Homemade Peanut Butter Cups

I have been making these Homemade Peanut Butter Cups for years. An ole' neighbor of mine shared them with me over 15 years ago, she got the recipe from her Italian mother-in-law who has been making them for many years. I have no idea where she got the recipe or if she made it up herself, but it's DELICIOUS! The recipe is so simple and everyone loves them. (just a note that my chocolate came out a little too light this time). I made a huge batch and divided them up into my kids teacher goodie bags that they will be giving away on Friday (the LAST day of school before Christmas break... YAHOOO!)

Peanut Butter Cups

from an ole' neighbor; Stephanie

1 jar (16 oz) Laura Schuders Peanut Butter w/Oil (no other peanut butter works as well)

1 lb box Powdered Sugar (about 3-1/2 cups)
1 box Graham Crackers
2 cups of Real Butter
1 pkg milk chocolate (12 oz)
1 bag white chocolate (12 oz)

Mix all ingredients together and mix with an electric mixer. Spoon into mini cup cake holders. Pat the top with a paper towel and press down flattening at the same time. Refrigerate for 20 minutes.

Melt one bag of milk chocolate and one bag of white chocolate in microwave. Spread melted chocolate over top the peanut butter mixture. Refrigerate for 30 minutes.
