Texas Trash {Warm Bean Dip}


Yep, this replaces all other bean dips I've made (or posted) in the past. Sometimes you just come across those recipes and no other recipe will ever take it's place. Yep, this is one of those recipes. You can bet on it that this will for sure make it into my Volume 3 Family Cookbook/Scrapbook. And I just LOVE the name too.. how CUTE is that and since I have a step-son who lives in Texas, this ones for you Brandon!



Texas Trash {Warm Bean Dip}
recipe found at Life as a Lofthouse, original recipe from from allrecipes

1 (8 oz) pkg cream cheese, softened
1 cup sour cream
2 (16 oz) cans refried beans
1 pkg taco seasoning
3 to 5 drops of Tabasco Sauce
2 cups cheddar cheese, shredded
2 cups Monterrey jack cheese, shredded
diced green onions (mixed in or just garnish on top)

Preheat oven to 350 degrees. Mix together cream cheese and sour cream in a large bowl. Mix in refried beans until combined. Stir in taco seasoning and half of each of the cheeses. 
Spray a 9x13 baking pan with cooking spray. Spread mixture evenly into the bottom of the baking dish. Sprinkle the top with the remaining amounts of both cheeses.

Bake for 25-30 minutes, or until cheese in melted and slightly browned. Serve with tortilla chips.

Caramel Apple Dip - IMPROVED {THIS WEEK'S CRAVINGS LINKY PARTY #100}

I have always loved my apple dip that originally came from a Pampered Chef cookbook long long ago, but lately my friend has been making this great apple dip and so I thought I'd give it a try. It's actually almost exactly like mine, see original recipe here, but even better.



Caramel Apple Dip
idea from my friend Joleen, adapted by me, original idea from Pampered Chef

8 oz package cream cheese
3/4 cup packed brown sugar
1 tsp vanilla extract
1 cup chopped pecans (or use your favorite kind of nuts)
Caramel Ice Cream Topping
Heath Bar Crunch Topping (found in the baking isle)
Apple Slices (soak in Pineapple Juice)

In a small mixing bowl combine cream cheese, sugar, and vanilla beat until smooth. Add in pecans and beat until combined. Transfer to a serving bowl and then cover the top with Heath Crunch Bar and drizzle with lots of caramel on top.

Core and cut apples slices into wedges and then soak in pineapple juice. You can remove apples and serve on a platter with the dip and the apples will not go brown.
Perfect dip for my fresh picked apples from Oak Glen, it's apple picking season and I LOVE IT!

Homemade Ranch Salad Dressing/Dip {CRAZY COOKING CHALLENGE #13}

Welcome to the all NEW and IMPROVED - CRAZY COOKING CHALLENGE

Each month for the past year we have had a group of awesome people blog together, the same themed item (main dish or dessert) at the same time. This is our FAVORITE homemade ranch dressing, to date. And we've made alot of ranch dressings. We use Ranch dressing or dip with just about everything you can imagine (and some you might not want to imagine). It's one of those things we put Ranch on top of our Ranch. What would the world be without Ranch Dip? What on earth would I dip my pizza in? And my daughter dip her french fries in and my son his chicken nuggets? The list just goes on and on. Life is just BETTER with Ranch!

Homemade Ranch Dressing/Dip
found over at Smells Like Home, originally came from The Gourmet Cookbook, 2004

3/4 cup mayonnaise
3/4 cup sour cream
1 Tbsp olive oil
1 Tbsp lemon juice
1/4 to 1 cup buttermilk
small bunch of chives, roughly chopped
small handful of parsley
1 clove garlic
1/2 tsp sea salt
1/4 tsp freshly ground black pepper

Place all ingredients with 1/4 cup of buttermilk in a blender and blend for 10 seconds. Check consistency and blend in additional buttermilk if desired. Less buttermilk for dipping or pizza dipping sauce or more buttermilk for salad dressing. Store in an air-tight jar in the fridge.


I made a great presentation at my daughters' graduation party with this dip and a vegetable tray. This idea of course was found on Pinterest and came from Eddie Ross. I filled mine a little too much, but all in all it still worked out great, especially for a large party when you begin to run out of nice glass bowls or you just want a very cool presentation for the veggie tray. This bowl was a cinch to clean up too (it all just went straight to the garage after a 12 hour party).

It's time for the Secret Recipe Club; Group C! This is my 11th post for the Secret Recipe Club and I just love meeting new bloggers, making new things from other bloggers and enjoy everything this club have to offer.

