Parmesan Crusted Chicken

My daughters' Senior Photos have been taken, invitations/announcements have been ordered and party planning has begun! Okay, this IS so real! I will have two kids graduating VERY SOON! The big question everyone seems to be asking me is "Are you sad?" and believe it or not, I am NOT SAD! I am happy, excited, overjoyed and thrilled. I am so excited for this next chapter in their lives and I know they are too. God has great things in store for them and I can't wait to get them started already. 25 more schools days.... HURRY UP ALREADY!!!

This chicken was so easy to make. It was quick to put together, quick to cook and very quick to eat. We all enjoyed it very much! What I am MOST worried about when my twins leave is, that I will have no one to cook for anymore. My husband works too much and my little guy only wants noodles with butter. What is a blogger to do?


Parmesan Crusted Chicken
recipe from Best Foods Mayonnaise

1/2 cup Best Foods Real Mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves (or use chicken tenderloins, you can buy at Costco)
4 tsp Italian seasoned dry bread crumbs
add in a dash of red pepper or fresh pepper into bread crumbs (if desired)

Preheat oven to 425°.  Combine real mayonnaise with parmesan cheese in medium bowl. I try and dip chicken into mayo/cheese mixture and then dip into the bread crumbs. After, arrange chicken on baking sheet and I add more of the may/cheese mixture to the top of the chicken and then sprinkle the rest of the bread crumbs on top. Bake 20 minutes or until chicken is thoroughly cooked.

Resurrection Rolls for Easter

My kids are older I know, but these are the cutest things ever. I had never heard of these before, let alone ever made them and I couldn't resist. What an AWESOME way to tell a Bible story to small children (or big children too)!


Resurrection Rolls

1 roll of Pillsbury Grands Biscuits (or you can use Crescent Rolls)
8 large marshmallows (or one for each roll you’ll be making)
Melted butter
Cinnamon sugar

If you have young children (or old), this is a great family activity. Read John 19 while the oven is preheating to 350.

Unroll the Grand Biscuits and roll them out into a large circle (or use crescent rolls) and place on a baking sheet lined with parchment paper (or sprayed). Explain that this is like the cloth they wrapped Jesus in.

Give your child a marshmallow and explain that it represents Jesus, all white and pure because He was without sin. Roll the marshmallows in the melted butter. This symbolizes the embalming oils. Roll the marshmallows in the cinnamon sugar. This is like the spices used to prepare his body for burial.

Wrap the marshmallow in the crescent roll or grand biscuit, pinching the dough together securely. This is the cloth that represents how they wrapped Jesus’ body.

Put the rolls in the oven, symbolizing the tomb, and bake for 12 minutes.

While the rolls are baking, read John 20:1-18.

1 Early on the first day of the week, while it was still dark, Mary Magdalene went to the tomb and saw that the stone had been removed from the entrance. 2 So she came running to Simon Peter and the other disciple, the one Jesus loved, and said, “They have taken the Lord out of the tomb, and we don’t know where they have put him!” 3 So Peter and the other disciple started for the tomb. 4 Both were running, but the other disciple outran Peter and reached the tomb first. 5 He bent over and looked in at the strips of linen lying there but did not go in. 6 Then Simon Peter came along behind him and went straight into the tomb. He saw the strips of linen lying there, 7 as well as the cloth that had been wrapped around Jesus’ head. The cloth was still lying in its place, separate from the linen. 8 Finally the other disciple, who had reached the tomb first, also went inside. He saw and believed. 9 (They still did not understand from Scripture that Jesus had to rise from the dead.) 10 Then the disciples went back to where they were staying.

