Breakfast Fried Rice {gluten free}

This was so fun and such a different breakfast to make on a lazy morning. The girls had friends over and this was a perfect breakfast for some lovely teenagers/young adults that I often wake up to on a Saturday morning.


Breakfast Fried Rice
recipe found at Lynn's Kitchen Adventures

2 tbsp olive oil
4 eggs
4 tbsp soy sauce (gluten free if you need too)
1/2 lb sausage (we love Jimmy Dean, cooked first)
2 cups cooked rice (cold leftover rice works best)
2 tbsp rice vinegar

Mix together 2 tbsp of soy sauce with the eggs and beat well, I add a dash of milk too. Heat tbsp of olive oil in a large skillet on stove top. Add egg to pan and cook, but leave a little running do not over cook. Remove egg from pan and set aside.

Return pan to stove and add a little more oil. (you can a use a little grease from the sausage if you wish). Add cooked rice and cook for 4-5 minutes or until rice is starting to lightly brown (rice must be pre cooked you can not use uncooked rice). then add the egg back to the pan along with the meat, remaining soy sauce and the rice vinegar. Let cook for 2-3 minutes more, add some soy sauce if you desire and serve. A great easy breakfast.

Servings can be stored and frozen to be eaten later.

GLUTEN FREE Banana Bread {from a cake mix}

This has got to be the easiest and simplest banana bread (and GLUTEN FREE) to top it off. You can make it either way though, gluten free or not, choice is yours.


After the Banana Bread is baked and cooled, I wrap them individually and freeze them for my daughter. This gives her a fresh gluten free banana bread slice anytime she wants.

Banana Bread from a Cake Mix {gluten-free}
adapted, original recipe found at Betty Crocker

Betty Crocker GF Yellow Cake Mix (we used a GLUTEN FREE cake mix, but either work well)
3 Eggs
3 to 4 Overripe Bananas
1/2 cup butter, softened
1/2 cup chopped nuts (but you can add in mini chocolate chips too)

(Options: adding in a 1 tsp of vanilla, 1/2 tsp cinnamon and someone added a snack size applesauce, I will try this for sure next time. Fall Option: Instead of Bananas add in 1 cup of pumpkin and 1 cup of chocolate chips instead of nuts.)

Smash bananas on a paper plate before added them to your mixer (if works great and it's easy peasy). Add in remaining ingredients and mix well. Prepare your loaf pan with non-stick spray and a little bit of flour, then pour batter into a loaf pan and bake.
Bake at 350 for 55 minutes, or until center comes out clean on a toothpick.
FREEZER TIP: When you have a stack of bananas or just one or two left on the counter that go uneaten FREEZE them. I never throw away a ripe banana. You can freeze them whole just as they are with the peel and everything. Then when you are ready to bake some banana bread, banana cupcakes or banana cookies, just remove the banana from the freezer and within 5 to 10 minutes its ready to add to your batter. OR if you LOVE smoothies, I take the banana and slice it and put it into a ziploc bag so I can add it to my next smoothy. No need to even thaw it out, just add to smoothy like ice and it makes it cold and also adds all the nutrients of a banana. I hope you try this and NEVER throw another banana away again.

Apple Cake & Happy Birthday Grandma Fay {my Angel in Heaven}

It would be my Grandma Fay's 100th birthday today. It's so hard to imagine and I still sometimes can't believe she is gone. I believe she is my Angel in Heaven watching down on me, some say I was her favorite grandchild and that I am just like her and ya know I am perfectly okay with that. She was funny and quirky and she had her little things about her that we all can laugh SO hard at, including all our thift-store Christmas gifts. But I love'd her very much and I would take her quirky style anyday.



We were having a BBQ for my twin daughters at my Uncle Mike's house (who is my Dad's twin brother, and her sons's) and I was suppose to bring dessert. I thought of all the apples I had that needed used up and this cake came to mind. I began making it and then it hit me, I think it's my grandma's birthday this month and yep (a little check in my scrapbook to confirm that date) and yep it would be her 100th birthday today. She was born August 11, 1912. I can't imagine her being here today, but I also know she is in heaven and watching down on my family each and every day.

