Sharing Scrapbook Pages (July 2011)

Once a month I like to share my other passion, digital scrapbooking! I have been scrapbooking for over 12 years now and my love for scrapbooking hasn't changed, only gotten stronger. And now with digital scrapbooking I am in love all over again. This is my number one hobby (and my only hobby), besides cooking and baking. Here are a few scrapbook pages to share with you from my latest summer vacation, where my entire family (all 18 of us) went to Turks and Caicos. It was one of the best vacations ever!!!

I hope that sharing these will give you inspiration to start, finish or just thinking about beginning your own family scrapbook. I use Creative Memories Storybook Creator Plus and it's amazing!

Ole' Favorites - Lunch Recipes from 2010

We are off on our second family vacation of the Summer, Moabi at the River. (My hubby and son our on their 3rd vacation, as they do a guys only fishing trip that they just returned from 13 days ago..lucky guys). This is my kids favorite vacation of all, it's 10 days of water fun, with lots of their friends (I have twins plus one and I am taking another set of twins plus one, another other friend has triplets plus one & my other friend has two, that equals a whole lot of kids). We have several families who go with us, we get our own private beach and we have a blast. From sun-up to sun-down we are in the water playing, talking, relaxing and doing any and all kinds of water-sports, plus a few years ago the kids started making up Survivor type games each day and theme nights each night. This is a newer tradition and is so much fun, we always have 100% participation.

Here are some scrapbook pages from last year, and since I am on vacation I have pre-scheduled lots of fun recipes for you all week long. So, please stop back by and see everything I've been making so far this summer.

THIS WEEK'S CRAVINGS #39 Linky Party (STRAWBERRY) and Strawberry Whipped Sensation

THIS WEEK'S CRAVINGS Linky Party #39

Strawberry Whipped Sensation
adapted from Food & Family

4 cups fresh strawberries, divided
14 oz can sweetened condensed milk
1/4 cup lemon juice
1 tub (8 oz.) Cool Whip, thawed, divided
Graham Crackers Crumbs, finely chopped (or store bought)
1 tbsp butter, melted

Line a 9x5-inch loaf pan with foil, with ends extending over sides of pan. Mash 2 cups berries in large bowl. Add milk, juice and 2 cups cool whip; mix well. Pour into prepared pan.
    
Mix chopped cookies and butter; spoon over cool whip mixture. Cover with ends of foil; gently press cookie mixture into cool whip mixture. Freeze 6 hours or until firm.    

Invert dessert onto plate when ready to serve; remove pan and foil. Frost dessert with remaining Ccool whip. Slice remaining berries; arrange over dessert

Garlic Green Beans

We discovered this green bean recipe two summers ago and have been making it ever since. I never knew fresh green beans tasted so good, and were actually so easy to make. I was raised on can green beans, but fresh is definitely better. Way Better!!!


Garlic Green Beans
from the kitchen of Tina Hudgens

1 tbsp butter
1 tbsp minced garlic
pinch of Cayenne Pepper
1/4 cup finely diced mushrooms
2 cups fresh green beans
pinch of sea salt
pinch of sugar
1/4 cup water
1/4 cup chopped pecans
fresh pepper, to your liking

Melt butter in a skillet on medium heat; add in minced garlic, cayenne pepper and diced mushrooms. Cook until heated through. Add in fresh green beans, sea salt and a pinch of sugar. Cook for 2 to 4 minutes. Add in 1/4 cup water, cover and cook for additional 6 minutes; uncover and boil until water evaporates. Season with fresh pepper and toss with chopped pecans.

Brown Sugar Brie

My favorite cheese of all time: Brie. Anyway you make it, I love it!
I found this recipe over at one of my favorite blogs; Your Homebased Mom.
Last weekend we sat around the pool and ate this delicious treat!
I LOVE SUMMERTIME!!!


Brown Sugar Brie

brie cheese
brown sugar
chopped pecans

If using a round brie cut out the middle of the brie with a knife leaving about a 1/2 inch rim around the brie.  Cut down into the brie just slightly and remove the cheese. Or if using any other shape brie, just slice off the top and continue following the steps.

Fill the cavity with as much brown sugar as it will hold (about 1/4 cup) and then cover the top with chopped pecans.  Place on a piece of foil on a cookie sheet and bake at 350 until the brie melts.  About 15-20 minutes.   The cheese will ooze out of it when cut into, it's so delicious.  Serve with bread or crackers.

I am so excited about my first post for the Secret Recipe Club. I came across this blog/challenge on many different sites, the Secret Recipe Club keep popping up. My thoughts were how wonderful to get to know another blog; a different one each and every month. I jumped at the chance to join in and I am so happy I did. 

My Secret Recipe Blog this month is: Delishhh

What a fun name, Delishhh! I read through pages and pages of her blog the very first day I got the assignment and wondered what am I going to make? I have to pick just one recipe. Oh no? So, I waited a few days and looked again. And there it was a new post with a very common recipe; Blueberry Muffins. My son had been asking and asking for me to make Homemade Blueberry Muffins, so this recipe was just calling my name.  I decided to make these GLUTEN-FREE for my daughter (as her stomach issues are still never ending... another doctor appointment this week).

