Grandma's Rolls, mouthwatering, soft and super duper delicious (and no one will eat just one)!!! When she makes a batch up in Oregon when the whole family is over, we eat them for dinner, we make a sandwich on them for lunch and then if your lucky and there is any left, you can be sure then someone will be caught in the kitchen eatin' one right out of the bag. My mother-in-law has been making this recipe for years. Even my husband's cousin who introduced me to him, remembers these rolls as a little girl. The last time my mother-in-law was in town, she even had to make a batch for one of my husband's other cousins, just so he could take his own batch home. Needless to say, these are the ultimate more then scrumptious rolls, that no house should be without!
Until a few years ago my mother-in-law was the one and only one to make these rolls and we had to wait for our yearly visit to Oregon to have them (and we always came home with a batch or two for the freezer as well). But, now after time and time again being taught the recipe I CAN MAKE THESE MYSELF. This is one recipe I am so happy that I have mastered. It took a few tries and it took my husband's smart remarks like "that's not what my mom does", "that's not how my mom's rolls look", and so on and so on. I am happy to say that my rolls are EXACTLY the same as my mother-in-laws rolls and I am one happy girl and my husband is one happy man! Practice makes PERFECT!
Grandma's Rolls
recipe from Charlotte Hudgens
1 cup water
2 cups WHOLE milk
1/2 cube real butter
1 tbsp salt
6 tbsp sugar
Put all of the above ingredients into a sauce pan and heat, do NOT boil. Cook on medium heat. Do NOT stir, only stir one time after mixture is hot. (Cook for approx. 8-10 minutes) You must check this mixture as it must be between 120-130 degrees. If you get mixture too hot, do NOT continue, you must wait for it to cool down to this temperature. (and if it gets too hot, the whole recipe goes to flop, trust me, I've been there, it kills the yeast, then they don't rise and then you have to throw them all away, AHHHH). Once this mixture is down and at the perfect temperature pour this into your mixer and being mixing.
Then, onto the rest of the recipe.
3 eggs
3 pkgs of Rapid Yeast
7 to 8 cups of Bread Flour (must be Bread Flour, the others don't work well)
Add the 3 eggs into the mixer one at a time, add these in while the mixer is continuing to mix (I would say continue mixing 1 minute for each egg). Then stop the mixer and add in all 3 packages of yeast; continue mixing. Mix until the yeast is well blended into the mixture, then begin the flour. One scoop at a time, do not add the flour all at once. (and mix each scoop for at least 2 to 3 minutes, until well blended) About half-way through the flour, turn off mixer and scrap down the sides. Once all flour is in mix for at least 5 to 10 minutes. The dough will start to form around the dough blade of the mixer, that's when you know it's ready. Once mixture is complete place a towel over top of the bowl and let the dough rise for atleast 1 hour (it will double in size inside the bowl, I add a little flour to the top, so it doesn't stick to the towel).
When the dough is ready; roll out by hand on a flour surface. Push and push and push until the dough is about 1" thick. Use a round circle cookie cutter or the top of a glass and cut round circles of dough. Take each circle and place a sliver of real butter into the center of the circle and fold in half. Seal the edges and line them up on a cookie sheet (sprayed with Pam first). Cover the rolls again with a towel and let the rolls rise again on the cookie sheet, for another hour, they will rise again, trust me. (do not skip this 2nd step of rising)
Bake at 400 for approx 20 minutes. (These rolls take about 3 hours to make, it's no small task, but the results are amazing)

(I made this scrapbook with Creative Memories Storybook Creator Plus and I purchased 4 copies of the scrapbook, so that I can give one to each of my children when they move out!) These sound so good. However, I have a couple of questions before I make them.
ReplyDeleteDo you cool down the milk mixture before you beat in the eggs? Wouldn't the hot mixture curdle the eggs?
Also, your recipe calls for 2 packages of yeast, but your mother-in-law's recipe states "add all 3 packages of yeast at once". So how many packages are there to be used?
No, you do NOT cool down the milk mixture (just make sure it's at the right temperature. And SO SORRY it is 3 pkgs (I will fix my typo RIGHT NOW)! ENJOY!!!!!