When I am sent my blog assignment, I always jump right over and check it out. Of course, I start pinning everything I would LOVE to make, until my actual cooking day, then I usually choose just one recipe to make. My secret blog this month is Mommy's Menu. I have actually ran across this blog a time or two before, I just LOVE LOVE her weekly menu plan on the side column of her blog.

I did however read a post of her's about dinning at home; restaurant style. I am excited to try this. I already picked out my menu from her blog and I hope to do this sometime this week. We will be making Macaroni Grill Penne Rustica or Monterrey Chicken with Parmesan Roasted Potatoes and for dessert Decadent Chocolate Truffle Brownies. But, for today's recipe we will be enjoying a delicious cheesy bacon dip.

Cheesy Bacon Ranch Dip
recipe adapted by me, found over at Mommy's Menu

1 cup sour cream
1-1/2 tbsp Hidden Valley Ranch Dry Ranch Mix
3 to 4 slices of bacon, cooked and crumbled
small pinch of green onions, diced
1/3 cup grated cheddar cheese

In a bowl, mix all the ingredients together. Refrigerate for at least 2 hours or overnight to let the flavors blend. Serve with your favorite chips, crackers or veggies.

THIS WEEK'S CRAVINGS #69 (MEXICAN APPETIZERS, AVOCADO & SALSA) and Creamy Avocado Dip

Creamy Avocado Dip
I already have the BEST GUACAMOLE DIP ever posted on my blog. It took me years and years to get this recipe exactly how we like it! Since we think it's perfect, there really hasn't ever been or probably never will be another recipe to take it's place. Although, I DO want to try Pioneer Woman's Guacamole... someday! Until then, mine is the best, according to MY family.
But, today's theme is Mexican Appetizers, mainly avocados and salsa (and by the way I have an A-MA-ZING Homemade Salsa recipe) already posted on my blog too. Check that out here: Homemade Salsa.

It was a pajama-movie-kind-of-day and since I didn't have all the ingredients to make the BEST GUACAMOLE DIP or Pioneer Woman's Guacamole, I had to rummage through my recipe box and I create this new Creamy Avocado Dip and we LIKE IT!
I have to do a shout out to this AWESOME avocado tool my daughters got me for Christmas, all on their own
with no help or ideas from me. They purchsed it at William-Sonoma and it's one of the best tools ever!
Creamy Avocado Dip
created by me, Tina Hudgens

1/4 cup white onion, dice
fresh or dried cilantro, as much or as little as you liked
2 tsp (approx.) finely diced jalapeno, as much or as little as you like
1 tsp minced garlic
1/4 tsp cumin
3 drops hot pepper sauce
3 to 4 avocados
1 tbsp salsa
fresh lemon, squeeze juice (1 to 2 tbsp)
1 pkg (8oz) Cream Cheese, room temperature
1 cup finely shredded cheddar cheese
1/4 tsp kosher salt

Grind white onion, cilantro, jalapeno, garlic, cumin and hot sauce in a molcajete until all ingredients are well grounded (or use a fork until mixer is paste like).

Cut 3 to 4 medium avocados in half. Cut into small squares inside skin and then squeeze out. Scoop the diced avocado into the molcajete. Gently fold the avocado into the paste and mush as finely as possible.

Add in salsa, fresh lemon and cream cheese. Mix, until well blended. Fold in shredded cheese and then add kosher salt to taste. Chill for several hours before serving.

Hot Artichoke Dip
I just LOVE LOVE the Pioneer Woman's cookbook. I am sure ALL of you do too! I LOVE that it's down-home cooking! I LOVE that it's food my family will eat and I LOVE that everything I make from her cookbook is a HUGE HIT!

Pioneer Woman's Hot Artichoke Dip
found in The Pioneer Woman Cooks Cookbook, by Ree Drummond

2 (14 oz) cans artichoke hearts, drained
1 (8 oz) cream cheese
1 cup mayonnaise
1/4 tsp Cayenne Pepper
2 green onions, chopped
1 cup Parmesan Cheese, grated
dash of salt
fresh ground pepper

Preheat oven to 350. Add one can of artichokes, cream cheese, mayonnaise, green onions and cayenne pepper (add more if you like it hot) to food processor. Pulse about 7 times, you do NOT want to liquefy. Then add in the Parmesan cheese, salt and pepper.

Now, roughly chopped the additional can of artichokes, down to bite-size. Add these to the above mixture and mix together gently. Pour mixture into an oven-safe dish and bake for at least 20 minutes.