The recipe was very simple and came out better then I expected (because of the gluten-free flour, I was a little worried). We enjoyed at least a half-a-dozen that morning and I froze the rest of the muffins. I love freezing homemade muffins, that way I can enjoy them on busy mornings. This recipe was no different. I actually froze an entire dozen to take with us next month camping. If you are looking for a basic, moist muffin, this one is perfect. I am sure you can substitute raspberries or other berries to make another great muffin recipe.


Blueberry Muffins - GLUTEN-FREE
found and adapted from Delishhh

2 cups all-purpose GLUTEN-FREE flour (changed to gluten-free)
1 tbsp baking powder
1/2 tsp salt
1 egg
1/2 tsp grated lemon zest
1 cup sugar
4 tbsp unsalted butter, melted and cooled slightly
1- 1/4 cups sour cream (used the sour cream and I love this addition to muffins)
1-1/2 cups frozen blueberries (changed from fresh to frozen)

Preheat the oven to 350. Grease a standard and set aside.

Whisk the flour, baking powder and salt in a bowl until combined. Whisk the egg in a separate bowl until well-combined and light-colored, about 20 seconds. Add the sugar and whisk vigorously until thick, about 30 seconds. Add the melted butter in 2 or 3 additions, whisking to combine after each addition. Add the sour cream in 2 additions, whisking just to combine, and then add the lemon zest.

Add the berries to the dry ingredients and gently toss just to combine. Add the sour cream mixture and fold with a rubber spatula until the batter comes together and the berries are evenly distributed, 25 to 30 seconds. Small spots of flour may remain and the batter will be very thick. Do not over mix. (This is this most interesting thing I learned in this recipe, my entire batter did not turn purple like it usually does... I am so excited about this method and will use this in many things)

Using a large spoon or a cookie scoop sprayed with nonstick cooking spray, divide the batter in the muffin cups. Bake until the muffins are light golden brown and a toothpick or thin knife inserted into the center of a muffin comes out clean, 25 to 30 minutes, rotating the pan from front to back halfway through the baking time. Immediately remove muffins to a wire rack and cool for at least 5 minutes. Serve immediately or at room temperature. Store leftovers in an airtight container at room temperature.

Lemon and Broccoli Pasta

What do you do with a whole bag of lemons given to you by a friend?
Look for lemon recipes and make something!
She actually did the same thing after her son picked bags and bags of lemons.
She found this wonderful recipe (and I stole it from her)!

This was a perfect light summer pasta recipe! ENJOY!

Lemon and Broccoli Pasta Salad
original idea take from Neely's Pasta Recipe; many things changed to my liking

Salt
1 box Bowtie pasta
1 pound broccoli (or asparagus)
2 tsp Dijon mustard
1 tsp clove, minced
1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
Freshly ground black pepper
1 pint cherry tomatoes, halved
1 tbsp Garden Blend Seasoning (your favorite or Spike or Mrs. Dash, any will work)
1 container of Original Philadelphia Cooking Creme  

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente. Drain and rinse. Set aside.

In another large pot of boiling salted water, add the broccoli (or asparagus) and blanch until bright green and slightly tender, about 3 minutes. Remove with a slotted spoon and shock in icy cold water. Remove from the water and dry well. If using asparagus trim the ends and cut into bite-size pieces on the bias.

Whisk together the mustard, garlic, lemon juice, and olive oil in a small bowl. Season with salt and pepper, to taste. Combine the reserved asparagus and pasta in a large serving bowl. Add the tomatoes, dill, cream cheese, and the mustard dressing. Toss with tongs to coat the salad well. Taste and add additional salt and pepper, if needed.

THIS WEEK'S CRAVINGS #37 (Blueberries) and Corn & Blueberry Salad

We enjoyed a beautiful pool party yesterday with our Pace family. All of the girls had a wonderful time and even my little guy had a great time with a few of his friends.
Friends, Family, Summer, Sunshine and Good Food = ONE WONDERFUL SUMMER!!!

This blueberry salad was something I cut out from my magazine Better Homes and Gardens over a year ago. I knew I would find a time to make it and today with our blueberry theme, this recipe finally came in handy. And it was quite delicious.

Corn and Blueberry Salad
from Better Homes and Garden


6 ears corn, husked
1 cup fresh blueberries
1 small cucumber, sliced
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1 jalapeño pepper, seeded and finely chopped*
2 tbsp. lime juice
2 tbsp. olive oil
1 tbsp. honey
1/2 tsp. ground cumin

In Dutch oven bring salted water to boiling. Add corn. Cook, covered, 5 minutes, or until tender. When cool enough to handle, cut corn from cobs.

In a serving bowl combine corn, blueberries, cucumber, red onion, cilantro, and jalapeño. For dressing, in screw-top jar combine lime juice, oil, honey, cumin, and 1/2 tsp. salt. Cover; shake well to combine. Add to salad; toss. Cover and refrigerate overnight (up to 24 hours).