11 Now Mary stood outside the tomb crying. As she wept, she bent over to look into the tomb 12 and saw two angels in white, seated where Jesus’ body had been, one at the head and the other at the foot. 13 They asked her, “Woman, why are you crying?”
“They have taken my Lord away,” she said, “and I don’t know where they have put him.” 14 At this, she turned around and saw Jesus standing there, but she did not realize that it was Jesus.
15 He asked her, “Woman, why are you crying? Who is it you are looking for?”
Thinking he was the gardener, she said, “Sir, if you have carried him away, tell me where you have put him, and I will get him.”
16 Jesus said to her, “Mary.”
She turned toward him and cried out in Aramaic, “Rabboni!” (which means “Teacher”).
17 Jesus said, “Do not hold on to me, for I have not yet ascended to the Father. Go instead to my brothers and tell them, ‘I am ascending to my Father and your Father, to my God and your God.’”
18 Mary Magdalene went to the disciples with the news: “I have seen the Lord!” And she told them that he had said these things to her.
Open the (oven) tomb and remove the rolls. When they’re cool enough to handle, break one open and discover what happened to the marshmallow, it disappears. This means Jesus is Risen, rejoice and celebrate.

Sharing Scrapbook Pages - October 2011

My other LOVE is scrapbooking and ever since digital-scrapbooking came out... I now LOVE it even more. You can see many of my family scrapbook pages here, I try and share atleast once a month. This last month (as most of you know who already read my blog), I surprised my twin daughters with a dream trip to New York City for their 18th Birthday (and as an added bonus it was my 40th birthday too). My mom, their grandma came with us too and we had an AMAZING trip! I am so happy that I pulled off this surprise for my girls! They grow up way too fast, but I am excited about this next part of their lives.

Sharing Scrapbook Pages (July 2011)

Once a month I like to share my other passion, digital scrapbooking! I have been scrapbooking for over 12 years now and my love for scrapbooking hasn't changed, only gotten stronger. And now with digital scrapbooking I am in love all over again. This is my number one hobby (and my only hobby), besides cooking and baking. Here are a few scrapbook pages to share with you from my latest summer vacation, where my entire family (all 18 of us) went to Turks and Caicos. It was one of the best vacations ever!!!

I hope that sharing these will give you inspiration to start, finish or just thinking about beginning your own family scrapbook. I use Creative Memories Storybook Creator Plus and it's amazing!

Ole' Favorites - Lunch Recipes from 2010

We are off on our second family vacation of the Summer, Moabi at the River. (My hubby and son our on their 3rd vacation, as they do a guys only fishing trip that they just returned from 13 days ago..lucky guys). This is my kids favorite vacation of all, it's 10 days of water fun, with lots of their friends (I have twins plus one and I am taking another set of twins plus one, another other friend has triplets plus one & my other friend has two, that equals a whole lot of kids). We have several families who go with us, we get our own private beach and we have a blast. From sun-up to sun-down we are in the water playing, talking, relaxing and doing any and all kinds of water-sports, plus a few years ago the kids started making up Survivor type games each day and theme nights each night. This is a newer tradition and is so much fun, we always have 100% participation.

Here are some scrapbook pages from last year, and since I am on vacation I have pre-scheduled lots of fun recipes for you all week long. So, please stop back by and see everything I've been making so far this summer.

My block has an annual 4th of July Block Party every year! Here is a scrapbook page from last year. It's an amazing day for the kids and adults too. The street is blocked off, the kids can run their bikes up and down the middle of the street with no worries. Everyone hosts their own party within the block party at their respective houses, and then there is stations at each house with cotton candy, watermelon eating contest, hula hoop, dunk tank and much more. But, at the end of the day we all gather in the middle of the street to watch the fireworks go off. This block party is actually the longest running block party in our city and a few years ago, the mayor of our city even visited our party (and we live in a very large city, so it was quite an honor). It was fun for the kids and we even got written up in the newspaper. The block party has been going on for like 20-something years, WOW! It's so fun to be a part of this spectacular event.



Today, I am sharing a delicious recipe that I made over a year ago way before I started my blog. It was just one of those recipes I made, took a quick snap shot of and everyone LOVED (there was no photo shot for this cookie)! Everyone, more then loved it and I knew it was a hit when it went very quickly! I of course decorated it with Red, White & Blue for our 4th of July Block party. The thing is that it was one of those recipes that looked great photographed and I used it for the top of my blog, in the heading. Little did I know people have been searching for it all this time! I am SO sorry to have made you wait almost a year for the recipe, but if it's any consolation it's totally worth it! And actually these would be absolutely perfect for Christmas, a Birthday Party, a Sports Team Celebration or a Baby Shower! So, don't wait like I did to make them ONLY for 4th of July, change the colors up and make them right away for whatever you may be celebrating next!

