My Food for the Week

Sunday's are relaxing days. I am still getting use to my NEW NORMAL with my twins away at college (far away 1837 miles) and my boy golfs with his dad every chance they get. That leaves this MAMA with way too much time on her hand. Yesterday was another quite Sunday and the boys were golfing and I decided to clean out the refrigerator, make up all my healthy meals for the week and get prepared for this healthy eating.


I am embarking on a new diet this week. Egg Whites, Oatmeal, Protein Shakes, Chicken and Sweet Potatoes, including eating all the green vegetables I want (as free food). I made my egg whites with peppers for my morning breakfast (I hope to wake up an extra half-hour early all this week in order to whip up these eggs). I finished my first day and I was actually FULL all day long, maybe even too full. I was stuffed.

I prepared all my food for the week. All lunches and dinners so they are easy to heat up and eat on the go. The first thing I prepared was Sweet Potatoes (three different recipes). I am only eating 4 oz of potatoes per day, so these three recipes will last for 6 days. I divided each recipe in half.


First Recipe: Sweet Potatoes with Pecans - sprinkle with olive oil and melted butter, sprinkle with brown sugar, pecans and cayenne pepper. Bake at 375 for about 45 minutes.

Second Recipe: Roasted Sweet Potatoes - sprinkle with olive oil and melted butter, sprinkle with brown sugar, cinnamon, nutmeg and a pinch of ginger. Bake at 375 for about 45 minutes.

Third Recipe: Roasted Vegetables - Sweet Potatoes, zucchini, grape tomatoes, minced garlic and chopped onions. Bake at 375 for about 45 minutes.


My goal is that each weekend (or each Sunday) I will continue to make my meals for the week at least while I am on this first "8 weeks" of this Eat Yourself Skinny challenge, and my challenge to myself is to come up with different sets of vegetables to cook each week.


I also made chicken breasts to eat for lunch and dinner this week. I am eating a 4 oz chicken breast twice a day. This is going to be easily done this week, because I created 7 large chicken breast today and cut each of them in half, which makes them about 4 oz each. I then marinated them in all kinds of different things that were already in my refrigerator. That last tbsp of BBQ sauce that's been hanging around, a tbsp of salad dressing and hot sauce; jelly and Catalina dressing and a multitude of other random things. I've already eaten two pieces of my chicken and it was wonderful.


I am also drinking my water. Goal is 3 smart waters or 6 bottles of water per day. And these lovely salads I prepared with all green veggies to have just a few days this week. My plan for the 3 salads is to cut up my chicken breast for that day and add it to my salad for a healthy lunch-time meal (beats fast food anyday)!

I am on my way to loosing weight and eating healthy!

Sweet Potato Muffins with Bananas

These Sweet Potato Muffins are a family favorite (and have actually become the all time favorite  snack in my girls math class in High School). The first time they brought these to their teacher (who they absolutley love and adore) she loved them. So, through out the year they brought in many batches and then the kids started wanting them and more and more people kept taking them from the poor teacher. I think I've now made them a few dozen times for not only one of their favorite teachers (and her daughter) but for the entire math class. Since school is out in just a few days, I've got the final request from my daughter to make yet anther batch of these one last time for the 2010-2011 Algebra 2 class of the lovely Mrs. Rinkel (and of course, I am SO happy to oblige).

This recipe is already a favorite here on my blog Magic Sweet Potato Muffins. But a few times ago, I tried to add in some mashed bananas and the results were just as good. The taste is really almost the same, but the added nutrition wont hurt. (I hate just eating bananas, so now I get them in some other way)


Magic Muffins
from Food Network - Melissa's Easy Left Overs
1/2 cup sugar
1/2 cup applesauce
2 eggs, beaten
3/4 cup mashed sweet potatoes
1 to 2 bananas, ripe and mashed
1/3 cup vegetable oil
1 cup flour
1/2 cup whole-wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
1/2 cup or more mini chocolate chips

Mix sugar, applesauce, eggs, sweet potatoes, bananas and oil in a bowl. In another bowl whisk flour, baking powder, baking soda, salt and spice. Mix the potato mixture into the flour mixture, then stir in some mini chocolate chips. Spoon into greased regular muffin pan, with or with out cupcake liners. Bake 12-13 minutes at 375.

THIS WEEKS CRAVINGS LINKY PARTY #22 (SURPRISE INGREDIENT) and Kraft Macaroni & Cheese w/Sweet Potatoes

When I first learned about adding in vegetables into my kids food I was so fascinated that I could actually pull it off. The book I was introduced to was Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food and after cooking from this book for a few months I learned so many things that I still use to this day. The recipe I am sharing today is one of my own and it's an all time favorite. This recipe is quick, it's easy and I use it often when I am in a hurry. Kraft Macaroni and Cheese with an added BONUS Sweet Potatoes. (no, this is not a paid ad for Kraft Mac & Cheese)

I store these small 1/4 cups of Sweet Potatoes in my freezer, so that I have them at all times. They only take about 30 seconds in the microwave to thaw out. (I also have cauliflower, spinach and a few others on hand).