Veggie Cups

I just LOVE this idea! Perfect for a party or just serving for dinner! And portion control (although the more veggies the better), but perfect for making sure each child eats their portion too! And don't forget no need to worry about double-dipping toddlers or teens with these CUTE Veggie Cups!

Cut up sticks of Celery & Carrots and put with about 1/4 cup of Ranch dressing in a clear plastic cup. Prepare right before event and set out or serve to family at dinner time.

THIS WEEK'S CRAVINGS #53 (MEN COOK) and Homemade Salsa

Well, I've been trying for weeks to get my husband to cook dinner and it never happened. First you have to know that he NEVER cooks (only spaghetti and I already posted that), read about that here and he works ALOT of hours. I just don't mean he comes home late everyday. I mean he works 7 days a week, 12 hours a day, and when he is not working he is sleeping, his bed time is 6:30pm (SERIOUSLY). I can say we LOVE the overtime money, because it is helping us make leaps and bounds on our Dave Ramsey plan, but it does really suck sometimes. But, I had a very important post to come up with! I NEEDED a "MAN COOKING DINNER". I did the next best thing and recruited  my two adopted sons, Adam & Garrett. They really aren't adopted they are my twins best friends, since birth. They are part of a set of triplets (their sister is away at college, in New York) and my girls are twins (in case you are a new reader) and they are all BEST-BEST-FRIENDS. Here are the twins and the boys a few years ago. 

It was a busy weekend, I cooked a full Thanksgiving dinner on Saturday (it was delicious and I will be posting all the new recipes BEFORE Thanksgiving just in case you want some new ideas for this year). And on Sunday we had a celebration birthday dinner for my best friend, the triplets mom and for the triplets (except we had to Skype Brenda in New York). Carol made a mexican feast and it was YUMMY! We all came home stuffed. Garrett made the Homemade Salsa, and Adam will be making us a batch here at our home tonight (Adam is a regular guest at our house because his work and college are much closer to our house then his own home, so he visits us often and we love it)! Here are a few of my favorite pictures of them!

Adam first made this Homemade Salsa for a Salsa Contest in his Spanish Class his freshman year in High School, he is now a freshman in college and they have been making it ever since.

YES, this recipe won FIRST PLACE.


Homemade Salsa
the Lee Family Recipe, received from a friend

1 serrano chili, fresh & cut
2 jalapeno chili, fresh & cut
1 cup water
bundle of Cilantro, use about a quarter of the bunch
1/2 brown onion
1 or 2 garlic cloves
2 regular size cans of stewed tomatoes, use the Mexican Spice
salt to taste

In the blender mix cut chili's, crush garlic, cut up onion and water. Blend well and set aside in a bowl. Blend can of tomatoes and cilantro (no stems). Mix the tomato mixture with the other and add salt to taste. Serve with tortilla chips and a mexican feast.

White Chocolate Mousse & Strawberry Shortcake Skewers

I am going berry picking today and I am so excited. My last year's raspberries and blackberries lasted me almost a year (in the freezer, of course). But fresh frozen berries are still so much better then store-bought frozen berries. Check out my post from last year, including many photos of berry and apple picking! This year I am going twice. Once today with a great friend because we want some berries, and then I will be going camping in October and doing lots of apple picking with family and friends, but by then the berries will be all gone. Does anyone know can you freeze apples? I've never tried it and I'd love to hear your thoughts.

Here are TWO great recipes.... the Strawberry Shortcake Skewers are so simple and so fabulous. Great to have at any party or get together. And this White Chocolate Mousse from Your Homebased Mom is unbelievable. Yes, my girls and I sat down and ate the whole bowl (at least we paired it with some healthy fruit and we didn't eat it all in one sitting, but we probably could have). I can't wait to try this mousse with crepes.


Strawberry Shortcake Skewers
Frozen Pound cake, cut into squares
Favorite Fruit, Strawberries and Blueberries work great

Cut pound cake into squares and slide onto a skewer with your favorite fruit. It's simple, it's easy and everyone loves it.

White Chocolate Mousse
from Your Homebased Mom, found originally on Evil Shenanigans

1 cup milk (whole milk would be the best)
1/3 cup sugar
2 tbsp cornstarch
1 egg yolk
1 tsp vanilla
1 tbsp butter
3 oz. white chocolate, finely chopped
1/2 tsp gelatin
1 tbsp cold water
1 cup whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla

Combine milk, cornstarch, sugar and egg yolk into a medium sauce pan.  Whisk together well.  Over medium heat, cook until it thickens and comes to a simmer.  Whisk constantly.  It will take about 10 minutes.

