This sandwich still looks AMAZING to me and it tastes just as good as it looks!
Fresh Mozzarella BLT with Pesto
adapted from Tyler Florence from Food Network Magazine
1 (4") baguette (we used a sourdough french roll)
2 slices bacon
1-1/2 tsp pesto
1-1/2 tsp mayonnaise
2 slices tomato
slices of avocado (we added this in)
1 thick slice fresh mozzarella cheese (and yes, fresh does make a difference)
and a little sprinkle of pepper (and we took out the salt, NOT needed)
(this only makes 1 sandwich so double or triple depending on how many you need)
Cook the bacon to desired doneness, Slice the bread open and get ready to assemble. Combine the pesto and mayonnaise and smear on the bread. Top with lettuce, tomato, bacon, mozzarella and avocado. Season with pepper and Serve!
We will NEVER EVER MAKE A BLT any other way!
