To make enchiladas you start layering the corn tortillas along the botton of a 9x13 pan, then add the chicken, the cheese and a few tbsp of Ranch Dressing in between each layer.

Cook at 350 for about 45 minutes and serve.

Pineapple Cupcakes with White Chocolate Buttercream Frosting

Today is the day of the BIG GRADUATION PARTY for my twin daughters; Ashlyn & Kayley. They finished High School this week, and graduated last night. It's still SO hard to believe this day has come. They will be preparing all summer to leave on a CRAZY & AMAZING & SCARY adventure as they move to St. Charles, Missouri for college. We are so proud of them, so excited for this adventure ahead and don't worry my new home away from home will now be the hotel down the street in St. Charles, Missouri. I will be visiting more often then they probably want. That's what moms do - right?


In planning this High School graduation party for my twins, we have sampled many many cupcake recipes. And today I will be serving these Pineapple Cupcakes for the celebration, and another ole' favorite of our that I posted way back in the beginning days of blogging Chocolate Chip Cupcakes. They are so good, the cupcake itself is so light and delicious (it's actually a weight watcher recipe), but the frosting we love is White Chocolate Buttercream Frosting, so that throws the "light" right out the window.


Pineapple Cupcakes
recipe from Weight Watchers, found at Skinny Taste

1 box yellow cake mix 
1 (20 oz) can crushed pineapple in juice (do not drain)

Mix both ingredients together in an electric mixer on medium speed. Pour into lined cupcake tins about 2/3 full. Bake in accordance with cake mix directions or until a toothpick inserted comes out clean. Set aside to cool.

White Chocolate Buttercream Frosting
from Magnolia Bakery Cookbook, New York City

1-1/2 cups unsalted butter, softened
6 tbsp milk
9 oz white chocolate, melted and cooled to lukewarm
1 tsp vanilla
3 cups sifted powdered sugar

In a large bowl, on medium speed of an electric mixer, beat the butter until creamy, about 3 minutes. Add the milk carefully and bet until smooth. Add the melted chocolate and beat well, about 2 minutes. Add the vanilla and beat for 3 more minutes. Gradually add the powdered sugar and beat on low speed until creamy and desired consistency.

Each month I get so excited about making my recipe and seeing all of the other blogger recipes. It's so cool to all come together and create a recipe that's alike and yet so different. I have made so many recipes from the other challengers and it's so much fun meeting other bloggers, talking with and getting to know one another through cooking, baking and creating.

Here it goes, challenge #10. This month we are makng FRUIT SMOOTHIES, it's summer time, the farmers market had a WONDERFUL selection, that I am sure alot of you are using, I can't wait to start visiting my farmers market every Sunday (again)

I was in the middle of making a mountain of things for this weekends Graduation Celebration and then I remembered OH YEAH..... my smoothie recipe. If the HOST forgets, oh no, what would we do then. Have no fear, I've pulled out a recipe at 11 pm the night before on another challenge I forgot, so I know I can do anything. Plus I still had 6 days left, no worries. I am just like ALL of you. Kids, Family, Life and Sleep get in the way sometimes.

I did however already make two or three other smoothies, but the recipes weren't quite up to this challenge so I continued on and when I saw this Peanut Butter Banana Oatmeal Smoothie I knew that was it. (and I had over-rip bananas on the counter that were calling to be made into something). I made it, my adopted son (ie: one of my twins best friends) drank the whole thing and said it was delicious. We all tasted it, but he wanted it so we let him have it. I found this smoothie recipe over at This Chick Cooks.


Peanut Butter Banana Oatmeal Smoothie

(makes 1 smoothie)

2 bananas sliced (fresh or frozen)
2 tbsp oats (or granola)
2 tbsp peanut butter (we love chunky)
3/4 cup milk
1/4 cup crushed ice (this makes it a super cold smoothie)

Throw all ingredients into a mixer or blender. We use the Magic Bullet. Blend & Drink!

Lasy Day of High School {My Twin Daughters}

I have thought and dreamed about this day for a long time. My twin daughters last day of high school. I can hardly believe it's here. The scrapbooker I am, I saw this adorable idea and knew that I had to take a photo of their LAST DAY of school. My girls are good troopers, they even did their hair and makeup (instead of the usually senior year sweats and hair in a pony). It's bitter sweet that this day is here, but MORE sweet then bitter! They are on top of the world right now, with so many dreams and such a bright future ahead of them, I am so happy for them. Congrats Ashlyn & Kayley, I love you!

Cake Batter Monkey Bread {TWC Linky Party #84 - Breakfast Breads}

I promise, I am still alive. It's been a WHOLE week since I posted last. Crazy for ME, I know. I can't really say I've been too busy, just lazy!!! But, I am also planning a HUGE Graduation Party for my twins! OH MY, I can't believe they are finished with school in 2 days, YES, 2 days. They graduate on Friday and the BIG Celebration party is Saturday. We are so excited (no tears yet). I am just SO SO excited about this new adventure for them, it's too hard to be sad (I think I will just cry LATER after they move to Missouri for college, until then it's HAPPY HAPPY HAPPY!!!).

But today, we are sharing Breakfast Breads in our Linky Party, everyone loves a good muffins, a savory bread or just a good old fashion coffee cake. I am sharing a delicious new money bread recipe. Which ALL of my kids enjoyed and would love to have again and again. That's when I know it's a good recipe, yes this will be in my next family cookbook.
Could we really make Monkey Bread even better? I have my favorite Monkey Bread recipe and I really never thought another recipe would even compare, well I have found it's match. Cake Batter Monkey Bread or as my son calls this "A Cupcake on Steroids". Don't get me wrong he LOVED it, but it does taste like a cupcake, and it's AWESOME!!!

Cake Batter Monkey Bread

1 can refrigerated biscuits
1 cup dry cake mix (funfetti is nice, but plain vanilla or whatever kind you have on hand)
3 tbsp brown sugar
4 tbsp butter, melted
1/2 tsp vanilla
Vanilla Frosting
Sprinkles (add some to the batter too if you are not using funfetti)

Preheat oven to 375. Spray muffin tin generously with cooking spray or use cupcake wrappers. We used the JUMBO muffin tins and they were wonderful, plenty for each person to enjoy.
Melt the butter in a small bowl and add the vanilla; mix well and set aside. In another small bowl, combine the cake mix and brown sugar. Cut each biscuit into four pieces.

Dip pieces in the butter/vanilla mixture, coating completely. Using a fork, remove from the butter mixture and coat thoroughly in the cake mix mixture. Place four coated pieces into each muffin tin (for a regular size muffin tin) or place about 6 pieces each in the jumbo muffin tins. Repeat until all tins are full.

Bake for approximately 12-15 minutes or until lightly golden and centers appear set. Allow to cool in pan for about 5 minutes before gently removing them. Place a dollop of frosting on the tops of the still-warm muffins and top with sprinkles.