My son is the worst eater ever and it's so crazy because my girls love food, all kinds of different foods and my son eats NOTHING. Really, he eats sandwiches with only jelly, buttered noodles, macaroni and cheese and cereal. Of course ice cream is his nightly treat and besides these few basic things he is the pickiest eater ever. Oh, but he LOVES avocados, yep the whole avocado just cut up, and he'll eat more then one if I let him.

So, sneaking in vegetables has become my favorite past time with him. I can add these sweet potatoes in his Macaroni and Cheese, puree' Cauliflower into his buttered noodles, scrambled eggs and also into his mashed potatoes. These simple things have really let me be more relaxed about his eating knowing that I can sneak in a few extra healthy vegetables here and there. I really truly recommend getting this cookbook (especially if your kids are picky), it has so many recipes and taught me so many more things about adding in things where you least expect it (spinach in chocolate cake, REALLY!), and it never hurts to be a little more healthier.

But, I am just as excited to see what you wonderful bloggers can come up with in your secret, surprise and/or hidden ingredient recipes. It doesn't have to be a vegetable... Do you hide a snickers bar inside of a cupcake or cookie, a puree' vegetable inside of your spaghetti sauce or some spinach inside our your morning smoothie?

Kraft Macaroni & Cheese with Sweet Potatoes
from Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food

Kraft Macaroni & Cheese (follow the recipe on your favorite box)
1/4 cup puree' sweet potatoes

Make a box of your regular Kraft Macaroni & Cheese and then add in 1/4 cup of puree Sweet Potatoes along with the milk, butter and cheese sauce.

I store puree sweet potatoes in ziploc baggies (1/4 cup) in each bag (or in little plastic to-go containers); and store in my freezer.  This adds in some much needed veggies to the kids favorite meals and they don't even know it!

Did you know that Friday, November 26 is "National Leftovers Day",
yes seriously there are American Food Holidays for every day of the year?

When looking for and trying to create a sweet potato recipe for Thanksgiving. We had another failed attempt to create Sweet Mashed Potatoes, that everyone hated. I went to my trusty recipe binder and threw all the other "mashed" sweet potato recipes away. My family just does NOT like them, no matter how I make them. They do however LOVE sweet potatoes if they are cubed or sliced like my Sweet Potato & Apples, but mash them up and forget it.  So, I went to throw the whole pan away and I just couldn't, so I put them away in the refrigerator and I am so glad I did. I was reading my newest edition of Food Network the very next day and came across Melissa's Easy Leftovers and found an awesome recipe. I will now be making these Magic Muffins again the day after Thanksgiving with whatever sweet potatoes we have left over (even though I wont make the mashed ones on Thanksgiving whatever recipe I do make, I will just mix up the leftovers in my food processor and make them mashed for this AWESOME recipe).

Magic Muffins
from Food Network - Melissa's Easy Left Overs

Mix the potato mixture into the flour mixture, then stir in some mini chocolate chips. Spoon into greased mini muffin cups (we used regular size muffin on). Bake 12-13 minutes at 375.

Sweet Potatoes & Apples

Just got a 100% YES VOTE from all of my kids (and me too) that this will be the new sweet potato recipe for Thanksgiving and Christmas this year! I have been carrying around this recipe for awhile, meaning to make it over and over again and tonight was the night, I finally just did it. It was awesome and not smothered in melted marshmallows like most sweet potato recipes and they were fresh and NOT from a can. I can NOT stand canned yams/sweet potatoes they taste so awful. But since I've been introduced to FRESH sweet potatoes I actually like them. You don't even want to know the first time I went to buy a FRESH sweet potato I had to call my aunt on the phone (I didn't even know what they looked like, talk about a girl raised on can food, that would be me).

Sweet Potatoes & Apples

5 medium sweet potatoes
5 medium tart apples, peeled and thinly sliced
1/2 cup sugar
1 tablespoon cornstarch
1 cup cold water
1 teaspoon lemon juice
1/4 cup butter, cubed
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup mini marshmallows (we added just a bit, not covered though)

Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. (If you do not have a Dutch Oven yet, like me (it's on my Christmas list this year! Just boil the potatoes in a sauce pan full of water on the stove top) Reduce heat; cover and cook for 20 minutes or just until tender. Drain sweet potatoes and cool slightly. Peel and cut into 1/4-in. slices. In a greased 13-in. x 9-in. baking dish, layer half of the apples and sweet potatoes. Repeat layers.

In a small saucepan, combine the sugar, cornstarch, water and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the butter, cinnamon and salt. Pour over sweet potatoes and apples. Cover and bake at 350° for 30 minutes. Uncover; bake 10 minutes longer or until apples are tender.