This recipe is a re-post, but the first time I posted I didn't have any photo creating the cake, so here ya go. Also I decided to make this version Gluten-Free for one of my daughters and guess what it worked out perfectly. SO EXCITED I have another dessert I can make her.


Apple Cake (gluten-free version)
recipe from Grandma Fay

2 cups sugar
1/2 cup oil
2 cups flour (or all-purpose gluten free flour)
2 eggs
4 cups apples (peeled and diced)
2 tsp vanilla
1 tsp cinnamon
2 tsp baking soda
1 cup walnuts, crushed

Mix all together and pour into a greased 9x13 baking dish. Bake for 1 hour at 325 degrees.

Cream Cheese Frosting
1-1/2 cups powder sugar
8 oz cream cheese
4 tbsp butter
1/4 tsp vanilla

Mix all together in an electric mixer until smooth. Spread on top of cake after it has cooled down.
Store the cake in the refrigerator, but serve at room temperature.


I would say we pretty much devoured this cake. And yep it was delicious.

Stuffed Apple a'la Mode (GLUTEN FREE) from GUEST BLOGGER: As Good As Gluten

I am so glad that this blogger decided to be a guest for us. I really need Gluten Free recipes for one of my twins, yep all the symtoms are back again. I just feel so bad for her. Gluten-Free cooking here we come, again! Hello, everyone at MOMS CRAZY COOKING. My name is Lauren and my blog is As Good As Gluten, where my mission is finding and creating simple, gluten free recipes that really do taste As Good As Gluten. I’ve been blogging for just over a year now, which was around the time when I started following a gluten-free diet. Following the gluten-free diet has been a blessing in disguise, as it has rekindled my passion for cooking and baking. Before I started following the gluten-free diet, my husband and I had a regular rotation of meals we would make. Over the past year, it has actually become the “special occasion” when we make a recipe for a second or third time. Despite how much we love almost all of the recipes that I blog, I’m creative and there are just so many more recipes that I’m anxious to create or put my own spin on.

Before I began following the gluten-free diet in September of 2010, a few of my immediate family members were diagnosed celiac or gluten intolerant and had been following the diet for a year or so. Despite knowing in the back of my mind for a good year that I needed to be gluten-free, I finally had a moment of clarity last year. I started connecting the dots that the health symptoms that plagued me for years were identical to the symptoms that my family members had before going gluten-free. I finally decided to fully commit to trying the gluten-free diet to see if made a serious difference in my health.

Within days of following the gluten-free diet, the health symptoms I had experienced for many, many years were gone. I realized that the problems that plagued me were not a way of life and they could easily be avoided. I felt SO much better; I felt incredible! Not only did I feel better within days of starting the diet, but I felt significantly better each month and every month since! I’m thankful for my gluten intolerance, as I’ve had one amazing gluten-free year! I’m looking forward to always living a gluten-free life and seeing where it takes me!

Today it takes me to sharing a quick and delicious fall recipe for you – Stuffed Apple á la Mode. This recipe is adapted from a fall issue of Everyday with Rachael Ray. It takes minutes to prepare this aromatic, mouth watering dessert. Stuffed Apple á la Mode packs all of the delicious flavors of apple pie into a stuffed apple. My husband and I shared one, which I would not recommend because it is simply too scrumptious to share! Our spoons were fighting for the last few bites in the bowl. If you’re not gluten-free, you can use regular oats and all-purpose flour in substitution for the gluten-free ingredients in the recipe below. Enjoy!


Stuffed Apple a'la Mode
adapted from a fall issue of Everyday with Rachael Ray

1 Honeycrisp apple, peeled
1 TBS butter
1 TBS quick-cooking gluten-free rolled oats
1 TBS brown sugar
1 tsp brown rice flour
Dash of salt
1/2 tsp cinnamon
1/4 cup apple cider
All natural vanilla ice cream

Using a melon baller, hollow out the center of the top half of the apple, removing the seeds as well.  In a small bowl, mix ingredients from butter to cinnamon. Stuff mixture into the center of the apple. Place in a microwaveable bowl with the apple cider on the bottom. Microwave on high until softened and bubbling, about 5 minutes. Serve with ice cream.

