Apple Cinnamon Muffins

What a yummy recipe I found over at Lick the Bowl Good; we arrived at the campsite late in the evening and my parents had already been to one of the apple farms and picked up some fresh apples (we used a mixture of Gala, Red Gold and Honey Crisp for these muffins; we were told by many of the farms over the weekend that the BEST apple recipes are made with a variety of apples and to never use just ONE kind)

Apple Cinnamon Muffins

1-1/2 cups sugar
2 eggs
1/2 cup oil
1/2 cup cinnamon applesauce
1 Tbsp vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
1-1/2 tsp cinnamon
3 cups peeled, cored, diced apples (about 3 small apples)
1/2 cup brown sugar

Preheat oven to 350. In a large bowl cream together the sugar and eggs. Add the oil, applesauce and vanilla. Add dry ingredients to creamed mixture. The batter will be very thick. Add the diced apples.

Butter & flour muffin tins or use paper liners. Fill muffin tins to the top. Sprinkle 1/2 tsp of brown sugar on top each muffin (you will use approx 1/2 cup). Bake for 20-25 minutes.
