Good Ole' Tacos with Avocado Sauce

Good Ole' Tacos: I can't even say I have this awe inspiring recipe for these wonderful tacos. This is just the SIMPLEST Good Ole' Taco that I am sure most American families make every week (except us, this was my kids FIRST time having these at home). I think what made these so delicious is the Corn Tortillas fried in oil/grease (of course), but oh the taste was just to die for (don't tell anyone, but I think I had like 4 of them)! I know with out a doubt we will be making these again very soon, but I will share with you a great recipe for a avocado sauce we came across and now use with lots of different Mexican dishes and this one was no exception. This was the perfect touch to these Good Ole' Tacos.

Good Ole' Tacos
Corn Tortillas (fried in oil)
Ground Hamburger Meat
Shredded Lettuce
Diced Tomatoes
Sour Cream
Diced Avocados (and/or the delicious Avocado Sauce below)

No directions needed!

Avocado Sauce
I apoligize I have no idea where we found this recipe, if anyone knows I will give proper credit!
This can be used on tacos and is great for sandwiches too!

2 Avocados
1/4 cup Sour Cream
1/4 cup Mayonnaise
1 tbsp lime juice
1 garlic clove, minced (or 1/2 tbsp minced garlic)
1 tsp dill weed
1/4 tsp ground cumin
1/4 tsp dried oregano
1/4 tsp dried parsley
dash cayenne pepper

Mash avocado. stir in remaining ingredients and serve!

Family Meal Planning (1-10-11)

It's 2011, It's January and It's COLD! I LOVE summer way better then this cold stuff. I think I don't like "winter food" much! I don't like soup, casseroles and things like that. I MUCH rather have BBQ, salads, chips and dips, ice cream and all those mouth watering dishes that we make when it's hot outside.

But, since it is January and it is COLD outside, I must put a few of those comfort foods that so many people love (and yes a few of my family members too). This month we have begun our new weekly grocery budget of $150 dollars a week (the Dave Ramsey way... Rice & Beans and Beans & Rice). Not really, as I hate rice & beans, but I am sure there will be many nights of Kraft Macaroni & Cheese. Can't feed your family cheaper than that, can you? So far it's been great (I'll admit I have a lot of stock pile though, which I will be up to the challenge of Cleaning out Your Cupboards from Frugal Follies and I still need to make my freezer check list/Pantry Challenge from Good Cheap Eats). The first week the $150 dollar went well (with even $60 bucks left over, REALLY!!!). This is a NEW week, after one trip to Target (for paper towels, protein bars and a few other things); there is $75 bucks left and I am hitting Costco today at lunch (milk, water, bread, butter, etc). (REPORT BACK.. total at Costco was $53 BUCKS)

I am really excited about this challenge and I am looking forward to the adventure. This is a ONE YEAR commitment (for our family) and I hope to come out on the other side in less debt and more frugal. There are lots of other things we have ALL given up for the year, I am sure you'll be hearing about them as we go along. I am even teaching my 17 year old daughters along the way, I have given them a $100 budget and they are to figure out what they need for the month: entertainment, personal items, make-up, extra dance classes, fun stuff or whatever else. We will see how that goes, but I think it SO important to teach them this NOW before they leave home so that when they are in college they will be way better equipped.

Here my PLAN for this week...don't worry about a shortage of recipes here on MOMS CRAZY COOKING List of Recipes, cuz believe me with NO fast food, NO restaurants and eating at home every single day, there will be lots and lots of cooking in my house this year! It's going to be a fun ride..let's go!

THIS WEEK'S CRAVINGS #11 and Cheesy Hamburger Calzone

Pizza - Pizza - Pizza

The second week of January is National Pizza Week. Who says so? The American Food Calendar, that's who! I just think it's amazing to have National Food Days, kind'of fun and just a little crazy, but cool none-the-less! It's a weird time of the year for PIZZA, I would think summer time would be more appropriate, not the cold days of winter. But, pizza is good any time of year.

I made this really awesome BBQ Pizza last year and you MUST check it out if you are a PIZZA Lover! It is now our ALL-TIME favorite way to make pizza at home. Since, I had already blogged about our FAVORITE way to have pizza, I had to try something new for today's post, a PIZZA theme.

We started with this Pizza Sauce Recipe that we came across accidentally, but that we now use for ALL pizza's made at our home. And looked through piles of recipe books before we picked this simple, easy and just plain ole' delicious Calzone Pizza.