Asian Slaw Salad (GLUTEN-FREE)

This is such a great EASY salad that you can throw together and take to a pot-luck, serve with some chicken or just eat by itself. We had this salad for the first time at a beach party and it was delicious!



Asian Slaw Salad (GLUTEN-FREE)
from my friend Tara/Michelle

2 bags of cole slaw
1 bunch green onions, sliced thin
1 bunch cilantro, coarsely chopped
2 handful peanuts, chopped
2 small sunflower seeds
1 slivered almonds
1 bottle of Soy Vay Toasted Sesame Dressing

Throw it all together in a bowl and mix it together with the dressing. Serve.

White Chocolate Cereal Clusters (GLUTEN-FREE)
originally from Family Circle - April 2011, adapted by me

2-1/2 cups Rice Chex Mix
2-1/2 cups Corn Chex Mix
1 cup mini marshmallows
1 cup mini chocolate chips
3 cups white chocolate, melted

Pour cereal into colander; sift out small pieces. In large bowl combine cereals, marshmallows and mini chocolate chips.

Microwave white chocolate until melted. Pour white chocolate over mixture in bowl; stir until all dry pieces are coated. Working quickly, drop by heaping spoonfuls onto prepared cookie sheets (or into mini muffin pans). Let stand at room temperature until dry to the touch.

One of my 17-year old twins is still having a ton of problems with her stomach! We have another series of doctor appointments coming up, as they ruled out Celiac but they still do not know what's wrong with her. All we do know is that when she eats Gluten-Free and mostly Dairy-Free, it almost fixes itself, weird, I know. I have been sharing recipes on here every so often that are Gluten-Free and Dairy-Free, check them out if you are in need of things like this.

I came across this amazing cookbook, that I just LOVE LOVE; Cooking for Isaiah by Silvana Nardone. It is fun delicious ideas with all Gluten-Free and Dairy-Free meals. The author is Editor in Chief of Everyday with Rachel Ray and Isaiah is her son. She also has a great blog; Silvanas Kitchen. If you are looking for GLUTEN-FREE and/or DAIRY-FREE, I encourage you to check her out. All of her stuff looks amazing!

Sweet Potatoes are a new food for my family, as I never ever liked them growing up (sorry mom, but out of the can just doesn't cut it), they are so gross. Then I discovered fresh sweet potatoes, absolutely scrumptious. And my girls love them too! Now, we just look for different ways to prepare them. We already know we do NOT like them mashed, I don't know why, we just don't. Here are a few of our favorite Sweet Potato recipes.... Magic Sweet Potato Muffins, Sweet Potatoes & Apples, and now we have a new favorite Pineapple Sweet Potatoes.


Pineapple Sweet Potato Bake
(Gluten-Free & Dairy-Free)
adapted from Cooking for Isaiah Cookbook (many changes were made)

4 to 6 Sweet Potatoes, peeled and sliced
1/2 cup light brown sugar
2 tbsp olive oil
1 tsp salt
1 (20 oz can) crushed pineapple, drained
1 bag marshmallows

Preheat the oven to 350, Grease a 9x13 baking pan. Cut sweet potatoes in 1" slices and lay on the bottom of the pan. Mix together brown sugar, olive oil and salt. Spread the pineapples over top the sweet potatoes. Bake stirring once, until sweet potatoes are fully cooked, about 45 minutes. Top the sweet potatoes with as many or as few marshmallows as you wish, press lightly and then bake until toasted, about 5 minutes.

(Any left over sweet potatoes are great to blend up and use to make our delicious Magic Sweet Potato Muffins or the Banana Sweet Potato Muffins)

THIS WEEK'S CRAVINGS #33 Linky Party (DAD'S Favorite Meal) and Flourless Peanut Butter Cookies

My husband's favorite meal? Well, I know what it is and I've tried to duplicate it with NO success at all, so I gave up trying a few years ago. His all time favorite meal is: Fried Chicken. Not any Fried Chicken, it can only be Kentucky Fried Chicken or his mama's Fried Chicken. (someday I hope to duplicate his mama's Fried Chicken, but so far no way)

So, today I decided because it was National Peanut Butter Cookie Day yesterday, that I would make a batch of Flourless Peanut Butter Cookies! And these were a HUGE success! YEAH ME!!!

