Baked Blueberry Doughnuts

Of course I am on a diet NOW, but I've been holding onto this doughnut recipe for a long time now and this is the perfect time to share it with all of you non-dieters out there (oh, how I wish I could join you). For all you readers who wish to indulgence in these delicious doughnuts enjoy, enjoy (and PLEASE DO eat one for me!). They are a baked doughnut, so they are half-way good for you.

I could have doughnuts every morning for breakfast. The corner doughnut shop, to these super delicious homemade doughnuts and anything inbetween. I LOVE doughnuts, they are SO good. I have a few doughnut recipes on here and I am sure this won't be my last.


Baked Blueberry Doughnuts
recipe found at A Well-Seasoned Life, originally from King Arthur Flour

1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
2 tablespoons buttermilk (or regular milk)
2 large eggs
3 tablespoons vegetable oil
2 tablespoons water
½ cup blueberries

Mix all the dry ingredients in a bowl. Crush your berries with the back of a fork. In a separate bowl, mix together milk, eggs, oil, blueberries and water. Pour the liquid mixture into the dry ingredients and stir just until combined. Bake at 325 degrees for 16-18 minutes in a 6-doughnut pan or in a mini doughnut maker according to manufacturer directions. Alternatively, you can bake them in lined mini muffin tins for 7-12 minutes, or until a toothpick inserted in the center comes out clean. While the doughnuts are cooling make your glaze.

For the glaze:
1 cup powdered sugar
1 teaspoon lemon juice
Water

Mix together powdered sugar and lemon juice. Add water 1 teaspoon at a time until it reaches a thick drizzling consistency. Drizzle glaze over cooled doughnuts and enjoy! Yields: 8 regular or 24-30 mini doughnuts.

Homemade Donuts


I remember making these donuts as a little kid. I have no idea who made up this recipe, or who was the first to post in blogland but this recipe is all over the place now. I imagine that it first came from Pillsbury themselves in some little advertisement or take home cookbook years and years ago. I am 40 years old and we have been making this delicious breakfast treat over 30 years way before blogging began. I had actually forgotten about it and don't think my kids had ever had them (and nope they hadn't). I made it and they loved them just the same as I did, way back when (oh, I still love them now too) and NO they are NOT on my 2012 diet either.


The exciting thing is, that you can make them too! You may just have all the stuff right now to get them going (get up and go look... your kids will thank you later)! They are really super simple NOT FROM SCRATCH donuts. All you need is a roll of biscuits, some oil and a few toppings.


Homemade Donuts
recipe source unknown

1 pkg Bisquits; round (any kind will work, Grands make big donuts)
Vegetable Oil for Frying
1 stick margarine, melted

Pour oil into skillet to the depth of a little less than 1/2 an inch and heat on medium to medium high for about five minutes.

Using a plastic bottle cap, cut the center out of each biscuit. Drop dough into hot oil, watching carefully and turning when golden. Once doughnuts are golden on both sides, remove to paper towel lined plate. Repeat until all dough is cooked, including doughnut holes.

In a bowl, melt margarine. Dip both sides of each dounuts into melted margarine, then press into desired topping. In a separate bowl get toppings ready, like the combo of cinnamon and sugar.

Other Topping Ideas:
  • mix 1/2 cup sugar and 1 tbsp cinnamon
  • 1/2 cup just plain sugar
  • can frosting and sprinkles
  • make a glaze with 1 cup powdered sugar and 1-1/2 tbsp milk or water and 1/4 tsp vanilla

Banana Doughnuts with Banana Frosting (GLUTEN-FREE)

Okay, whoever thinks Gluten-Free food tastes horrible has got to taste these doughnuts. AMAZING, DELICIOUS, SCRUMPTIOUS ON MY, that's just a few words to describe these luscious GLUTEN-FREE doughnuts. On my 8 hour search last Friday for gluten-free recipes I came across this amazing recipe and I knew I had to give it a try. And not just for my daughter, because we all love doughnuts and we don't eat them much (more because of the calories then anything else).  


