Pumpkin Doodle Cookies from GUEST BLOGGER: Something Swanky

When she sent me the guest post last week, I couldn't help myself! I wanted to make them RIGHT AWAY. Her pictures are wonderful and made me want to jump out of my chair. I hope this guest post encourages you to do the same thing.

My name is Ashton and I blog over at Something Swanky. I love desserts-- like fanatically. And my blog is dedicated to only desserts! I post recipes and awesome Pinterest finds, have a desserts link party, and host fantastic guest bloggers every week! I'd love for you to swing by next time you're in the mood for something sweet :)


It's not really feasible to cram "pumpkin-spice-marshmallow-cream-cheese frosting" into the title, so I'm hoping you've read far enough past the title to know that these cookie are more than just slightly modified snickerdoodles! I'd say they're more along the lines of glorified Snickerdoodles. Or Pumpkin Pie-ified Snickerdoodle.

Oh yes, I went there. 
I'm making up my own words for this one.

But when there aren't already words to describe said cookie, drastic measures must be taken.

Back to the cookie:
It's good. And it's different. And it's good.

We're talking about a Snickerdoodle made with Pumpkin Pie sugar (instead of just plain old cinnamon sugar) and topped with a special mallow-cream cheese frosting made out of this Kraft's seasonal Pumpkin Spice Marshmallows! I thought the Pumpkin Doodles were pretty great on their own, but the frosting really puts it over the top! Would you like the recipe?

I thought you might. So I brought it with me just in case :)


Pumpkin Doodle Cookies
Recipe Source: Something Swanky

1/4 c. butter
1/4 c. shortening
1 cup granulated sugar
1 egg
1 tsp vanilla
1 1/3 c. AP flour
1 tsp cream of tartar
1/2 tsp baking soda
2 tbsp granulated sugar + 1 tsp. pumpkin pie spice (mixed together)
1 package Kraft Pumpkin Pie Marshmallows
1 tbsp light corn syrup
8 oz. cream cheese

Combine butter, shortening, and sugar in stand mixer using a paddle attachment.

Add in egg, vanilla, cream of tartar, baking soda, and flour. Mix well until a dough forms.

Scoop out tablespoons of dough and roll into a ball. Coat in pumpkin pie spice sugar and place on ungreased cookie sheet. Bake at 375 for 9 minutes.

Meanwhile, place marshmallows in microwave safe bowl and drizzle corn syrup over the top (I didn't really measure, I'm just guestimating about  a tablespoon). Microwave for 1 minute.

Stir until smooth. Scrape marshmallow mixture into the bowl of a stand mixer. Add the cream cheese and whisk on high until thoroughly combined and smooth.

Once cookies have baked and cooled, spread the marshmallow cream cheese mixture over the tops and serve!