Cheesy Hamburger Calzone
adapted from Pillsbury Classic Cookbooks Crescents Biscuits & More (March 2004)

Favorite Pizza Sauce (or from a jar)
1/2 lb hamburger meat (or you can use sausage, pepperoni or your favorite topping)
1/3 cup chopped onion
1/4 cup chopped red bell pepper
1 can Pillsbury Grand refrigerated biscuits
1/2 cup shredded cheese 

Heat oven to 375. In skillet, cook meat, onion and bell pepper over medium heat 10 minutes, stirring frequently, until meat is no longer pink; drain. Separate dough. On ungreased large cookie sheet, press each biscuit into round disk. (my only complaint is that they are very small calzones, but would be great for lunch size pizza's) Top half of each biscuits with sauce, meat mixture and cheese to within 1/2 inch of edge. Fold dough over filling; press edges firmly with fork to seal. Bake 12 to 15 minutes or until golden brown. Serve warm calzones.

Bring it on 2011, I am ready for you now!!! (Noodles & Ketchup)

I am FINALLY ready to begin 2011. I am only a week late, but better late than never. New Years Eve was celebrated at home with my family and a few friends. We enjoyed swimming, Jacuzzi , games and a Just Dance contest among the kids (and a few adults too). New Years Eve is also my anniversary. My husband and I celebrated 12 years of wedded bliss (got’ca anyone married knows it’s not all FUN & GAMES). We have had our fair share of ups and downs, but I can say we are on an UP SLOPE and it’s wonderful. 2011 is the year of growth for our family, we have everyone on board (yes, all 6 of us) and we are going to grow like never before and it’s a very exciting time. My husband and I are starting the Dave Ramsey Financial Peace University at a local church and we are taking on Dave’s motto LIVE LIKE NO-ONE ELSE, so later we can LIVE LIKE NO-ONE ELSE. The kids are working on many of their own personal challenges and accomplishments too.


The most exciting change financially for my food blog, is I planning on sharing with all of you how I am going to feed my family of 6 for only $150 per week. I know at times it’s going to be a tuff and I know at times we may be eating macaroni & cheese (or like Dave Ramsey says Beans & Rice and Rice & Beans), but I am ecstatic about blogging about this huge change in my grocery budget. My blog is so new and this adventure is still just getting started. I have so many recipes to make in 2011 and I just wanted to get started already. I have been sick since New Year’s Day (I am hoping that it’s over now) and there has been very little new recipes made in my kitchen this week. I’ve been cooking some comfy food and ole’ family favorites, because they are easy and I know everyone will like them. I just think it feels good to eat the ole’ favorites while you are sick in bed. (Don’t gross out, but my comfy food is noodles & ketchup). I eat this when I am not sick too, but this is a generation meal that has been passed down from my grandmother, to my mother, to me and now to my kids. And we ALL love it! (Don’t knock it until you try it, it’s DELICIOUS)


OUR FAMILY MENU THIS WEEK: This week my family has enjoyed: the last of the left-overs; Goulash, Magic Sweet Potato Muffins, Cheesy Hamburger Calzone Pizza, Jamie Oliver’s Spaghetti (recipe coming soon), lots of cold cereal, Shepherd’s Pie (recipe coming soon), Chessy Enchiladas (recipe coming soon) and a few bowls of noodles and ketchup (because MAMA is sick).

I also wanted to take a minute to share a few family scrapbook pages with you from my amazing week with my family. (573 photos were taken, so lots of scrapbooking to do) We had 19 people staying at our house and yes showers were a challenge (can we say COLD water), if there is nothing I want more it’s just ONE more bathroom in my house. But I wouldn’t change anything about having my husband’s family visit for Christmas. This is the second time we have all gotten together for a HUGE family Christmas and it’s one of the BEST vacations ever. I love having all of them here and I am sure we will start planning the next time soon, it’s happened about every 3 years. We visited Disneyland & California Adventure three different days and Universal Studios one day. It was just our luck that we hit Universal Studios on their busiest day of the year (it was an awful day to be there, but we tried to make the best of it) and then the following day we went to Disneyland and it was CLOSED due to being sold out. I live here, we have annual passes and we go all the time and NEVER EVER in my 39 years of life have I heard of Disneyland CLOSING. That too was another experience that I don’t care to repeat again. My son (11 years old) drove in a separate car then I did and I was inside Disneyland and he was NOT and they were not going to let him in. I ended up speaking to a manager, and got him in. But the two people that were with him were not allowed into Disneyland that day (they were here from Oregon) and I felt horrible for them. Even though there were a few obstacles our family time was memorable. I know we are building life-long memories for all of us, but especially for our children. I do hope that we continue to get together every few years or so because it’s like a little family reunion each and every time we do. I love and miss you all already!


The Hudgens Family is now ready for 2011. The Christmas decorations are finally put away. (longest time in history, that they have remained up past the New Year’s). My calendar is in order, my financial peace has begun, the new grocery budget has started (already went to the grocery store 3 times and I am still under my $150 bucks), the kids are back in school, dance & basketball practice are in full swing and I am FINALLY going to shed some of these extra pounds. Bring it on 2011, I am SO ready for you now!