In researching this recipe a little more I found some great web-sites. This recipe is actually from Everyday with Rachel Ray former editor Silvana Nardone. She even has her own blog for gluten-free baking and cooking Dish Towel Diaries and a cookbook: Cooking for Isaiah: Gluten-Free & Dairy-Free Recipes for Easy Delicious Meals. (I went right over to Amazon and purchased my own copy). The recipes look and sound amazing, out of all the gluten-free cook books I've looked at this seems to be my favorite so far.


Banana Doughnuts with Banana Frosting
Everyday with Rachel Ray  former editor Silvana Nardone

1 1/4 cups gluten flour & 1 tsp of xanthan gum (or use regular flour if you don't need gluten-free)
2 tsp baking powder
1/2 tsp salt
1-1/2 tsp ground cinnamon
1 cup granulated sugar
2 eggs, at room temperature
1-1/4 cups mashed ripe bananas (3 bananas)
2 tsp pure vanilla extract (make sure it's gluten-free)
1/2 cup vegetable oil

Preheat the oven to 350°. Grease nonstick, 6-count doughnut pans (makes about 16 doughnuts). In a large bowl, whisk together the flour, baking powder, salt and cinnamon. In a small bowl, whisk together the granulated sugar, eggs, mashed bananas, vanilla and the oil. Stir the wet ingredients into the dry until just combined. Spoon the batter about three-quarters full into the prepared pans. Bake until golden and a toothpick inserted comes out dry, 12 to 15 minutes; let cool completely on a rack.

Banana Frosting
1/4 cup shortening, at room temperature
2-1/4 cups confectioners’ sugar
1/2 cup mashed ripe banana (1 banana)
2 tsp pure vanilla extract (make sure it's gluten-free)
1-3/4 tsp ground cinnamon
1/4 tsp fresh lemon juice

Meanwhile, in a food processor, combine the shortening, confectioners' sugar, 1/2 cup banana, vanilla, cinnamon, and the lemon juice. Glaze the doughnuts with the frosting.

(We will be using this frosting on many things to come in the future, this would be awesome on cupcakes too)!

Christmas Baking: Sweets, Treats, Candy & Gift Ideas

December is here and that brings Christmas cheer everywhere. The beautiful trees are decorated, the houses have sparkling lights on them and all around I think everyone just seems like they are a little bit happier when Christmas is near! My house is all decorated (yes we have 3 trees this year), my shopping is all done, I still need to wrap my gifts (that will be tomorrow) and now I am happy that I can concentrate on the more important things. Family, Baking for friends, and donating my time & efforts to a few things that are dear to my heart which are Operation Christmas Child (my family packed over 120 shoe boxes for kids this weekend) and Operation Baking Gals (baking for soldiers).


My baking days will be next Saturday and Sunday (make sure you come back often to look for lots and lots of Christmas Baking recipes). I bake for about 40-60 people/families each year and I plan on sharing all my recipes here along in my 12 days of Christmas Goodies Blog Hop Party I will be hosting here starting at the end of this week!


Here is my first Christmas Baking recipe, I made these for the kids last week and there was not one single one left-over. I would say they were a HUGE HIT and will for sure make it into my family scrapbook/cookbook we are creating with our FAVORITE RECIPES from my blog.


Pumpkin Apple Cinnamon Cake Donuts
from Cherry Tea Cakes

1-1/4 cups all-purpose flour
1 cup white sugar
½ teaspoon Vietnamese cinnamon (we used regular cinnamon)
½ teaspoon freshly ground nutmeg
½ teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 eggs, lightly beaten
1/2 cup canned pumpkin puree
1/4 cup vegetable oil
1 cup peeled, cored and chopped apple

1 cup powdered sugar
2 teaspoons Vietnamese cinnamon (again used regular cinnamon)
apple cider or water

Preheat oven to 350. Lightly grease 12 doughnut molds.

In a large bowl, sift together flour, sugar, cinnamon, nutmeg, ginger, baking soda and salt. In a separate bowl, mix together egg, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into doughnut molds filling roughly half full.

Bake for roughly ten minutes, or until a toothpick inserted comes out clean. Allow to cool, and decorate accordingly.

To make the apple cinnamon glaze mix powdered sugar and cinnamon together in a bowl. Add cider or water until you reach the desired consistency. Dip each doughnut in and allow glaze to set.