Flourless Peanut Butter Cookies (Gluten-Free)
from unknown Gluten-Free Cookbook

1 cup packed light brown sugar
1 cup smooth peanut butter (we used chunky)
1 egg, lightly beaten
1/2 cup semisweet chocolate chips (we used mini)

Preheat oven to 350. Beat brown sugar, peanut butter and egg in medium bowl with electric mixer until blended and smooth. (unless you are using chunky peanut butter, then just blend until blended, there will still be chunks in it) Add in mini chocolate chips and stir.

Shape dough into round balls; place 2 inches apart on ungreased cookie sheets. Flatten slightly with fork. Bake 10 to 12 minutes or until set. Transfer to wire rack; cool completely.

Crab Macaroni and Cheese (GLUTEN-FREE)

My girls (and hubby) were lovin' this recipe! ME, I do NOT eat seafood, NO WHERE, NO HOW, NEVER! I eat NOTHING from the sea. (sorry everyone!) My girls and hubby however LOVE it all. And crab is there new favorite favorite thing. I usually just whip them up a stir fry and call it a day. It's not too often that I can create my own recipe from scratch but tonight I felt inspired to try and use some things up in my refrigerator. And it was a HIT, a HUGE HIT! Crab Macaroni and Cheese (I really wish I liked Crab it looked so good! Believe me, I tried, I got it all the way to my mouth and then I just want to gag from the smell of "fish") But, for all those folks out there who LOVE seafood, my family says you must try this!


Crab Macaroni and Cheese (GLUTEN-FREE)
by Tina Hudgens

1 pkg Macaroni Noodles (Gluten-Free)
1 pkg of Crab Meat (or use fresh if you'd like)
1 tbsp butter
1 tbsp of flour (Gluten-Free)
1 tbsp of Cornstarch
1 cup of fat-free milk
1/2 cup of (fresh) Mozzarella, chunks or grated
1/4 cup of Cheddar Cheese, chunks or grated
1 to 2 tbsp of Parsley

Cook macaroni noodles according to package directions. Then melt butter in a sauce pan until bubbly; add in flour and cornstarch. Stir for a few minutes and then add in milk. Bring to a soft boil and then add in cheese; stir until melted. Stir together the macaroni, cheese sauce and parsley spread into an 8x8 baking dish. Bake at 350 for 35 to 45 minutes until bubbly. Serve & Enjoy!

Best BBQ Burgers (on a bed of lettuce) (GLUTEN-FREE)

Ya, can't beat a nice juicy hamburger patty. I would eat one of these any day of the week. We like to pre-make these hamburger patties and store them in the freezer, this way we can have fresh hamburgers patties at any time. We are trying to eat GLUTEN-FREE and a little healthier so we skipped the bun, but for my son he enjoyed a hamburger bun. It's great that we can make these burgers and everyone is happy! Enjoy this simple yet delicious recipe!

Best BBQ Burgers

2 eggs, beaten
1 tbsp mustard
1 tbsp chili sauce
2 tsp Worcestershire Sauce
1 small onion, finely chopped
1 tsp seasoned salt
1 garlic clove, minced
1 lb ground beef (we use half ground beef & half turkey)
6 hamburger buns or a bed of lettuce

In a large bowl combine the first seven ingredients. Crumble beef of mixture and mix well. Shape into six patties and grill.

Homemade Sauce
1/4 cup mayonnaise
2 tbsp ketchup
1 tbsp relish

Mix all together and serve ontop of hamburger patty/salad (no need for salad dressing either).

Bird's Nest - Eggs & Potatoes (GLUTEN-FREE)

Today, is the day! One of my twin daughters has to officially start eating Gluten-Free (at least for now), until we have a for sure diagnosis (celiac or just an intolerance to gluten). But, starting today we will be going down an unknown path of GLUTEN-FREE. This recipe was so very simple and yet we were so happy to find out that it was all GLUTEN-FREE.

