Christmas is coming and my holiday baking is DONE! I have officially baked for two days straight and have almost all of my 78 packages ready to be delivered. (I ran out of stuff, believe it or not, I guess that means another day of baking (AH)). And yes I said 78!!! I have 78 family, friends, kids friends, neighbors, dance coaches, husband's co-workers, my co-workers and my son's co-workers, Pastor, secretary, Principals, school office staff, my parents and wow whoever else just happens to stop by and needs a box of goodies! Plus I need ALL of these packages delivered in the next few days as we are going on a Family Christmas Cruise this year (yes are we NUTS or what???). We return 3 days before Christmas, oh and did I mention I am hosting some of my husbands family for 9 days in my home. Yes, 22 people in my home for 9 days. BUT IT'S GONNA BE SO MUCH FUN, I AM SO EXCITED! My mother-in-law is here house sitting and she is going to do some more baking and prepping for the holiday's while I am on the cruise (GOSH, I love my mother-in-law)!!!

Now let's get to today's recipe. When we decided to do "holiday beverages" for today's theme. I will admit I was totally lost. We do not have ANY holiday drinks that are a tradition in my family. The only one that comes to mind is my grandmothers tea, but other then that I couldn't think of anything. I just kinda waited until one day something popped into my in box from a wonderful blogger Your Homebased Mom, she shared this muffin recipe with Eggnog in it. Eggnog is for sure a holiday drink and what better way to have it then in a delicious muffin. And this Streusel Topping is to die-for (one of the best I've ever had, I will for sure be using this again and again).


Eggnog Cranberry White Chocolate Muffins
from Your Homebased Mom

2-1/4 cup  flour
1 tbsp baking powder
1/4 tsp salt
1 cup plus 2 tbsp granulated sugar, divided
2 large eggs
3/4 cup eggnog
5 1/3 tbsp unsalted butter, melted
1 tsp almond extract
1-1/2 cup coarsely chopped cranberries ( I used the cranberries as is)
1 cup white chocolate chips

Streusel Topping:
½ cup sugar
½ cup all-purpose flour
½ tsp ground cinnamon
4 tbsp unsalted butter, slightly softened
½ cup chopped pecans (optional, yep, I used the pecans)

Preheat the oven to 400° F.  Line 14-16 muffin cups with paper liners (we got 22 muffins). In a bowl, add together the flour, baking powder and salt and stir to combine.  In a large bowl, add together 1 cup of sugar, eggs, eggnog, melted butter and almond extract.  Stir until well combined.   Add in the dry ingredients just until incorporated. Do not over mix. Toss the cranberries with the remaining 2 tablespoons of sugar, and fold into the batter along with the white chocolate chips.  Fill the prepared muffin liners 2/3 full.

Streusel topping:
Combine sugar, flour, cinnamon and butter.  Cut the butter into the dry ingredients with a pastry cutter or a fork until a coarse, crumbly mixture forms.  Add nuts if using.  Sprinkle the mixture on top of the muffin batter.

Bake for about 18-22 minutes, or a until a toothpick inserted in the center comes out clean.  Let cool in the pan for 5-10 minutes, then transfer to a wire rack and let cool completely.
