Pumpkin Dump Cake

Talk about delicious, mouthwatering goodness in this little piece of Pumpkin Heaven! This Pumpkin Dumb Cake is OH SO GOOD!!! I saw this recipe on a Facebook post, it's a friend (thanks BETH) of a friends (thanks JILL) recipe (but I also found this recipe in one of my cookbooks, they are oh so similar, but I went with the facebook post).

It's funny how now a days we share so many things via Facebook. We have a standing joke in our house "if you need news or information sign onto facebook". I HATE TV and I don't watch the news or read the newspaper, so it's really funny when an earthquake or something BIG like that happens, I just log onto Facebook and sure enough all my peeps are quoting, talking and commenting on the latest earthquake that happened just seconds before. So, I say who needs the news anymore, just check with Facebook.

Facebook is so fun in many other ways, sharing photos with friends, meeting new people and getting to know all your ole' friends just a little more, because you can talk to ALL of your 500 friends in ONE DAY! Can you imagine if I had to call all 480 of my facebook friends to say Hello! (yea, probably wouldn't happen)

Pumpkin Dump Cake
Thanks to Facebook Post from (BETH & JILL)

1 (29oz) can Pumpkin
1 (12 oz) can Evaporated Milk
1-1/2 cup sugar
4 eggs
1/2 tsp salt
1-1/2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ginger
1 box yellow cake mix
2 sticks of butter
1 cup pecans
Whip Cream/Cool Whip

Beat together pumpkin, evaporated milk, sugar and eggs. Add salt, cloves, cinnamon and ginger. Mix well. Pour into 9x13 pan. Sprinkle evenly with dry cake mix over top of pumpkin mixture. Melt butter, drizzle over the top. Sprinkle with nuts and Bake at 350 for 1 hour. Cool and Serve with Cool Whip.

Ultimate Patty Melt

Talk about mouthwatering melt in your mouth goodness, this is the Ultimate Patty Melt! This recipe comes to us from my 17 year old daughters and their friend.  Last weekend as they were reading Seventeen magazine they came across this recipe for the Ultimate Patty Melt and asked if I had everything to make it, and I did. So, off to the kitchen they went!

Ultimate Patty Melt
from Seventeen Magazine (with a few adjustments from my girls)

1 tbsp olive oil
1 small onion, very finely chopped
1-1/4 lb ground sirloin (we use 1/2 hamburger and 1/2 turkey meat a little healthier)
1 tbsp Worcestershire sauce
8 slices of favorite sandwich bread
3 tbsp butter
8 slices Swiss cheese
8 slices bacon
8 slices tomato
salt and pepper

Place a skillet on medium heat with 1 tbsp of olive oil. Add onion to the pan and cook 4 to 5 minutes. Place the onions in a bowl and wipe the skillet clean. Let the onions cool slightly and then mix them with the hamburger meat, Worcestershire sauce and some salt & pepper, mix thoroughly with a spoon to combine.

Divide meat mixture into four and form thin burgers. Add patties to the hot pan and cook until done. While the burgers are cooking butter one side of bread (spread mustard on the inside, if desired we did NOT). After the burgers are finished cooking, make them into stacks. Starting with bread (butter on the outside), slice of cheese, patty, bacon, tomato, another slice of cheese and other slice of bread (butter on the outside).

Wipe the skillet once more and add the stacks back onto the hot skillet over medium heat. Cook until the bread is toasted on both sides and the cheese is melted. Serve this ULTIMATE PATTY MELT to your friends, they will LOVE IT!

Caramelized Onion Dip

My Gooseberry Patch Halloween Cookbook cooking extravaganza is complete. Here is my last recipe (well at least for this year), that I will be making from this amazing cookbook that I won from the folks over at Gooseberry Patch. I made some EXCELLENT things and some not so popular things too. (those recipes we will not be sharing with you). We only want to show you the best of the best.

Gooseberry Patch Halloween Cookbook

Although this recipe was VERY VERY good, (it is a Hot Onion Dip) and it is very similar to my families all time favorite dip Pan-Fried Onion Dip, which is a Cold Dip. We took this hot dip to a Halloween party and it was gone in a matter of minutes, I think we still prefer our cold dip better. But this dip was very very tasty, so if you decide to make either one, the Hot Onion Dip or the Cold Onion Dip, they both are delicious.

Caramelized Onion Dip

2 tbsp butter
3 onions, thinly sliced
8 oz cream cheese, softened
8 oz pkg Swiss Cheese, shredded
1 cup grated Parmesan Cheese
1 cup mayonnaise
sweet potato chips

Melt butter in a large skillet over medium heat; add sliced onions. Cook, stirring often, 30 to 40 minutes, or until onions are caramel colored.

Combine onions, cream cheese, and next 3 ingredients, stirring well. Spoon dip into a lightly greased 2-quart casserole dish. Bake, uncovered, at 375 for 30 minutes, or until golden and bubbly. Serve with sweet potato chips.

Note: Dip can be prepared a day ahead, but do not bake. Cover and refrigerate overnight. Bake, uncovered at 375 for 45 minutes, or until golden and bubbly.

THIS WEEK'S CRAVINGS BLOG PARTY #1 and Pumpkin-Swirl Brownies

Welcome to the very FIRST week of THIS WEEK'S CRAVINGS we are going to
compile a weekly list of favorite recipes with a THEME, so LINK-UP.
This week's theme is PUMPKIN, anything and everything you can make with PUMPKIN.

We love the taste of pumpkin,. Here is a fun chocolate brownie with a pumpkin flavor from Martha Stewart and we served it with the Pumpkin Ice Cream we made last week.


Pumpkin-Swirl Brownies

8 tablespoons (1 stick) unsalted butter, plus more for pan
6 ounces bittersweet chocolate, chopped
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1 3/4 cups sugar
4 large eggs
1 tablespoon pure vanilla extract
1 1/4 cups solid-pack pumpkin
1/4 cup vegetable oil
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup chopped hazelnuts or other nuts

Preheat oven to 350 degrees. Butter a 9-inch square baking pan or dish. Line bottom of pan with parchment paper; butter lining. Melt chocolate and butter in a heatproof bowl set over a pan of simmering water, stirring occasionally until smooth.

Whisk together flour, baking powder, cayenne, and salt in a large bowl; set aside. Put sugar, eggs, and vanilla in the bowl of an electric mixer fitted with the paddle attachment; beat until fluffy and well combined, 3 to 5 minutes. Beat in flour mixture.

Divide batter between two medium bowls (about 2 cups per bowl). Stir chocolate mixture into one bowl. In other bowl, stir in pumpkin, oil, cinnamon, and nutmeg. Transfer half of chocolate batter to prepared pan smoothing top with a rubber spatula. Top with half of pumpkin batter. Repeat to make one more chocolate layer and one more pumpkin layer. Work quickly so batters don't set. With a small spatula or a table knife, gently swirl the two batters to create a marbled effect. Sprinkle with nuts.

Bake until set, 40 to 45 minutes. Let cool in pan on a wire rack. Cut into 16 squares.