Bird's Nest (Eggs & Potatoes)

1 to 2 eggs
1 cup of frozen hashbrown potatoes
1 - 2 tsp of Grandma's Salt

Spray skillet with non-stick spray and heat. Add in frozen hashbrowns and begin to brown. Once they are completely cooked, spread them all out to the outer sides of the pan leaving a round circle in the middle of the pan. Crack egg, add to the pan; sprinkle with Grandma's Salt (or other seasoning) and begin cooking. For an over-easy egg let cook completely on one side and flip for just a second; then serve.

Scrambled Eggs with (hidden) Cauliflower (GLUTEN & DAIRY FREE)

Simple breakfast recipe, that adds in an extra veggie to my kids meals so that I can rest assured they are getting in enough veggies for the day. I purchased a wonderful cookbook (Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food) a while ago, when I was having a really hard time getting my son to eat anything that was remotely good for him. This cookbook saved my life at the time and left me with a few tricks up my sleeve that I still continue to this day. This is one of my favorites, adding in puree cauliflower to scrambled eggs, I also add cauliflower to mashed potatoes and sweet potatoes to Kraft Macaroni & Cheese.


Scrambled Eggs w/Puree Cauliflower

4 eggs
1/4 cup puree cauliflower (I store these little cups you see in the photo in my freezer, microwave them for 40 seconds and have them on had at all times)

Add 4 eggs in a bowl, add in your puree cauliflower, whisk and scramble them up on the stove top. They can NOT taste the cauliflower at all, and if you think they can, add in a little graded cheese and your good to go!


I am excited to do my first review for CSN Stores. Check out the cool Le Creuset line. I received one of these for Christmas from my husband and I have yet to use it, but I am excited about finding a recipe to cook in my new pan!

THIS WEEK'S CRAVINGS LINKY PARTY #20 (Go GREEN!!!) and St. Patrick's Day Frog Smoothie (GLUTEN-FREE)

THIS WEEK'S CRAVINGS Linky Party #20
The Theme is: GO GREEN for St. Patrick's Day Celebration
St. Patrick's is not a big holiday celebration around our house, but we do always make sure we wear our GREEN as we head out the door in the morning. This year will be no different, but this year we will be making sure we celebrate with lots of GREEN food. And since St. Patrick's Day is just a few days away, I can't wait to see what GREEN food you all bring to the blog hop party! I would love to see some GREEN cookies or some GREEN cupcakes. I will have to make them as soon as you share the recipe with all of us!

I came across this Frog Nog on Sister's Cafe Blog, where I spent the entire day on Friday printing out recipe after recipe of some amazing things I want to try. But since GREEN food day was coming first, I thought this recipe was perfect (plus I had some left-over spinach in the refrigerator)! This smoothie is so sweet and as long as you can get past the GREEN color, it is actually one of the best smoothies I have ever made.

St. Patrick's Frog Smoothie (GLUTEN-FREE)
adapted from original recipe found on Sister's Cafe Blog

2-4 cups spinach or other greens (I use mixed spinach and arugula)
1 banana
1/4 cup crushed pineapple
1 tbsp Honey
1 Vanilla Yogurt

Fill food processer (works MUCH better then a blender) with greens and a few tbsp of water. Pulse to blend until the greens turn to liquid greens. Add in banana, pineapple, honey and yogurt and continue to blend until smooth. Pour into the glass and serve!

Potato Salad (GLUTEN-FREE)

One of the first bloggers I ever had communication with was Kristin at Delightful Country Cookin'. She has a good amount of Gluten-Free recipes listed on her blog. I never really thought that I would have any need for them specifically until my daughter had to start eating Gluten-Free. Kristin has been so kind to help, email, share and guide me along this unknown road, Thank You Kristin. I picked out several of her recipes to make and here I am sharing the first one, Mama's Potato Salad.


Potato Salad (GLUTEN-FREE)
adapted from original recipe on Delightful Country Cookin'

4 medium cooked potatoes, cooled, peeled, and diced
salt and pepper to taste
1/4 cup sweet pickle relish (make sure it's Gluten-Free, not all relish is)
1/4 cup chopped onions
2 boiled eggs, chopped
1/2 tsp celery seed
1/2 cup mayonnaise
1/2 tbsp mustard
1/2 tbsp white vinegar
1/2 tbsp sugar

Mix together until potatoes are covered and evenly coated.  Garnish with paprika.