Sugar Cookie Bars

1 cup butter; room temperature
2 cups sugar
4 eggs
2 tsp vanilla
5 cups flour
1 tsp salt
1/2 tsp baking soda

Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well. In a separate bowl combine flour, salt & soda & stir with a whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan).

Bake at 375 degrees for 10-15 min, until light golden brown or until a toothpick comes out clean. Cool completely and frost.

Sugar Cookie Frosting
1/2 cup butter; room temperature
1/2 cup shortening
1 tsp vanilla
pinch of salt
4 cups powdered sugar
5 tbsp milk
food coloring (if desired)


Combine butter and shortening until smooth and creamy. Add vanilla and salt. Add powdered sugar in 1-2 cup increments until combined, then add milk & mix until smooth and spreading consistency. Spread over cooled cookie.

Sharing Scrapbook Pages (June 2011)

If you LOVE scrapbooking like I do, then you can never have too many ideas. I really have been lacking on sharing my scrapbooking ideas here on MOMS CRAZY COOKING. Yes, I know it's a food blog, but as my title says... BAKING... COOKING... SCRAPBOOKING a few of my favorite things!

I just recently went to my semi-annual moms scrapbooking weekend in Big Bear, California and of course had the time of my life. I haven't laughed that hard in a super long time (ya, teenagers are stressful)! But, I had a good 4-day break and I am back and ready to finish out this school year. (7 days left of school for my kids, yep I am excited) Let the SUMMER TIME begin! I've made a pretty heafty goal for myself this summer, I am going to FINISH all of my un-finished Scrapbook Projects that have been laying around way too long. I have a gigantic scrapbook room and my tables are already set up and ready to go. Each and everyday I am going to spend a little less time on my lap top and a little more time scrapbooking these things and getting them organized and added to my bookcase.

I thought today I would showcase a few of my favorite pages from my scrapbooking weekend that I completed..... ENJOY!

Mud Pie from Disney's Princess Tiana

My girls bought me this wonderful cookbook for Christmas The Princess and the Frog: Tiana's Cookbook: Recipes for Kids (Disney Princess: the Princess and the Frog) (Hardcover). We have been wanting to cook out of it ever since. We tried one of the recipes (didn't go too well), but we didn't want to give up, so this weekend we made two more things from the book and LOVED both of them! Here is the first recipe and then we will be sharing the Berry Cobbler very soon!


Mud Pie

1 1/4 cups of crushed graham crackers (we used pre-crushed)
6 tbsp melted butter
1 quart Chocolate Chocolate Chip Ice Cream
1/2 cup chocolate fudge topping
1/2 cup semisweet chocolate chips
1 tub Cool Whip
2 tbsp powdered hot cocoa mix

Stir 1 cup of the crushed graham crackers into the melted butter. Pour into a 9" pie pan. After the crumbs have cooled, press them against the bottom and the sides of the pan to form the pie crust. Freeze the crust for 20 minutes.

Remove ice cream from freezer and let thaw, almost completely. Stir the "extra" chocolate chips into the ice cream then scoop the ice cream into the pie crust and spread evenly. Dig about 8 holes in the ice cream and fill each with a tbsp of fudge-topping. Re-freeze for another 20 minutes. Stir the Cool Whip with the powdered hot cocoa mix and then spread over the pie, then sprinkle on the remaining cracker crumbs. Wrap the pie in plastic and freeze it for 3 to 4 hours before serving.





My girls are TRUE Disney fans! They would live at Disneyland if they could! They LOVE it, and of course living only 20 minutes away we have annual passes and it is their favorite past time of all. And this summer it is their life-long dream to dance and or at least work at Disney, they will be 18 years old this year and will finally be able to apply to work at Disneyland!