Then remove from heat and add in vanilla, butter and white chocolate.  Mix until everything is melted (make sure white chocolate melts completely.  Pour into a bowl and cover with plastic wrap and chill for four hours or overnight.

In a small cup or bowl combine the gelatin with the water.  Let it stand for about 10 minutes.  Then pop into the microwave for about 10 seconds to melt the gelatin.  Cool to room temperature.

Then combine cream, powdered sugar and vanilla.  Whip until thick.  Add in gelatin and mix until medium peaks are formed.  Fold the whipped cream into the white chocolate mixture in 3 parts.  Cover and chill for at least an hour or overnight.

Who doesn't love chips and dips? This is an all-time favorite for any gathering, and a Memorial Day BBQ is no different. I made this delicious dip only once before but had forgotten how good it was. A few weekends ago while we were camping I made the standard 7-layer dip with refried beans (and to be honest, I just don't like it... I can not stand cold beans, so it's totally yuck to me). When I was thinking what recipe I could share with all of you today, I remembered this one and decided to make it, photograph it and of course eat it too!
Six-Layer Dip
Kraft Food & Family

Layer 1: 1 ripe avocado mixed with 1 pkg Cream Cheese (8oz), softened
Layer 2: 1 cup sour cream mixed with 2 tbsp taco seasoning (or a little less if it's too strong)
Layer 3: Mix 3 tbsp salsa with 1 ripe avocado chopped
Layer 4: 3/4 cup shredded Cheddar Cheese
Layer 5: 1 small tomato, chopped
Layer 6: 2 green onions, sliced

Layer each layer one by one in a glass pie pan. Refrigerate until ready to serve.

Mighty Meaty Nachos

My twins and I die for this CHEESE Nacho Sauce, anywhere, anytime, anyplace. BRING IT ON!
Mighty Meaty Nachos

32 oz Velveeta Cheese
1 can Rotel tomatoes and green chillies
1 lb Sausage, browned and drained
1 lb hamburger, browned and drained
1 small jar of salsa
1 can cream of mushroom soup small, fajita size flour tortillas (or just use chips if don't want to make fresh) 3-4 cups vegetable oil kosher salt 

Melt Velveeta cheese on stove top, then add in Rotel, meat, salsa and soup. Mix together. Keep warm in crock-pot.   To make chips: Heat about 1" of oil in a skillet over medium heat for about 5 minutes. Cut tortillas into 1/4th to make chip size. Heat chips in oil for about 1 minute on each side or until goldenbrown. Remove chips to a bowl lined with paper towels sprinkle with a pinch of kosher salt. Together it makes Mighty Meaty Nachos!

The PERFECT Guacamole & TOP 5 THANKSGIVING RECIPES

I am SO EXCITED to share with all of my readers that not one, not two, but 5 of my Thanksgiving Holiday Recipes were featured on Hoosier Homemade from the Days of Thanksgiving on It's a Blog Party.

Holiday Tips to Get in Done from Better Homes and Gardens: Set up a beverage station on a side table, or in a different room, so guests are not coming in and out of the busiest part of the kitchen to get drinks. (I have a separate great room with a very long counter and we always have the drinks out there, my kitchen is extremely small and there is no room for others to be coming in and out.)

We have made lots and lots of Guacamole recipes and this is "thee one". We will never ever need to try another Guacamole recipe. Ya, know the one. when you find that ONE perfect recipe, there is no more searching. This is another one of our favorite dips. My girls insist that we serve this at every gathering in our home and on the weekends too. If there is avocados in my refrigerator you can bet they are asking for this to be made (and now they have learned to make it themselves, that's how much they like it). This would be another great recipe to make for those hungry Thanksgiving guests. They can munch on this with chips or veggies while you are busy in the kitchen preparing the main Thanksgiving meal.


The Perfect Guacamole
4 Avocados
1/4 tsp Sea Salt
1 tsp Lime and/or Lemon Juice
1-2 Roma Tomatoes
Onion, chopped (as many or little as you'd like)
Jalapenos Chiles (we use very very little, but if you want spicy, add more)
1 tbsp Cilantro (fresh is better, but dried works too)

Slice avocados in half; scoop out the pit (and keep in the bowl), cut avocados in chunks and coarsely mash (do NOT mash until creamy). Season with coarse salt (go easy, use too much and it will overpower). Add in fresh lime or lemon. Mix in tomatoes (cherry or grape tomatoes work great too). Sprinkle in finely chopped onions, a few chopped jalapeno's and some finely chopped fresh cilantro.

The BEST Guacamole EVER!!!
