My husband's favorite meal? Well, I know what it is and I've tried to duplicate it with NO success at all, so I gave up trying a few years ago. His all time favorite meal is: Fried Chicken. Not any Fried Chicken, it can only be Kentucky Fried Chicken or his mama's Fried Chicken. (someday I hope to duplicate his mama's Fried Chicken, but so far no way)

So, today I decided because it was National Peanut Butter Cookie Day yesterday, that I would make a batch of Flourless Peanut Butter Cookies! And these were a HUGE success! YEAH ME!!!

Flourless Peanut Butter Cookies (Gluten-Free)
from unknown Gluten-Free Cookbook

1 cup packed light brown sugar
1 cup smooth peanut butter (we used chunky)
1 egg, lightly beaten
1/2 cup semisweet chocolate chips (we used mini)

Preheat oven to 350. Beat brown sugar, peanut butter and egg in medium bowl with electric mixer until blended and smooth. (unless you are using chunky peanut butter, then just blend until blended, there will still be chunks in it) Add in mini chocolate chips and stir.

Shape dough into round balls; place 2 inches apart on ungreased cookie sheets. Flatten slightly with fork. Bake 10 to 12 minutes or until set. Transfer to wire rack; cool completely.

  4. It is just amazing to me that cookies can be created without flour! I am going to have to try making them sometime! I am linking up Coffee, Caramel Peanut butter cup cupcakes, more of an idea than a recipe...but they turned out yummy and is more of a manly cupcake...lol

  8. I made flourless peanut butter cookies last Christmas season- loved them! It is always great to make a recipe that is naturally gluten free and doesn't need tweaking!
    I am sharing my recipe for Italian Sausage And Chicken Skewers. These would be perfect to serve for Father's Day!

    Thank you for hosting!! I make a delicious Peanut Butter Cookie with the same ingredients except white sugar in place of the brown and a little vanilla extract. Your recipe sounds wonderful - I will try it - and I love the addition of he chocolate chips. Thanks for sharing.

  14. With Peanut butter and chocolate chips, who needs the flour! Mmmmmm! Your cookies sound incredibly awesome!

    Wishing you the best of luck in your quest to make the perfect fried chicken. I, too, have been trying for years to find the perfect recipe, but so far it has eluded me. Have you tried Thomas Keller's recipe? I've heard it's supposed to be phenomenal.
